During World War II, when meat was rationed and had to be purchased with tokens, this recipe went a long way in feeding a family. To this day, I still reach for it whenever I want something different from regular hamburgers. Steps:
- Combine the first 6 ingredients. Shape into 4 patties; press to flatten slightly. In a large skillet, heat oil over medium-high heat. Brown patties on both sides; drain. Add tomato juice. Simmer, covered, until a thermometer inserted into meat reads 160°, 20-25 minutes. Remove patties to a serving platter; keep warm. , Whisk flour into water; gradually add to skillet. Reduce heat to medium-low; cook, stirring constantly, until thickened. Spoon over patties. Serve immediately.

PANNBIFF MED LOK - MEAT PATTIES WITH ONIONS
This is the Swedish version of hamburger steak with onions. Delicious as it is or you can add Swedish Cream Sauce (Graddsas) posted separately.

Steps:
- Melt 2 tbsp butter in skillet over medium heat. Add sliced onions and saute until tender. Add sugar, and continue to saute until they are starting to carmelize (turn brown). Remove from pan and keep warm.
- In the meantime, gently mix together the ground beef, breadcrumbs, egg, milk, allspice, ginger, grated onion, salt and pepper. Form into 4 patties.
- Melt 2 tbsp butter in skillet over medium heat. Add patties and fry until brown. Flip the patties and brown the other side. Add the water, cover, and simmer for 15 - 20 minutes until cooked through.
- Serve, topped with the onions and, if you like, the Swedish Cream Sauce, potatoes and pickles.

Steps:
- Peel and dice the shallot and carrot.
- Melt butter in a sauce pan and saute the vegetables over medium heat until soft.
- Add the cream, soy sauce, bouillon and pepper. Whisk until the cream sauce is thickened and remove from the heat.
- Strain the sauce to remove the vegetable particles. Taste the sauce and adjust the seasoning.
- Serve over meatballs or patties with onions and/or potatoes.

- Peel and thickly slice the potatoes. Cook them in boiling, salted water for 10 minutes, until soft. Drain them and mash well.
- Peel and finely chop or grate the onion. Chop the luncheon meat.
- Mix together the potato, onion, luncheon meat, and bind together with the well-beaten egg, adding sufficient egg to hold it all together. Season with the salt, pepper, and herbs. BEEF PATTIES WITH ONIONS
This is a very popular Danish dish. It goes well with new nugget potatoes and pickled beets. You can add other spices to the patties ( eg Mace) but they are really good plain so you can savour the beef and onion flavors.

Steps:
- Fry the onions in 2 oz of butter until they are turning brown.
- Add the water and continue cooking until it has evaporated.
- Remove onions and keep them warm.
- Shape the beef into round flat hamburgers (about 1" thick) and dip into seasoned flour.
- Melt remaining butter and fry the hamburgers flipping once.
- The hamburgers should be crispy brown on the outside.
- ,about 7 min each side.
- Arrange cooked hamburgers on a platter, cover with the onions, keep warm.
- Pour stock into the fry pan and bring to a boil, add salt& pepper to your taste.
- Serve with the hamburgers.
