Time 40m

Yield 4 serving(s)

Number Of Ingredients 20

2 dozen fresh oysters, shucked
1/3 cup yellow cornmeal
1/3 cup all-purpose flour
1/3 cup plain breadcrumbs
1/2 teaspoon salt
1/2 teaspoon cayenne (or more to taste)
1/2 teaspoon paprika
1 egg, lightly beaten
1/4 cup buttermilk
oil (for frying)
4 -5 cups cabbage, finely shredded
1 cup sweet onion, very thinly sliced (like Vidalia onion)
kosher salt and pepper
6 tablespoons buttermilk
2 tablespoons mayonnaise
1 garlic clove, finely chopped
1 pinch sugar
1/4 teaspoon frank's hot sauce
2 medium ripe tomatoes, thickly sliced
4 French baguettes, split and lightly toasted (6 inch long)

Steps:

  • Combine the cornmeal, flour, breadcrumbs, salt, cayenne and paprika in a pie plate. In another pie plate, whisk together the egg and buttermilk. Add the oysters to the egg-buttermilk mixture and turn gently with a large spoon to coat. Remove the oysters, one by one from the egg mixture with a pair of tongs and place in the crumbs. Turn several times to coat evenly with the crumb mixture, then transfer to a plate and let stand for 10 minutes.
  • While the oysters "rest," make the garlic-onion slaw. Place the cabbage and sliced onion in a large bowl and season with salt and pepper. In a separate bowl, whisk together the buttermilk, mayonnaise, garlic, sugar and hot sauce. Add to the cabbage-onion mixture and toss to combine. Taste and adjust the seasoning as needed. Set aside until ready to assemble the sandwiches.
  • Heat 1/4-inch of oil in a large skillet to 350°F (medium-high). Best if using enough oil in the pan to be equal to about 1/2 the thickness of the oysters. Test the temperature of the oil by adding a pinch of the dry crumb mixture - if it sizzles immediately, the oil is ready. Add 1/2 the oysters and fry until golden brown and crispy, turning once, about 2-1/2 minutes per side. Transfer to a paper towel-lined plate and blot very gently. Repeat with the remaining oysters.

FRIED OYSTERS WITH BACON, GARLIC, AND SAGE

Fried Oysters with Bacon, Garlic, and Sage image

Holding the raw oysters in the rice-flour dredge is a genius do-ahead trick, allowing you to shuck and coat the oysters hours ahead of fry time.

Categories     Bon Appétit     Oyster     Fry     Sage     Wheat/Gluten-Free     Bacon     Seafood     Shellfish     Garlic     Appetizer

Yield 8 servings

Number Of Ingredients 9

2 cups rice flour
1 tablespoon Diamond Crystal or 2 teaspoons Morton kosher salt
1/2 teaspoon cayenne pepper
24 large oysters, shucked
4 ounces slab bacon, cut into 1x1/4-inch pieces
1 cup (2 sticks) unsalted butter, divided
6 garlic cloves, smashed, divided
8 sage leaves
Spicy mustard or hot sauce (for serving)

Steps:

  • Whisk rice flour, salt, and cayenne in a medium bowl. Toss oysters in flour mixture to coat well, then top with a thin layer of dredge (make sure that none of the oysters are peeking out). Cover with plastic wrap and chill in dredge until ready to fry.
  • Cook bacon in a large skillet, preferably cast iron, over medium-low, stirring occasionally, until bacon is browned and crisp, 12-15 minutes. Transfer bacon to a small bowl with a slotted spoon.
  • Pour half of bacon fat into a small heatproof bowl or measuring cup and set aside. Add 1/2 cup butter to drippings in skillet and heat over medium-high. As soon as butter is foaming, remove half of oysters from dredge and shake off any excess. Add to skillet along with 3 garlic cloves and cook, gently shaking skillet to baste oysters with fat and turning oysters occasionally, until golden brown and crisp all over, about 5 minutes. Using a slotted spoon, transfer oysters and garlic to paper towels and let drain.
  • Pour off fat in skillet; discard. Wipe out skillet and return to medium-high. Heat remaining 1/2 cup butter and reserved bacon fat in skillet. As soon as butter is foaming, repeat process with remaining oysters and garlic. Transfer to paper towels and let drain.
  • Cook sage in same skillet just until crisp, about 30 seconds. Transfer to paper towels.
  • Arrange oysters and garlic on a platter and top with fried sage and bacon. Serve with mustard.
  • Do Ahead
  • Oysters can be dredged 4 hours ahead. Keep chilled.

  • Set up a dredging station with 3 shallow bowls or dishes: 1st bowl is flour, 2nd bowl is egg and half and half. 3rd bowl is panko, asiago, parmesan and oregano.
  • Add enough oil to a heavy skillet (with 3"-4"sides) to reach about 1" in depth and heat to 325°. (Use a thermometer for correct reading).
  • Dredge the oysters in the flour, followed by the egg and half and half and finally the panko mixture. Transfer the oysters to the pan, cooking no more than 3-4 at a time for about 1-1 1/2 minutes on each side. Transfer oysters to a tray lined with paper towels and continue with the rest of the oysters.
  • Drain all but two tablespoons of oil and return the pan to the heat. Add lemon slices and cook, turning once until they are browned. Add 1 tablespoon lemon juice and stir. Continue stirring while you add butter, one tablespoon at a time to the pan. Just before the first pat of butter is completely melted, add the next pat. Continue in this manner until the butter is used and you have a sauce. Stir in the parsley and pinch of oregano.
