1 1/4 cups milk
1/3 cup vegetable oil
1 egg
2 cups flour
2/3 cup sugar
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
6 Heath candy bars, crushed (or 1 package toffee bits)

Steps:

  • Preheat oven to 400*F.
  • Grease the bottoms only of 12 standard-size muffin cups, or line with paper liners.
  • In a large bowl, beat together the milk, oil and egg.
  • Whisk together the flour, sugar, cocoa powder, baking powder, and salt; add to milk mixture just until combined.
  • Do not overmix.
  • Gently fold in the Heath bars.
  • Spoon batter into the prepared muffin tins--the cups will be full; bake for 18-20 minutes, or until a toothpick tests out clean.
  • Immediately remove muffins from the tins; serve warm, or cool completely.

2 cups flour
1/2 cup packed light brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk, at room temperature
1/3 cup butter, melted and cooled
1 large egg, lightly beaten,at room temperature
1 teaspoon vanilla extract
1 1/4 cups heath bar toffee pieces (or shattered Butterfinger or Milky Way bars)

Steps:

  • Preheat oven to 400*F.
  • Line 12 standard-size muffin cups with paper wrappers; set aside.
  • Whisk together the flour, brown sugar, baking powder, and salt.
  • In another bowl, stir together the milk, melted butter, egg, and vanilla.
  • Make a well in the center of the flour mixture; add the milk mixture and stir just until combined.
  • Do not overmix.
  • Gently fold in the Heath Bar bits.
  • Spoon batter into the prepared muffin cups; bake for 15-20 minutes, or until a toothpick tests out clean.
  • Cool 5 minutes in tins before removing to wire racks and cool completely.
  • Store airtight at room temperature.

  • Whisk the flour, sugar, cocoa powder, baking soda, salt, and chocolate chips together in a large bowl. Set aside.
  • Whisk the eggs, sour cream, oil, milk, and vanilla extract together until combined. Pour wet ingredients into dry ingredients and fold together with a rubber spatula or wooden spoon until completely combined. (Batter is quite thick, so I recommend a spatula or spoon over a whisk.) Avoid overmixing. The batter will be thick and sticky.
  • Spoon the batter into liners, filling them all the way to the top. Bake for 5 minutes at 425°F then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 15-16 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 20-21 minutes, give or take. (For mini muffins, bake 13-14 total minutes at 350°F (177°C) the whole time.)

  • In a large mixing bowl, whisk together the dry ingredients: white whole wheat flour, cocoa powder, baking soda, espresso powder, salt, and cinnamon. Stir in the chocolate chips.
  • In a medium bowl, briskly whisk together the eggs, yogurt, honey, milk, oil, and vanilla. Make a well in the center of the dry ingredients and add the wet ingredients. Gently stir by hand, just until the dry ingredients disappear.
