1/4 pound mild Italian sausages
1/4 pound thinly sliced prosciutto or cooked ham
4 tablespoons butter
1/2 cup chopped fresh parsley
3 eggs, well beaten
1/2 cup grated Parmesan cheese
freshly ground black pepper
1/2 pound spaghetti
salted water
additional grated Parmesan cheese

Steps:

  • Remove casings from sausages and crumble meat. Finely chop prosciutto. In a wide frying pan over medium-low heat, melt half the butter. Add sausage and half the prosciutto to pan and cook, stirring until sausage is lightly browned and prosciutto is curled (about 10 minutes). Stir in remaining ingredients. If you wish to complete the preparation at the table, have ready in separate containers the remaining butter, the parsley, eggs, the 1/2 cup Parmesan cheese and the pepper. Cook spaghetti in a large kettle of boiling salted water according to package directions until al dente. Drain well and add to hot meat mixture. At the table (if you wish), add butter and parsley to spaghetti mixture. Mix quickly to blend. At once, pour in eggs and quickly lift and mix spaghetti to coat well with egg. Sprinkle in the 1/2 cup cheese and a dash of pepper; mix again. Serve with additional Parmesan cheese. Ground Beef Carbonara Sauce: Follow directions for Carbonara Sauce, but omit sausage and Prosciutto. Instead brown 1/2 to 3/4 pound ground lean beef (crumbled) with 1/4 teaspoon fennel seeds (coarsely crushed), 1 small onion (finely chopped) and 1 clove garlic (minced or pressed). Continue to cook until onion is soft. Beat eggs with 1/4 teaspoon salt.

3/4 cup heavy cream (or 1/2 & 1/2), room temperature
3 egg, beaten, room temperature
1/2 cup grated Parmesan cheese, additional for serving
1/2 tsp salt
1/4 tsp coarse ground pepper
2 tbsp Italian seasoning
8 slices bacon, chopped
1 lb of spicy Italian Sausage (no casings)
1/4 lb prosciutto ham (thinly sliced)
4 tbsp butter
1/2 yellow onion, finely chopped
1 clove garlic, minced
1 lb. linguini or thick spaghetti, uncooked

Steps:

  • In large skillet, cook bacon until crisp, Drain. Remove Italian Sausage from casings and cook over medium heat breaking up into smaller crumble pieces, drain and set aside. Cook onions in butter until translucent adding garlic towards the end and cook to just golden. Add crumbled bacon, sausage, chopped prosciutto, italian seasoning, salt and pepper. Remove from heat. Prepare linguini /spaghetti according to pkg directions; drain. In same pan over low heat, combine hot pasta with meat mixture, heavy cream and parmesan cheese; continue to toss gently until desired temperature and remove from heat. Add beaten eggs tossing lightly to coat all pasta. Serve immediately adding fresh parmesan cheese.

1 (16 ounce) package spaghetti
12 slices thick-cut, applewood-smoked bacon
2 tablespoons olive oil, divided
1 onion, finely chopped
2 large cloves garlic, minced
¼ cup dry vermouth
1 cup shredded Parmesan cheese
½ cup whipping cream
4 eggs, beaten
1 tablespoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Reserve 2 tablespoons bacon fat in the skillet and discard the rest. Chop bacon when cool enough to handle.
  • Add 1 tablespoon olive oil and onion to reserved bacon fat in the skillet. Cook over medium-high heat until the onion has softened and turned translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Pour vermouth into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon, about 1 minute. Mix in chopped bacon.
  • Drain spaghetti, transfer to a large serving bowl, and mix in remaining 1 tablespoon oil. Add bacon-onion mixture, Parmesan cheese, cream, eggs, and pepper to the hot pasta; stir until spaghetti is well coated and sauce is creamy.

This is my answer to poor planning. I usually have all the ingredients on hand. This is a family favorite. For those with gluten intolerance corn spaghetti substitutes nicely.

1/3 lb bacon, thick sliced
1/4 lb butter
1 cup half-and-half cream
2 tablespoons white vinegar
1 lb spaghetti
2 eggs, beaten
1/3 cup grated fresh parmesan cheese

Steps:

  • Cut bacon into little pieces, approximately 1" square and saute in a small frying pan with the butter until bacon barely begins to brown. It should be a bit crunchy but not dry.
  • Microwave half and half for one minute and add bacon and butter. Add the vinegar; this will turn the half and half into cheese. Simmer gently for about 15 minutes, or until sauce cooks smooth.
  • Boil spaghetti al dente. Drain and return to the pan. Immediately throw in the eggs, bacon sauce and grated cheese. Add salt and pepper to taste, toss and serve immediately.

This comes via 500 All Time Great Recipes. Sometimes instead of bacon, I have used leftover ham or bologna sausage. I have also added in leftover peas.

12 ounces noodles
1 tablespoon oil
8 ounces bacon, chopped
4 ounces button mushrooms, sliced
4 eggs, slightly beaten
5 tablespoons light cream
salt (optional)
pepper
2 tablespoons parmesan cheese, finely grated (divided)
basil, for garnish (optional)

Steps:

  • Cook the noodles in a pan of boiling water, for 6-8 minutes or until al dente.
  • Meanwhile, heat the oil in a frying pan and fry the bacon for 2-3 minutes, then add the mushrooms and fry for another 3-4 minutes.
  • Turn off the heat and reserve.
  • Lightly beat the eggs and cream together in a small bowl and season with salt and pepper.
  • When the noodles are cooked, drain well and return to the pan.
  • Add the bacon/mushroom mixture and any pan juices and stir into the pasta.
  • Pour in the egg/ cream mixture and half the Parmesan cheese.
  • Stir well and as you do this the eggs will cook in the heat of the noodles.
  • Pile on to warmed serving plates, sprinkle with remaining Parmesan and garnish with basil.
