1 (12 ounce) package penne pasta
⅓ cup extra-virgin olive oil
16 ounces cherry tomatoes, halved
salt and freshly ground black pepper to taste
2 cups crumbled feta cheese
3 tablespoons chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat olive oil in a skillet over medium-high heat. Add tomatoes and salt to taste. Cook gently, stirring occasionally, until tomatoes are soft and have released their juices, 5 to 10 minutes.
  • Drain the pasta and immediately add to the pan of tomatoes. Reduce heat to low and toss to coat. Add feta cheese, and basil and stir through. Season with salt and pepper. Serve immediately.

This cold green bean salad is made with feta cheese and tomatoes and is one of my favorite salads for a picnic or a barbeque. I make this amount for 2 or 3 people, but you can easily double or quadruple the recipe.

1 pound fresh green beans, trimmed
3 tomatoes, chopped
¼ cup olive oil
2 tablespoons white balsamic vinegar
salt and freshly ground black pepper to taste
1 shallot, minced
¼ cup chopped fresh parsley
1 clove garlic, minced
2 ounces crumbled feta cheese

Steps:

  • Bring a pot of lightly salted water to a boil and cook beans until they are soft, 10 to 15 minutes. Drain well. Combine green beans and tomatoes in a large bowl
  • Stir together olive oil, white balsamic vinegar, salt, and pepper in a small bowl. Add shallot, parsley, and garlic. Pour dressing over beans and tomatoes and mix. Mix in crumbled feta cheese. Allow to sit for 20 minutes before serving.

3/4 pound orecchiette
1 pound green beans, trimmed and cut into 1-inch pieces
1 pound beefsteak tomatoes, diced medium
1 small garlic clove, mashed to a paste
1/4 cup olive oil
1 tablespoon red-wine vinegar
1 cup crumbled feta cheese (4 ounces)
1/2 cup fresh dill or mint

Steps:

  • In a large pot of boiling salted water, cook pasta 3 minutes less than package instructions, then add beans and cook until just tender. Drain and return to pot.
  • Meanwhile, in a large bowl, combine tomatoes, garlic, oil, and vinegar. Season with salt and pepper.
  • Add pasta, beans, and half the feta and herbs; toss to combine and season. Serve warm or at room temperature. Sprinkle with remaining feta and herbs.

1 1/2 lbs ripe tomatoes, seeded and diced
2 cloves garlic, minced or pressed
salt & freshly ground black pepper, to taste,plus
1 tablespoon salt, for pasta water
1 -2 tablespoon olive oil, to taste
1 -2 teaspoon balsamic vinegar, to taste (optional)
2 tablespoons chopped fresh chives
1 tablespoon fresh basil or 1 tablespoon of fresh mint, slivered or chopped
2 ounces feta cheese, crumbled (about 1/2 cup)
3/4 lb pasta (fusilli, rigatoni, farfalle or penne)
1/2 lb green beans, trimmed and broken in half

Steps:

  • Start a large pot of water to boil with 1 tbsp.
  • salt.
  • While water heats, toss tomatoes with garlic, salt, pepper, oil, herbs and vinegar (if using) in a pasta bowl.
  • Add feta.
  • Let sit at room temperature 15 minutes or longer.
  • Taste and adjust seasonings.
  • Add pasta to boiling water.
  • Cook 5 minutes.
  • Add beans.
  • Keep cooking until pasta is al dente, firm to the bite (see cooking time on package).
  • Drain, toss with tomato mixture and serve.
  • The tomato mixture, without the herbs, can be made hours ahead.
  • Hold in or out of the refrigerator, but let it come to room temperature before adding herbs and tossing with cooked pasta.

3 lbs fresh fava beans, shelled and skinned or 3/4 lb green beans, cut into 2-inch lengths
1 1/4 lbs ripe tomatoes, peeled and chopped
2 garlic cloves, minced
2 -3 tablespoons extra virgin olive oil (to taste)
1 teaspoon balsamic vinegar (optional)
2 tablespoons of fresh mint or 2 tablespoons basil, chopped
fresh ground black pepper
1 lb rigatoni pasta or 1 lb penne
1/2 cup feta, crumbled

Steps:

  • Bring a large pot of water to a rolling boil. Add a generous amount of salt and the beans. Boil favas for 1 minute, then remove from the pot with a slotted spoon and shock in a bowl of ice water. Boil green beans for 5 minutes until just tender and transfer to a bowl of ice water. Cool for a few minutes, then drain. Save the water for the pasta.
  • In a large pasta bowl, toss together the tomatoes, garlic, olive oil, vinegar, mint, and salt and pepper to taste. Add the beans, toss together, and allow to sit at room temperature for 30 minutes to an hour. Taste and adjust seasonings.
  • Bring the salted water back to a boil and add the pasta. Cook until al dente, drain, and toss with the tomato mixture. Add the feta, toss again and serve at once.

3/4 pound fusilli or other corkscrew pasta
1/4 cup finely chopped fresh mint
2 tablespoons fresh lemon juice
2 tablespoons white wine vinegar
1 tablespoon chopped garlic
2 teaspoons grated lemon peel
6 tablespoons olive oil
2 cups chopped plum tomatoes
1 15- to 16-ounce can garbanzo beans (chickpeas), drained
4 ounces feta cheese, crumbled
Additional chopped fresh mint

Steps:

  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain and rinse with cold water to cool. Drain again.
  • Combine 1/4 cup mint, lemon juice, vinegar, garlic and lemon peel in large bowl. Gradually whisk in oil. Add pasta, tomatoes, garbanzo beans and feta cheese. Toss to blend well. Season salad to taste with salt and pepper. (Can be prepared ahead. Let stand at room temperature 2 hours; or cover and refrigerate overnight, them let stand at room temperature 1 hour before serving.)
  • Mound salad on large shallow platter. Garnish with additional mint.

