ITALIAN SAUSAGE PASTA WITH TOMATO CREAM SAUCE
Italian sausage pasta with tomato cream sauce is an easy, cozy weeknight dinner the whole family will love! I like to make a batch of this flavorful comfort food and enjoy the leftovers all week!

Steps:
- Heat olive oil over medium heat. Sauté onions until translucent, about 2-4 minutes. Add garlic and cook about 30 seconds. Add sausage and break apart into small pieces while browning, about 5 minutes. Season to taste with red pepper flakes.
- Meanwhile, cook pasta according to package directions.
- When sausage is browned, add undrained tomatoes and heavy cream. Bring to a simmer.
- Mix cornstarch with cold water to make a slurry, then add slowly to sauce, stirring constantly. Cook until thickened. Stir in pasta and spinach.

SPICY TOMATO CREAM SAUCE PASTA W/ ITALIAN SAUSAGE
This is a combination of a couple of different recipes that I have combined. Make it spicy or not up to you. The spicier the better in my house.

- 1. While cooking sauce cook your pasta al dente and drain. Dice and caramelize onion in butter. Add Italian sausage to onions and brown. If in casings remove from casings. When sausage is browned add garlic and cook for another minute or two. Drain excess fat if you want to. I leave it in and dish does not come out greasy.
- 2. Add chicken broth to sausage mixture and simmer for about 5 minutes. Now add crushed tomatoes, paste, salt, pepper, and a heaping tablespoon of cajun seasoning (if wanting it milder just add a teaspoon or two and use mild sausage). Let simmer for a few more minutes. Add heavy cream and simmer for a couple of minutes.
- 3. Now add pasta and parmesan cheese to sauce and let simmer for 5 minutes. We prefer this recipe with mostaccioli pasta, but I have made it with several different types of pasta and it has been good with all of them. So just use your favorite.
- 4. This recipe started from TRACY JOYNER's recipe on here. As I stated in the description I have combined a couple of recipes with Tracy's to come up with this. I wanted to make sure Tracy got credit for being the inspiration of this dish.

- Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
- Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion and garlic, and cook until onion is tender. Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.
- Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.

- Bring 4-5 litres of water to the boil in a large pasta pot. Add pasta, stir to separate and cook for 10-12 minutes or until pasta is tender. Drain well and place in a large mixing bowl.
- Heat oil in a large pan over high heat. Add the sausage pieces to the pan and cook for 3-4 minutes or until golden and cooked through. Remove and set aside. Add mushrooms to pan and cook over high heat until cooked, about 3-4 minutes. Set aside with sausages.
- Reduce heat and add butter to pan. Add onion and garlic and cook gently for 2-3 minutes or until softenened. Add the semi dried tomatoes, water or stock. Return sausage and mushrooms to pan, with pasta, tomato sauce and spring onions. Toss well to combine then transfer half the mixture to a large well-greased baking dish (approximately 2 litre capacity).
- Dollop ricotta over pasta then top with the remaining sausage mixture and scatter with parmesan cheese.
- Bake in a preheated 200°C oven for 20 minutes.

- Prepare pasta according to package directions. Meanwhile, brown sausage over medium-high heat in a large skillet with garlic and basil. Add spinach and stir until wilted. Pour wine into skillet and deglaze pan. Add tomatoes, and continue cooking until mixture starts to boil again. Turn heat to medium-low and add cream cheese. Stir until all cream cheese is melted and add Italian cheese. Drain pasta and add to skillet. Serve immediately.

- Add sausage and crushed red pepper.
- Cook until sausage is no longer pink, stirring frequently, about 7 minutes.

- Cook the pasta in salted water Al Dente, according to package directions.
- While pasta is cooking, brown the sausage and drain grease.
- Add the onions and garlic to the sausage and saute for a couple of minutes.
- Pour in the entire can of diced tomatoes and the tomato sauce and heat through.
- Pour in the half-and-half and heat through. The longer you cook the sauce the thicker it will get so simmer it until it is the consistency you want.
- Add the basil and let it simmer for a few minutes.
- Finally, mix the sausage sauce with the pasta.
- Top each serving with a sprinkle of Parmesan cheese and fresh basil (if desired).
