Number Of Ingredients 8

1/2 cup all-purpose flour
1 large egg, beaten
1/2 cup crushed Ritz crackers (about 10 crackers)
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
4 tilapia fillets (5 ounces each)
2 tablespoons olive oil
Lemon wedges

Steps:

  • Place flour and egg in separate shallow bowls. In another shallow bowl, combine the crackers, cheese and salt. Dip fillets in the flour, then egg, then cracker mixture; turn until coated., In a large cast-iron or other heavy skillet, cook fillets in oil over medium heat until fish just begins to flake easily with a fork. Serve with lemon wedges.

4 tilapia fillets
1/4 c. lemon juice, plus more lemon wedges for serving
1 c. Italian bread crumbs
1 c. freshly grated Parmesan
1/4 c. chopped fresh parsley
kosher salt
4 cloves garlic, minced
pinch of crushed red pepper flakes
Extra-virgin olive oil, for drizzling
Cooked jasmine rice, for serving

Steps:

  • Preheat oven to 400°. On a plate or shallow baking dish, toss tilapia in lemon juice. On a second plate, whisk together bread crumbs, Parmesan, and parsley and season with salt. Coat tilapia in bread crumbs and transfer to a baking dish.
  • Scatter garlic over fillets, sprinkle with red pepper flakes, and drizzle with olive oil.
  • Bake until tilapia flakes with a fork, 10 to 12 minutes.
  • Squeeze with lemon and serve over rice with lemon wedges.

1/2 cup parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 lbs tilapia fillets

Steps:

  • Preheat broiler. Grease a broiling pan. In a small bowl, mix together the parmesan cheese, butter, mayonnaise and lemon juice. Season with basil, pepper, onion powder and celery salt. Mix well and set aside.
  • Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for 2 more minutes. Remove the fillets from the oven and cover them with the parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and the fish flakes easily with a fork.

2 teaspoons paprika
1 tablespoon chopped fresh parsley
salt and ground black pepper to taste
4 tilapia fillets
olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Whisk Parmesan cheese, paprika, parsley, salt, and pepper together in a shallow dish.
  • Coat tilapia fillets with olive oil and press into the Parmesan cheese mixture. Arrange coated fillets on the prepared baking sheet.
  • Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.