ORZO WITH FETA, GREEN BEANS, AND TOMATOES

10 ounces haricots verts(thin French green beans) or green beans
1 cup orzo (rice-shaped pasta)
1 medium onion
2 garlic cloves
3 medium vine-ripened tomatoes
2 tablespoons olive oil
1 tablespoon white-wine vinegar
1 tablespoon chopped fresh flat-leafed parsley leaves
1 cup crumbled feta

Steps:

  • Fill a 4-quart kettle three fourths full with salted water and bring to a boil for beans and orzo.
  • Chop onion and mince garlic. Quarter and seed tomatoes. Cut quarters lengthwise into 1/4-inch-thick slices. Trim beans and cut into 1-inch pieces. In a large skillet cook onion and garlic in oil over moderate heat until onion is softened. Add tomatoes and cook, stirring, until tomatoes are softened, about 2 minutes. Remove skillet from heat.
  • Have ready a bowl of ice and cold water. In boiling salted water blanch beans 1 minute. With a slotted spoon transfer beans to ice water to stop cooking. Drain beans well in a colander and pat dry. Add beans to tomato mixture and return water in kettle to a boil. Boil orzo until al dente and drain in colander. Add orzo to bean mixture with vinegar, parsley, feta, and salt and pepper to taste, tossing to combine well.

Not your usual green beans, but so great and easy. I had these as a side at a restaurant in Atlanta and have re-created this version.

2 lbs fresh green beans, trimmed
8 ounces feta cheese, crumbled
1/4 cup olive oil
2 cloves garlic, minced
1 cup kalamata olive, pitted and halved
1 pint cherry tomatoes, halved
2 tablespoons fresh lemon juice
1 tablespoon fresh oregano, chopped
salt and pepper, to taste

Steps:

  • In a medium bowl, prepare an ice bath for cooling the beans.
  • Cook the beans in salted boiling water, about 6 minutes, until crisp, but tender.
  • Drain the beans, then cool in the ice bath.
  • Drain and put the beans in a serving dish.
  • Add the feta cheese to the cooled beans.
  • Heat the olive oil and add the garlic, about 60 seconds, until fragrant.
  • Remove form heat and add the tomatoes, olives, lemon juice, and oregano.
  • Toss this mixture.
  • Pour over green beans and feta and stir gently to combine.

TOMATO-GREEN BEAN SALAD WITH CHICKPEAS, FETA AND DILL



Tomato-Green Bean Salad With Chickpeas, Feta and Dill image

This is a perfect salad for summer, when the market is chockablock with great produce. Use whatever tomatoes are sweetest, and feel free to add yellow wax beans or romano beans in addition to green beans. If your market has fresh shelling beans, use those instead of chickpeas. Plan ahead to soak dried chickpeas overnight. With a soak, they only take an hour to cook, and taste better than canned ones.

3/4 pound green beans, preferably slender haricots verts, trimmed
2 tablespoons lemon juice, from 1 small lemon
1 tablespoon red wine vinegar

1 pint cherry tomatoes, mixed colors, halved
2 cups cooked chickpeas (from 1 cup dried chickpeas or 1 15-ounce can), cooled and drained

Steps:

  • Bring a medium saucepan of water to boil over high heat. Add 1 teaspoon salt, then the green beans. Cook until beans are tender-crisp, about 2 minutes. Transfer beans to a large bowl of cold water. Drain in a colander and blot green beans dry with a kitchen towel.
  • Make the dressing: In a small bowl, put lemon juice, vinegar, garlic, a pinch of salt and some black pepper to taste. Whisk in olive oil.
  • Make the salad: Add cherry tomatoes, green beans and chickpeas to a large salad bowl, and season with salt and pepper. Add dressing and toss to coat. Add feta and toss once more. Let marinate for 10 to 15 minutes, tossing occasionally.
  • To serve, sprinkle generously with dill and oregano.

  • Heat the olive oil in a skillet over medium heat. Cook garlic in the oil for about 30 seconds. Remove the skillet from the heat. Stir in the olives, tomatoes, vinegar, oregano, salt, and pepper. Pour mixture over green beans. Toss together until beans are evenly coated. Sprinkle feta cheese over the top and garnish with oregano sprigs. Chill at least 3 hours before serving.

1 (19 ounce) can cannellini beans, drained and rinsed
10 ounces fresh spinach, washed and chopped

  • Cook the pasta in a large pot of boiling salted water until al dente.

  • In a large saucepan, dry-fry the pine nuts for 1-2 minutes, until golden. Remove and set aside. Using the same pan, fill with cold water and bring to the boil. Add the beans and blanch for 2 minutes. Remove with a slotted spoon, and refresh under cold running water – this will help them keep their bright green colour. Set aside.
  • Add the pasta and a pinch of salt to the boiling water and cook according to packet instructions. Drain and briefly run under cold running water to cool slightly, then return to the pan.
  • Put the spinach leaves in a colander and pour over a kettle of boiling water to wilt them. Refresh under cold running water, then squeeze out as much excess water as you can. Toss the spinach through the pasta, then add the beans, tomatoes and dressing. Season. Divide between 2 bowls. Sprinkle with toasted nuts and crumble over the feta. Scatter with basil leaves to serve.
