When Mom and Pop got married, Pop had to call Mamaw to get this recipe. When he was growing up, they were really poor (Papaw was a Baptist preacher and worked at various jobs. Back then life was hard for a preacher with 4 kids). This was one of their "desserts". Mom also made this when we were growing up and to this day, I still love a big hot heapin helpin. One might ask how do you eat "chocolate gravy"? With homemade "cat-head" biscuits (Mamaw called them this because she made them "big as a cat's head") or canned country-style (Do not try this with one of those flaky-type canned biscuits - it just isn't the same.) and a chunk of butter about the size of the tip of your thumb. Let it kinda melt, then eat away. This is just like any other gravy, other than the addition of the butter at the table. I eat this with milk or coffee as the beverage, as nothing else tastes good. 1 cup granulated sugar or 1 cup Splenda sugar substitute
1 tablespoon butter
1 1/2 cups milk
2 tablespoons flour
3 tablespoons unsweetened cocoa powder (we prefer Hershey's)

Steps:

  • Mix all the dry ingredients in a heavy saucepan with a whisk. Using a whisk blends everything better than a spoon. Stir in the milk.
  • Cook over medium heat stirring constantly. Remove the pot when the mixture is thick like pudding.
  • Add the butter. Stir in until completely melted. Serve over biscuits with a teaspoon of butter dolloped on top.

1/4 cup plus 2 tablespoons unsweetened Dutch-process cocoa powder
1/4 cup plus 2 tablespoons boiling water
1 1/2 cups (3 sticks) unsalted butter, room temperature
1/2 cup confectioners' sugar, sifted
Pinch of salt
1 pound best-quality semi-sweet chocolate, melted and cooled
Vanilla Madeleines
1/3 cup toasted almond slivers (5 per paw)

Steps:

  • Make the frosting: Combine cocoa and the boiling water, stirring until cocoa has dissolved. With an electric mixer on medium-high speed, beat butter, confectioners? sugar, and salt until pale and fluffy. Reduce speed to low. Add melted and cooled chocolate, beating until combined and scraping down sides of bowl as needed. Beat in the cocoa mixture. If not using immediately, frosting can be refrigerated up to 5 days, or frozen up to 1 month, in an airtight container. Before using, bring to room temperature, and beat on low speed until smooth again.
  • Use a butter knife to spread 2 tablespoons of chocolate frosting over a madeleine cookie, leaving it a bit thicker at the back. Drag the knife forward and pull up at the end to create a "furry" texture, then press 5 toasted almond slivers ("claws") into the tip.

When it comes to pawpaw, accept no substitutes. Trust us; we tried. We went to a bunch of experts - scholars who specialize in fruit, plus chefs and cookbook authors who know all about the proud culinary history of Appalachia - and we asked them, "If a home cook doesn't happen to have any pawpaw, what combination of other fruits and vegetables might work well as a replacement?" We picked up passing nods to sweet potatoes, bananas, papayas, avocados, really ripe mangoes. But in the end everyone came back with variations on "Forget it, there's nothing like a pawpaw." The goopy-textured, tropical-ish fruit whose name sounds like a punch line on "Hee Haw" can be found scattered all over the country, but recipes (for cakes, pies, puddings) abound largely in West Virginia and nearby states like Kentucky, Ohio and Indiana. If you happen to secure some pawpaw, best to get out of its way, as is the case with this pudding. Pawpaw is a holiday guest who responds well to minimal interference.

  • Pour batter into prepared dish. Bake 50 minutes or until just set in the center. Cool to room temperature on a wire rack before cutting. Serve with a dollop of whipped cream.
