MANGO & PASSION FRUIT MERINGUE ROULADE

Mango & passion fruit meringue roulade image

Throwing a dinner party? How about making this deliciously rich and creamy meringue roulade? The best part is it's low in fat and gluten-free

Provided by Good Food team

Categories     Dessert, Dinner

Time 1h10m

Number Of Ingredients 11

3 large egg whites
175g caster sugar
1 level tsp cornflour
1 tsp malt vinegar
1 tsp vanilla extract
icing sugar , to dust
200g fat-free Greek yogurt
1 large ripe mango , peeled, stoned and diced
4 passion fruits , pulp only
icing sugar (optional) and a few physalis, to decorate
raspberry sauce , to serve (see 'Try' below)

Steps:

  • Preheat the oven to 150C/ gas 2/fan 130C. Line a 33x23cm swiss roll tin with non-stick baking parchment. Beat the egg whites with an electric whisk until frothy and doubled in bulk. Slowly whisk in the caster sugar until thick and shiny. Mix the cornflour, vinegar and vanilla extract, then whisk into the egg whites.
  • Spoon into the tin and level the surface carefully, so you don't push out the air. Bake for 30 minutes until the meringue surface is just firm.
  • Remove from the oven and cover with damp greaseproof paper for 10 minutes. Dust another sheet of greaseproof paper with icing sugar. Discard the damp paper and turn the meringue out on to the sugarcoated paper. Peel off the lining paper, then spread yogurt over the meringue and scatter with mango and passion fruit. Use the paper to roll up the roulade from one short end. Keep the join underneath. Sift a little icing sugar on top if you like, decorate with physalis and serve with raspberry sauce.

CHOCOLATE AND PASSIONFRUIT LAYER CAKE

Chocolate and Passionfruit Layer Cake image

Chocolate cake is a beautiful thing on its own, but adding a thick layer of sharp passionfruit curd undercuts the heavy richness and balances the sweetness-which dangerously means that one slice is no longer enough...

Provided by Martha Collison

Categories     HarperCollins     Cake     Dessert     Bake     Chocolate     Passion Fruit     Milk/Cream     Dark Chocolate     Birthday

Yield 10 servings

Number Of Ingredients 14

Butter, for greasing
2 x My Favorite Chocolate Cake
Filling:
150ml (2/3 cup) heavy cream
1 tbsp confectioners' sugar
10 tbsp Passionfruit Curd, with or without seeds
Icing:
50g (1/4 cup/1/2 stick) butter
100g (3 1/2oz) dark chocolate, chopped
75g (2/3 cup) confectioners' sugar
1 tsp milk
Sprinkle of chocolate shavings, to decorate
Special Equipment
2 [20cm (8-inch)] round tins

Steps:

  • Preheat the oven to 180°C/160°C fan/gas 4/350°F then grease two 20cm (8-inch) tins and line with baking parchment.
  • Make two batches of My Favorite Chocolate Cake recipe and use it to fill the tins.
  • Bake for 25-30 minutes until risen and a skewer inserted comes out clean. Leave to cool in the tin for ten minutes before turning out onto a cooling rack.
  • Whip the cream and confectioners' sugar together in a small bowl until it forms soft peaks and holds its shape when mixed. Be careful to stop when it reaches soft peaks or you might over-whip the cream, which will ruin the finished cake.
  • Spread the whipped cream all over the top of one of the cake layers, then cover with spoonfuls of passionfruit curd. Carefully sandwich the second layer on top of the first.
  • To make the icing, melt the butter and chocolate together in a microwave or in a heatproof bowl over a pan of simmering water. Remove from the heat and mix in the confectioners' sugar and the milk, then use a palette knife to spread it over the top of the cake. Sprinkle over chocolate shavings before serving. Keep any leftover cake in the fridge, where it will keep well for 2-3 days.

