PARMESAN FRENCH TOAST



Parmesan French Toast image

While obviously a contender for weekend brunch, this savoury take on French toast is, for me, a perfect early supper when I feel like something comforting and quick. It's also exactly what I need when I've come back in late, having uncharacteristically and disturbingly gone without dinner. For US cup measures, use the toggle at the top of the ingredients list.

Number Of Ingredients 11

1 large egg
3 x 15ml tablespoons finely grated Parmesan
¼ teaspoon paprika
1 teaspoon Dijon mustard
½ teaspoon worcestershire sauce
3 x 15ml tablespoons full fat milk
2 slices white sourdough bread or anything sturdy and with a bit of bite to it
1 x 15ml tablespoon unsalted butter
½ teaspoon regular olive oil
flatleaf parsley
spring onions

Steps:

  • Whisk the egg, Parmesan, paprika, mustard, Worcestershire sauce and milk together in a shallow dish that the slices of bread will fit in with not a great deal of space around them, making sure everything is completely combined. Sit the bread in this sunny mixture for about 2 minutes each side, pressing down on it every now and again. You want the slices to be soaked through and softened, but not falling to pieces. Spoon any remaining egg mixture over. When the bread is ready, warm the butter and oil in a frying pan in which the slices will sit fairly snugly. Once the butter is beginning to bubble frothily, fry the bread over a medium-high heat, turning it down if the butter gets too hot, for about 2 minutes each side - keep a good eye on it - until it is cooked through with patches of rich golden brown on the surface. Remove from the pan, and eat just as it is, or sprinkle with chopped parsley and thinly sliced spring onion, if wished.

This quick and easy appetizer is also incredibly elegant. Just wrap a ribbon of prosciutto around a wafer of Parmesan cheese nestled against a sliver of dried fig, and drizzle with olive or truffle oil.

10 very thin slices prosciutto
About 1/4 pound Parmesan, sliced wafer thin
8 to 10 dried figs, stemmed and cut into about 3 strips each
Truffle or olive oil

Steps:

  • Cut each piece of prosciutto in half the long way; on each piece, put a slice of Parmesan and a strip of fig. Roll up the long way, pressing so meat sticks to itself. Cover with plastic wrap if not serving right away.
  • Serve within 2 hours, drizzling truffle or olive oil on top just before serving.

1 large baguette or soft Italian bread loaf
Fig Jam (recipe below)
4 ounces prosciutto, thinly sliced
4 ounces Asiago cheese, thinly sliced
1 small bunch arugula, washed well and dried
Fig Jam
10 ounces dried Calimyrna figs, stemmed and cut into 1/4-inch pieces (about 1 3/4 cups)
3 tablespoons sugar
1 1/2 cups water, plus more if needed
1 tablespoon fresh lemon juice
(makes 1 3/4 cups)

Steps:

  • Cut baguette into four 5- to 6-inch-long pieces; split each piece horizontally, leaving one side intact. Spread all bread halves with fig jam; layer bottom halves with prosciutto, cheese, and arugula. Fold halves together, and serve.
  • Fig Jam
  • In a medium saucepan, combine figs with sugar and the water. Bring to a boil, stirring to dissolve sugar. Reduce heat. Cover and simmer until almost all liquid has evaporated and figs are very tender, about 20 minutes.
  • Transfer mixture to a food processor; add lemon juice. Puree until smooth (if mixture is too thick, add up to 1/4 cup additional water, a little at a time). Jam can be refrigerated up to 1 month in an airtight container.

  • Arrange prosciutto in overlapping slices on a large platter. Place figs beside prosciutto, drizzle with vinegar, and garnish with fresh thyme sprigs.
  • Sprinkle the Parmesan shavings over prosciutto and figs.

4 ounces honey-flavored goat cheese
3 ounces prosciutto
2 fresh figs, thinly sliced
2 leaves fresh basil, cut into thin strips
⅛ teaspoon freshly ground black pepper

Steps:

  • Place goat cheese on a sheet of plastic wrap. Top with another sheet of plastic wrap and use a rolling pin to flatten into a 4x8-inch rectangle.
  • Remove the top sheet of plastic wrap and cover goat cheese with slices of prosciutto, slightly overlapping the edges. Cover prosciutto with a new sheet of plastic wrap and flip both sheets over so the goat cheese layer is now facing up.
  • Remove top sheet of plastic wrap. Cover goat cheese evenly with figs, basil, and black pepper. Starting from the long edge, roll tightly to form a log. Wrap log in plastic wrap and refrigerate at least 2 hours.
