SPINACH AND MATZOH PIE (PASSOVER)
This easy and delirious dairy recipe is from "Gourmet Magazine" (April 2008). It's similar to a spanakopita. It's great served warm as a main dish, or cold, in small slices, as an appetizer. Cooks' note: Pie can be assembled (but not baked) 1 day ahead and chilled, covered.

Steps:
- Preheat oven to 400°F with rack in middle. Cook onion in oil in a large heavy skillet over medium heat, stirring occasionally, until golden, 12 to 15 minutes.
- Meanwhile, put spinach in a sieve and press out as much liquid as possible. Add spinach to onion and cook, stirring occasionally, 5 minutes. Remove from heat and stir in 1/3 cup dill, 3/4 teaspoon salt, and 1/2 teaspoon pepper.
- Purée cottage cheese in a blender with milk, eggs, nutmeg, and 1/2 teaspoon each of salt and pepper until smooth. Reserve 2 cups in a bowl and stir remainder into spinach with 1 cup feta.
- Stack matzos in a deep dish and pour reserved cottage-cheese mixture over them. Let stand 15 minutes to soften.
- Arrange 2 soaked matzos side by side in a generously oiled 13- by 9- by 2-inch (3-quart shallow) baking dish. Pour in half of spinach filling. Cover with 2 more matzos, then pour in remaining filling. Put remaining 2 matzos on top and pour any remaining cottage-cheese mixture over them. Sprinkle with remaining 1/2 cup feta.
- Bake, uncovered, until golden and set, 30 to 35 minutes. Cool 10 minutes, then serve sprinkled with remaining 2 tablespoons dill.

- Preheat oven to 350°F. Butter 8x8x2-inch glass baking dish. Beat eggs, salt and pepper to blend in large bowl. Mix in spinach. Add remaining ingredients and stir until well blended. Transfer mixture to prepared dish.
- Bake casserole until center is firm and top is golden, about 45 minutes.
PASSOVER SPINACH CASSEROLE

- 1. Cook spinach; drain well. Melt margarine in skillet and saute garlic. Blend in potato starch, then onion soup mix. Add a little water. Remove from heat.
- 2. Stir beaten egg and matzo meal into spinach. Add margarine mixture, then salt and pepper to taste.
- 3. Pour into well greased 1 1/2 quart casserole dish. Bake at 350 degrees for 25 minutes.

Steps:
- Preheat oven to 350 degrees F.
- Cook spinach in microwave on HIGH for 4 minutes -Don't add any water.
- Cool and squeeze dry.
- Sauté in sprayed pan, onion, celery, red pepper, and carrots for 5 minutes until golden.
- Add mushrooms and cook 5 minutes longer (or cook vegetables uncovered in the microwave for 6 to 8 minutes on HIGH).
- Chop spinach coarsely. Combine with remaining ingredients and mix well.
- Pour into a sprayed 7" x 11" Pyrex casserole.
- Bake uncovered at 350F for 45 to 50 minutes, until firm. Cut into squares to serve.

- Lightly oil a 2 quart glass round baking dish.
- Stir together undrained spinach, parmesan cheese and matzo ball mix. Add oil and mix lightly.
- Beat in eggs thoroughly, one at a time.
- Place mixture in baking dish, smooth top lightly, and cover dish tightly with aluminum foil.
- Bake at 350 degrees for 50 minutes. Then uncover the dish and sprinkle shredded cheese on top.
- Bake uncovered 5-10 minutes more or until cheese is melted.