MERINGUE ROULADE WITH PASSION FRUIT CREAM

Meringue roulade with passion fruit cream image

Make this passion fruit dessert up to a day ahead for a relaxed touch of the tropical. Crisp meringue pairs well with the fresh and fruity cream filling

Provided by Jikoni

Categories     Dessert

Time 1h5m

Number Of Ingredients 13

flavourless oil , for brushing
4 large egg whites
200g white caster sugar
1 tsp vanilla extract
1 tsp white vinegar
2 tsp cornflour , sifted
50g desiccated coconut , toasted and cooled
150ml double cream
1 tbsp icing sugar
150g mascarpone , beaten
6 passion fruits
½ small pack mint , leaves picked and shredded
icing sugar , for dusting

Steps:

  • To make the meringue, heat oven to 200C/180C fan/gas 6. Line a 23 x 33cm baking tray with baking parchment and lightly brush with oil.
  • Whisk the egg whites until stiff. Gradually whisk in the sugar, a little at a time, and continue whisking until the mixture is thick and glossy, then fold in the remaining meringue ingredients. Spread the meringue evenly onto the prepared baking tray. Bake for 10 mins, then lower the temperature to 170C/150C fan/gas 3 and cook for a further 10 mins.
  • Meanwhile, dust another sheet of baking parchment with icing sugar. Once cooked, remove the meringue from the oven and leave to cool for 2 mins on the tray. Turn out onto the dusted piece of parchment. Cool for a further 5 mins, then gently peel off the bottom sheet of parchment from the meringue. Cover with another layer of parchment and roll up the meringue from the long side until ready for use.
  • To make the filling, whip the double cream with icing sugar and fold in the mascarpone and passion fruit pulp.
  • Unroll the meringue, spread the cream mixture over the surface, top with the shredded mint leaves and roll up again, using the parchment to help you. Chill, then serve in slices, dusted with icing sugar.

PASSION FRUIT, CHOCOLATE & COCONUT ROULADE

Passion fruit, chocolate & coconut roulade image

This twist on a classic Yule log uses the tropical flavours of passion fruit and coconut to create a terrific tropical centrepiece for your Christmas table

Provided by Cassie Best

Categories     Dessert

Time 1h30m

Number Of Ingredients 14

oil or butter, for greasing
150g gluten-free dark chocolate , chopped into small pieces
6 large eggs , separated
170g golden caster sugar
25g cocoa powder
25g ground almonds
250g tub mascarpone
400ml double cream
50ml Malibu (optional)
85g icing sugar
125g passion fruit curd
3 ripe passion fruits , flesh scooped out
75g coconut flakes , toasted
edible gold glitter (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease a 33 x 23cm Swiss roll tin and line with baking parchment, then grease the parchment too. Tip the chocolate into a heatproof bowl and place it over a pan of gently simmering water. Leave to melt, stirring occasionally, then remove from the heat and allow to cool a little (alternatively, melt it in short bursts in the microwave).
  • Put the egg whites in a large, clean bowl, and the yolks and sugar in another. With very clean beaters, whisk the whites until they are just holding soft peaks. Transfer the beaters to the yolks bowl (no need to wash them) and beat until the sugar has dissolved and the mixture is thick and pale.
  • Add a large spoonful of whites to the yolks and mix with a large metal spoon to loosen the yolks a little. Add the remaining whites and gently fold into the yolks, avoiding knocking out too much air.
  • When nearly all incorporated, sieve the cocoa over the surface, scatter over the almonds and pour in the melted chocolate. Continue folding until the mixture is well combined, then scrape into your tin. Spread the mixture to the edges and level the surface. Bake for 15-18 mins on the middle shelf of the oven until the surface is crisp and the cake feels springy.
  • While still warm, turn the roulade out onto a large piece of baking parchment, removing the parchment you used to bake the roulade on. With a small serrated knife, make a shallow incision about 1cm in from one of the shorter edges, making sure that you don't cut all the way thorough. Starting from this end, roll up as tightly as you can, bending the cut piece inwards to get the centre of the roll tight, using the baking parchment to help you and stop the layers sticking. Leave to set and cool.
  • Tip the mascarpone, cream, Malibu (if using) and icing sugar into a bowl and whisk until softly whipped. Carefully unroll the roulade - it will crack in places, but don't worry. Spread a third of the cream all over the surface, leaving a border of about 1.5cm all the way around. Drizzle the passion fruit curd all over the surface and top evenly with the passion fruit flesh.
  • Starting from the end that you used before, re-roll the roulade as tightly as you can, bending the cut piece into the cream to get the centre of the roll tight. Place the roulade, seam-side down, on a serving plate or board and spread the remaining cream all over the outside. Press the coconut flakes all over the top and sides, and dust with a little gold glitter, if you like. Chill and serve within a few hours. Leftovers will keep in the fridge for 2 days.
