Salt
1 pound cavatappi (hollow corkscrew shaped pasta) or other short cut pasta
3 tablespoons butter
3 tablespoons all-purpose flour
1 cup chicken stock
1 1/2 cups whole milk
Freshly ground black pepper
A few grates nutmeg
1 cup shredded Gruyere
1 cup shredded white sharp Cheddar
2 tablespoons Dijon mustard
1/4 pound French ham, deli sliced, finely chopped

Steps:

  • Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
  • Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

2 cups uncooked elbow macaroni
1/4 cup butter, cubed
1/4 cup all-purpose flour
2 cups 2% milk
4 teaspoons chicken bouillon granules
1/4 teaspoon pepper
2 cups shredded cheddar cheese, divided
1-1/2 cups cubed fully cooked ham
1/4 cup grated Parmesan cheese

Steps:

  • Cook macaroni according to package directions; drain and set aside. In a large saucepan, melt butter over low heat; whisk in flour until smooth. Whisk in the milk, bouillon and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in 1 cup cheddar cheese, ham, Parmesan cheese and macaroni., Transfer to a greased 2-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350° until bubbly, 20-25 minutes. Let stand for 5 minutes before serving.

1/2 pound uncooked macaroni, about 2 cups
Salt to taste, if desired
3/4 pound cooked ham, sliced
1/4 pound mushrooms
1/2 pound sharp Cheddar cheese
3 tablespoons butter
1 tablespoon flour
2 cups milk
1/8 teaspoon freshly grated nutmeg
Freshly ground black pepper to taste
1/2 cup finely chopped onion
1/8 teaspoon cayenne pepper
1 cup heavy cream
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Bring 3 quarts of water to a boil for cooking the macaroni. Add salt to taste. Add the macaroni and cook 10 to 12 minutes, or until tender. Drain and return to pot.
  • Meanwhile, cut the ham into 1/2-inch cubes and set aside. There should be about 2 cups.
  • Slice the mushrooms. There should be about 2 cups.
  • Cut the Cheddar into slices about 1/4 inch thick. Stack the slices and cut them into 1/4-inch-wide strips. Cut the strips into 1/4-inch cubes. There should be about 2 cups.
  • Melt 2 tablespoons of the butter in a saucepan and add the flour, stirring with a wire whisk. Cook for about a minute; then add the milk, stirring rapidly with the whisk. Let simmer about 1 minute and add the nutmeg, Cheddar cheese, and salt and black pepper to taste.
  • Heat the remaining tablespoon of butter in a skillet and add the onions and mushrooms. Cook, stirring, until the mushrooms are wilted. Add the ham and cook, stirring, about 1 minute. Add the cheese sauce, the cayenne and cream. Cook, stirring, about 1 minute.
  • Pour and scrape the mixture into the macaroni and mix well. Transfer to a buttered 10-cup baking dish. Sprinkle the top with Parmesan cheese and place in the oven. Bake 10 minutes. Turn the broiler to high.
  • Brown the macaroni and cheese under the broiler until the top is nicely browned, 2 to 3 minutes.

3 ounces butter
2 ounces all-purpose flour
2 1/2 cups 1% low-fat milk
1 bay leaf
8 ounces mascarpone
1 tablespoon Dijon mustard
8 ounces sharp cheddar cheese, grated
14 ounces macaroni or 14 ounces rigatoni pasta
5 ounces ham, diced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh breadcrumb
1 tablespoon parmesan cheese, grated
salt and pepper

Steps:

  • Melt the butter in a saucepan. Add the flour and cook for 1 minute, stirring constantly. Slowly pour in the milk, whisking all the time. Add the bay leaf and bring to the boil.
  • Reduce the heat and simmer very gently for about 5 mins until smooth and thickened, stirring occasionally.
  • Remove from the heat, remove the bay leaf and add the mascarpone, mustard and cheddar. Mix until smooth, then season. Cover the surface of the sauce with plastic wrap to prevent a skin forming.
  • Preheat the oven to 400°F.
  • Bring a large pan of salted water to the boil. Add the pasta, stir to separate and cook for 1 min less than the time suggested on the packaging. Drain thoroughly and return to the pan.
  • Pour the cheese sauce over the cooked pasta and add the ham and parsley. Mix thoroughly and tip into a shallow ovenproof dish.
  • Combine the breadcrumbs and parmesan and scatter over the pasta. Bake on the middle shelf of the oven for about 20 mins until the top is golden brown and bubbling.
