Steps:
- Stir together breadcrumbs, Parmesan cheese, salt and pepper in a flat plate. Dip haddock into beaten egg and then press into breadcrumb mixture to coat. Heat oil in a skillet and cook fish over high heat for 3 minutes per side, or until fish flakes easily with a fork. Serve with tomato sauce, brown rice and steamed brocoli.
BAKED HADDOCK
Steps:
- Preheat oven to 500 degrees F (260 degrees C).
- In a small bowl, combine the milk and salt. In a separate bowl, mix together the bread crumbs, Parmesan cheese, and thyme. Dip the haddock fillets in the milk, then press into the crumb mixture to coat. Place haddock fillets in a glass baking dish, and drizzle with melted butter.
- Bake on the top rack of the preheated oven until the fish flakes easily, about 15 minutes.

Steps:
- Preheat the oven to 425 degrees.
- Dry the fish filets very well with paper towels. Place the fish on a baking sheet that's been sprayed with cooking spray or use a piece of parchment paper to line the sheet. Season the fish with salt and pepper.
- Add the breadcrumbs, mayonnaise, parmesan cheese, Old Bay Seasoning, garlic powder and parsley to a bowl and mix to combine.
- Spread mixture on top of fish, dividing between the filets, using all of the topping. Bake for 10-12 minutes, depending on how thick your fish filet is. Remove the fish from the oven and preheat the broiler. Broil the fish for 2 minutes until the topping is browned. Serve the fish with lemon wedges and garnish with more chopped parsley.
