Steps:
- In a large bowl, combine pancake mix with brown sugar, cinnamon and nutmeg, set aside.
- Combine remaining ingredients - except applesauce or syrup - in separate bowl.
- Add wet ingredients to dry ingredients just until blended.
- Heat griddle and cook according to package directions.
- Serve with applesauce and/or Aunt Jemima® syrup.

HUSH PUPPIES
I ran into making these by mistake. You can change the cooking time to be longer or shorter to your desire of doneness. Aunt Jemima pancake mix is a suggestion. It is sweeter than Bisquick and other brands. After baking, you can add powder sugar to the top and make it a dessert if so desired. They are wonderful.

Steps:
- Pour approximately 3 cups of cooking oil into a saucepan and heat.
- Meanwhile, mix together the 1 cup of pancake mix with approx 13 to 12 water. The mix should be thick.
- Little bubbles should have formed on the bottom of pan. Take of a spoonful of the mix and slid into oil. (you can do multiple hush puppies at a time just don't let them touch each other).
- Cook for about a minute and flip. Cook for a minute on the other side.
- Use a fork and scoop out of oil. Let access oil drip out of hush puppy.
- Let cool for two minutes and Enjoy!

APPLE PUFFED PANCAKE
This is a delightful breakfast treat. This can also be served as a dessert, simply by doubling the cinnamon and sugar used, and serving a la mode.

Steps:
- Preheat oven to 425 degrees.
- Combine eggs, milk and vanilla in the jar of a blender.
- Blend until well combined.
- Add flour, granulated sugar, salt, cinnamon, nutmeg.
- Blend until dry ingredients are well incorporated, set aside.
- Place butter in a 9x13 inch glass baking dish.
- Transfer dish to oven and heat until butter has just melted.
- Carefully remove from oven and place apples in a single layer in baking dish.
- Return to oven and cook until butter begins to bubble, about 4 minutes.
- Pour batter over apples, sprinkle with brown sugar, and continue baking until puffed and golden, about 20 minutes.
- Sprinkle with confectioners' sugar, if desired; serve immediately.

- For glaze, combine cream cheese and cinnamon in small bowl.
- Gradually add syrup, stirring with wire whisk until smooth; set aside.
- For pancakes, combine pancake mix, raisins and cinnamon in medium bowl. Add water; stir with wire whisk just until large lumps disappear.
- For each pancake, pour scant 1/4 cup batter onto hot lightly greased griddle; sprinkle with heaping 1 tablespoon cereal.
- Turn when pancakes bubble and bottoms are golden brown.
- Drizzle with glaze. Serve topped with syrup.

- Place butter in a 10-in. ovenproof skillet. Place in a 425° oven just until melted. In a large bowl, beat the flour, eggs, milk and salt until smooth. Leaving 1 tablespoon melted butter in the skillet, stir the remaining butter into the batter. , Pour batter into hot skillet. - In a bowl, mix together all the dry ingredients.
- Make a well in the centre and pour in the milk.
- Start with 1 1/4 cups milk, adding up to another 1/4 cup if necessary, as you mix it with the flour.
- Add the two eggs, vanilla if using and oil, whisking until mixed but still a bit lumpy.
- Heat a frying pan (if it is not non-stick, you will need to melt a bit of butter or oil in it) and when hot, pour in some pancake mix.
- How much depends on how experienced you are at flipping pancakes and how big you want them. We do about 1/4 cup a time for small, easy-to-flip pancakes but you could make this as much as 1/2 cup of pancake mix.
- If you are adding fruit, I like to sprinkle it on top of the pancake now.
- When the pancake starts to bubble on top and is golden brown on the cooked side, turn it and continue cooking until both sides are golden brown.
- The first pancake is always a bit of a test so adjust the batter by adding more flour if you need to make it thicker or more milk if you want a thinner pancake. In either case, just add a few spoonfuls at a time until you get it right.
- Repeat the cooking process with the remaining batter. You may need to adjust the heat as pan tends to get hotter as you keep making pancakes.
- Keep the cooked pancakes covered with a tea towel, to keep them warm while you finish cooking the rest.

- Measure out pancake mix and water that the mix you are using calls for, into a medium sized mixing bowl. Whatever brand of pancake mix you use, use their ingredient list, and remember to make enough for 12 (4") pancakes! Add 1/2 cup of the apple pie filling to the mix (reserving the rest for later). Add the ground cinnamon to the batter, and stir just until the batter is fully mixed.
- Spray a griddle or large skillet with non-stick baking spray. Heat on medium heat until hot. Pour batter onto griddle, forming 4" wide pancakes, leaving a bit of space between each one. Cook until bubbles form on the top of the pancakes and the bottom edges are golden brown, then carefully flip to the other side. Continue cooking until done in the center, then remove to serving plate, and keep warm. Repeat process until all batter has been used.
- To serve, transfer pancakes to individual plates. Place 2 pancakes on each plate, and top each serving with a pad of butter (if desired), and about 4 Tablespoons of the reserved apple pie filling. Serve, and enjoy!
