Peanut Butter Pinwheel Candies are made with an unexpected but essential ingredient. This is a family favorite recipe that's been passed down for generations!

1/2 cup mashed potatoes*
1/2 cup salted butter softened
6-7 cups powdered sugar (plus additional for dusting)
2 teaspoons vanilla extract
Creamy peanut butter (for filling)

Steps:

  • With electric mixer, combine mashed potatoes, butter, and 1 cup sugar.
  • Add in remaining sugar, 1 cup at a time. Start by adding 6 cups of powdered sugar, if the dough is not moldable in your hands and can't be rolled into a ball, continue to add sugar until it is firm.
  • Stir in vanilla.
  • Refrigerate filling for 1 hour.
  • Once chilled, divide dough into two pieces and place one piece on a clean surface that you've generously dusted with powdered sugar. Dust the surface of the dough with additional sugar, and use a rolling pin to roll dough out into a rectangle about 1/4" thick. Make sure that your dough can be rolled at this point, if it's too sticky or falling apart, you may need to add more sugar, re-shape it into a ball, and start over.
  • Once dough has been rolled into a 1/4" rectangle, spread evenly with peanut butter, leaving a small amount of space peanut butter-free around the perimeter of the dough.
  • Starting with the longer side of your rectangle, gently but tightly roll into a lot.
  • Use a knife to slice into pieces about 1/2" thick.
  • Repeat steps 5-8 with remaining half of dough.
  • Serve and enjoy.

1/2 cup shortening
1/2 cup creamy peanut butter
1 cup sugar
1 large egg
1 tablespoon 2% milk
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup miniature semisweet chocolate chips

Steps:

  • In a bowl, cream shortening, peanut butter and sugar. Beat in egg and milk. Combine the flour, baking soda and salt; gradually add to creamed mixture. , Roll out between floured waxed paper into a 12x10-in. rectangle. Sprinkle chips to within 1/2 in. of edges. Roll up tightly, jelly-roll style, starting with a long side; wrap in plastic. Refrigerate for 20-30 minutes or until easy to handle., Unwrap dough and cut into 1/2-in. slices. Place 1 in. apart on greased baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

This is a very simple, and very yummy sweet treat. My husband remembered having these as a child, but we could not find the recipe. I finally found it. Hope you enjoy!

Number Of Ingredients 6

1 (16 ounce) box powdered sugar
1 -2 cup powdered sugar (more or less to keep dough from sticking to paper)
1/2 cup butter, softened
3 tablespoons milk
1 teaspoon vanilla extract
8 ounces peanut butter

Steps:

  • In mixing bowl, combine 16 oz sugar, butter, milk, and vanilla (should be stiff and dough-like).
  • Chill for a few minutes to help prevent sticking.
  • Divide dough into 2 balls, and roll each ball out to pie crust thickness (Use parchment or wax paper and plenty of powdered sugar both over and under dough to keep it from sticking).
  • Heat peanut butter until runny and easily spreadable- not too hot- and spread evenly over rolled dough.
  • Roll dough into a log (you may have to sprinkle a little more powdered sugar on it as you go to help with stickiness).
  • Chill 1 hour and slice into 1/4" pinwheels- keep refrigerated.

1 cup(s) butter flavor crisco shortening
1 cup(s) peanut butter
3/4 cup(s) sugar
3/4 cup(s) light brown sugar, firmly packed
2 - eggs
1 teaspoon(s) vanilla extract
2 1/2 cup(s) all purpose flour
1 teaspoon(s) salt
1 teaspoon(s) baking soda
1/2 cup(s) red raspberry jam
2/3 cup(s) finely chopped peanuts

Steps:

  • Cut parchment paper to line 17 x 11-inch pan.
  • Combine Butter Flavor CRISCO®, peanut butter, granulated sugar and brown sugar in a large bowl. Beat with electric mixer at medium speed until well blended. Beat in eggs and vanilla. Combine flour, salt and baking soda. Add gradually to creamed mixture at low speed. Beat until well blended.
  • Press dough out to edges of paper and spread with jam to within 1/2-inch of edges. Lift up long side of paper. Loosen dough with spatula. Roll dough up jelly-roll fashion. Seal seam. Sprinkle nuts on paper. Roll dough over on nuts. Press on any extra nuts. Wrap in paper. Place in plastic bag. Refrigerate overnight.
  • Heat oven to 375 degrees F. Line baking sheet with foil or parchment paper.
  • Unwrap dough. Cut into 1/2-inch slices. Place 2 inches apart on prepared baking sheet.
  • Bake at 375 degrees F for 10 to 12 minutes or until set. Cool about 5 minutes on baking sheet before removing to new foil. If desired, top with additional jam before serving.
