PEANUT BUTTER, MAYONNAISE, AND LETTUCE SANDWICH
So good, but I admit it sounds disgusting. Everyone I have ever gotten to try this sandwich ends up loving it.

PB, B, AND L (PEANUT BUTTER, BACON, AND LETTUCE) SANDWICH (A BLT
When I was a kid, I was more picky about eating tomatoes on my sandwiches, and when my mom and younger sister and I got together to make up BLT's, I would sometimes leave off the tomato. Somewhere I learned that bacon was tasty with peanut butter, and so I started to eat bacon with peanut butter (I also eat bacon with maple syrup), and thus was born this new type of sandwich. Peanut butter (instead of mayo), lettuce, and bacon, on toast, and sandwiched together. I know it sounds a bit odd, but it's really yummy! I just wrote this out to serve 1 person, 1 sandwich. I like lots of bacon, and all my measurements are estimates, so please adjust accordingly to your taste/needs. Hope you enjoy this as much as I do! Although I should be eating turkey bacon instead of regular bacon, I have not yet tried this with turkey bacon.

Steps:
- Get together your equipment: skillet, metal spatula, saucepan lid (a Revereware saucepan lid is what we've always used, as it's the perfect size).
- Evenly spread a teaspoon of butter on each side of both pieces of bread.
- Spread 2 teaspoons of peanut butter on one side of each piece of bread.
- Place the cooked bacon on one of the pieces of bread, then cover it with the other slice so that the bacon is sandwiched by the peanut butter.
- Heat up a skillet over medium temperature, and when it is hot place the sandwich in; push the bread down a little with a metal spatula, then cover the whole thing up with the saucepan lid (the idea is to heat the air underneath the lid and warm the peanut butter up as you're also browning the bread).
- Uncover every minute and check the cooking bread color- you want it golden, not burnt.
- When it's to the color you like, carefully flip the sandwich over, press down on it with the spatula to squish the bread, peanut butter, and bacon together, and re-cover with the saucepan.
- After about 3-5 minutes of slow cooking, you'll have a wonderfully golden, melty, gooey grilled peanut butter and bacon sandwich!

B L T SANDWICHES SUPREME
A delicious BLT sandwich prepared either with bacon or vegetarian bacon. I came up with this recipe after having just come home from the farmers' market with a large bag of fresh produce, a rumbly tummy, and determination on my face. If you're taking the vegetarian route, you can use Morning Star Farms' brand fake bacon ("facon") or we prefer to use tempeh bacon because the slices are thick. For regular bacon, if you're a black pepper lover, try pepper bacon from the deli! My brother suggested the optional avocado and sprouts.

Steps:
- Cook bacon until crisp and set aside on a paper towel to soak up the grease, if necessary.
- You can toast or leave untoasted the bread. Cut bread into sandwich slices.
- Spread a little bit of mayonnaise or pesto onto one side of each slice of bread.
- Layer the bacon, the salad greens, the tomatoes, the red onion, and basil leaves, the avocado and alfalfa sprouts if using onto one slice of bread. I use about four basil leaves for each sandwich. Season sandwich with salt and pepper if desired.
- Place the other slice of bread on top and very gently push down on the sandwich.
- Cut in half or in quarters.
- Serve with a smile on your face.
