RICE AND PASTA PILAF



Rice and Pasta Pilaf image

This Rice and Pasta Pilaf is an easy and versatile side dish that goes with just about everything. It uses one pot, a few simple pantry ingredients, and is ready in about 30 minutes!

Number Of Ingredients 8

2 tablespoons butter
¾ cup long-grain or extra-long-grain white rice
¾ cup orzo pasta (or you could use spaghetti or vermicelli broken up into small 1/2-inch pieces)
3 cups water
3 teaspoons roasted chicken base (such as Better Than Bouillon (see Recipe Notes below))
½ teaspoon garlic powder
1 teaspoon dried parsley flakes
salt and pepper (to taste)

Steps:

  • In a saucepan with a tight-fitting lid (I use a 3-quart saucepan), melt the butter over medium heat.
  • Add the rice and pasta and saute, stirring frequently, until it is lightly golden brown, about 2 to 3 minutes. Keep a close eye on it so it doesn't burn; reduce heat if needed.
  • In a small bowl, combine the water and roasted chicken base. Add to the pot along with the garlic powder and parsley flakes; stir briefly to combine. Note: Be very careful when adding the liquid to the pot, as it creates a lot of hot steam!
  • Increase the heat and bring to a boil.
  • Cover the pot, reduce the heat, and simmer until the rice is tender and the liquid has been absorbed, 15 to 20 minutes.
  • Remove the pot from the heat and let sit for 5 minutes.
  • Fluff with a fork, season to taste with salt and pepper if needed, and serve.

  • Toast 1/2 cup broken spaghetti in a pot over medium-high heat with 2 tablespoons butter. Stir in 1 cup rice; add 2 cups chicken broth, 1 cup water, 2 garlic cloves and 1 teaspoon salt. Boil 3 minutes, then stir, cover and simmer 15 minutes. Let sit 5 minutes; fluff with a fork and smash the garlic. Stir in some butter and cilantro.

MIXED GRAIN PILAF

This medley owes its substantial texture to sturdy little grains of pearl barley, wheat berries, and millet, as well as to a hearty helping of wild rice. Fragrant garlic, onion, and assorted mushrooms contribute rousing flavors. When vegetable stock takes the place of chicken stock, the dish easily becomes vegetarian.

3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
1 large onion, finely chopped (1 1/2 cups)
2 garlic cloves, minced
4 cups thinly sliced white mushrooms (about 3/4 pound)
3/4 cup thinly sliced cremini mushrooms (about 2 ounces)
2 cups pearl barley
1 cup hard wheat berries
1 cup wild rice
1/2 cup millet
7 cups homemade or low-sodium store-bought chicken stock
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Heat oil and butter in a large ovenproof Dutch oven over medium heat. Add onion and garlic; cook, stirring occasionally, until softened, 6 to 8 minutes. Add mushrooms. Raise heat to medium-high, and cook, stirring occasionally, until mushrooms are softened, about 5 minutes. Stir in all of the grains. Cook, stirring often, 12 minutes. Stir in stock; bring to a boil.
  • Cover, and transfer to oven. Bake until grains are tender, 40 to 50 minutes (check after 40 minutes, but don't remove lid before then). Season with salt and pepper. Serve immediately.
  • Add grains, and stir well, coating them with oil. Cook, stirring often, for about 10 to 15 minutes. Stir in stock, and bring to a boil. Cover pot, and put in oven. Bake for 30 to 40 minutes (check after 30 minutes; remove lid and cook a little longer if grains need to be softer). Fold in chopped herbs. Drizzle with Marsala wine. Season with salt and pepper, and serve immediately.
  • To reheat: Place the pilaf mixture in a buttered, ovenproof casserole. Do not fold in the herbs or add Marsala. Cover, and refrigerate until ready to serve. When ready to serve, bring the pilaf to room temperature, about 20 minutes. Heat the oven to 350 degrees. Drizzle with Marsala. Cut a piece of parchment paper to fit the top of the casserole, and butter it. Place the parchment on the pilaf, butter-side down. Place in the oven until heated through, about 30 minutes.

2 tablespoons (1/2-inch pieces) angel-hair pasta, broken from about 30 strands
1 tablespoon unsalted butter
1 (about 3/4 cup) small onion, finely chopped
Pinch of coarse salt
1 cup long-grain white rice
1 1/2 cups or low-sodium store-bought chicken stock

Steps:

  • Heat a dry, small saucepan over high heat until hot. Add the pasta, and cook, stirring, until deep golden brown, about 1 1/2 minutes. Add butter; cook, stirring occasionally, until melted. Stir in onion and salt; cook, stirring occasionally, until onion is translucent, about 2 minutes. Stir in rice, and cook, stirring, 1 minute.
  • Add stock to pan; bring to a boil. Reduce heat and simmer, covered, 15 minutes. Remove from heat; let pilaf stand, covered, 10 minutes. Fluff with a fork before serving.

HERBED FARRO PILAF

1 tablespoon canola oil
1/4 cup broken spaghetti, linguine or orzo
3/4 cup farro
1 shallot, finely chopped
1 1/2 cups low-sodium chicken or vegetable stock
1/4 teaspoon kosher salt
1/4 cup chopped parsley
2 teaspoons chopped fresh thyme or oregano

Steps:

  • In a medium saucepan, heat the canola oil over medium-high heat. Add the pasta and cook, stirring frequently, just until it turns golden brown, about 2 minutes. Stir in the farro and shallots and continue to cook, stirring, 2 more minutes. Stir in the chicken stock and salt and bring to a boil. Lower the heat, cover the pan and simmer until the farro is very tender, about 35 minutes. Check the farro towards the end of cooking and add 1 to 2 tablespoons water if the pan dries out before the farro is tender.
  • Top with the parsley and thyme, fluff with a fork and serve.

1 tablespoon butter or 1 tablespoon margarine
1/2 cup chopped yellow onion
2 garlic cloves, minced
1/2 cup long grain brown rice
1/2 cup pearl barley, rinsed
1/2 cup orzo pasta
3 cups chicken broth
1/4 cup chopped fresh basil
1/2 teaspoon dried thyme
1/2 teaspoon salt
fresh ground pepper
1/4 cup chopped parsley

Steps:

  • In large saucepan over medium heat, melt butter. Add onion and garlic and saute until soft, about 5 minutes.
  • Add rice, barley and orzo and stir until grains and pasta are coated.
  • Add chicken broth, basil, thyme, salt and pepper. Bring to a boil, then reduce heat.
  • Cover and simmer until liquid is absorbed, about 45 to 50 minutes.
  • Add parsley and fluff with a fork. Serve immediately.
