SPICY PAN SEARED SHRIMP

2 lbs. Wild Ocean Shrimp - deveined
2 tbs. Corn Oil
2 tsp. McCormick Sea Salt
½ tsp. McCormick Pure Ground Black Pepper
½ tsp. McCormick (Cayenne) Red Pepper
2 tbs. McCormick Dried Oregano
2 tbs. McCormick Garlic Powder
2 tsps. Jamaican Curry
½ tsp. McCormick Ground Mustard

Steps:

  • De-vein and pat dry the shrimp. Place in a covered container.
  • Combine all of the ingredients for the rub in a small bowl and pour over the shrimp and toss.
  • Place in the refrigerator for 1 to 2 hours or more.
  • Heat a large cast iron frying pan with 1 tbs. of Mazola Corn Oil.
  • Add a few shrimps at a time, do not overcrowd the pan!
  • Cook the shrimp about 2 - 2 ½ minutes, depending on how large the shrimps are, until the edges turn pink and the shrimp is cooked through, turning the shrimp once so that they are a beautiful golden color on each side.
  • Place shrimp on a platter as they are cooked.
  • Serve with desired sides; I served mine with sweet potato fries and homemade flatbread.

1 1/2 cups olive oil
5 tablespoons minced garlic
4 tablespoons paprika
1 teaspoon cayenne pepper
1 cup vegetable oil
3 egg yolks*
1/4 cup lemon juice
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1 tablespoon kosher salt
1/2 teaspoon black pepper
1 1/2 cups water
5 bay leaves
3 lemons, juiced
1 cup white wine
2 teaspoons cayenne pepper
3 tablespoons kosher salt
2 pounds shrimp, peeled and deveined, tails left intact

Steps:

  • To make the aioli: Warm the olive oil over low heat in a large skillet. Add the garlic, paprika, and cayenne pepper and toast until the garlic is fragrant, about 3 minutes. Remove the pan from the heat and add the vegetable oil then transfer the mixture to a measuring cup.
  • Combine the egg yolks, lemon juice, red wine vinegar, Dijon mustard, salt, and pepper in a food processor, blender or mixing bowl. Gradually incorporate the garlic mixture, processing, blending, or whisking continuously as you emulsify. Chill the aioli thoroughly.
  • To poach the shrimp: Combine 1 1/2 quarts of water with 5 bay leaves, the lemon juice, wine, cayenne pepper and salt in a large saucepan. Bring the poaching liquid to a simmer over medium-high heat. Add the shrimp and cook until they are pink, firm and opaque, about 5 minutes. Drain the shrimp and allow them to cool.
  • Put the shrimp in a bowl. Add aioli and mix well. Spoon the shrimp onto plates and serve.

2 garlic cloves, minced
2 tablespoons olive oil
1/3 cup white wine or reduced-sodium chicken broth

Steps:

  • In a large skillet, saute shrimp and garlic in oil for 3 minutes. Add wine and seasoning; cook and stir 3-5 minutes longer or until shrimp turn pink. Serve with rice; sprinkle with parsley.

2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.

3 large egg yolks, room temperature
1/2 teaspoon Dijon mustard
Coarse salt
1/4 cup canola oil
Juice of 1 lemon
1/2 cup extra-virgin olive oil
1 1/2 pounds (24 to 30) large shrimp
Freshly ground pepper

Steps:

  • Make aioli: Pulse garlic in the bowl of a food processor until it is finely chopped. Add egg yolks and mustard, and season with salt; process until mixture is blended. With machine running, add half the canola oil, a few drops at a time, until mixture is emulsified. Add 4 teaspoons lemon juice. With machine running, add remaining canola oil and the olive oil. Season with salt and lemon juice. Transfer to a bowl; refrigerate, covered, up to 2 days.
  • Season shrimp with pepper. Place a large cast-iron skillet over medium heat; lightly cover bottom with salt. Arrange half the shrimp in a single layer. Place a pan on top as a weight; cook 2 minutes. Remove top pan, and turn shrimp; cook until they are pink, about 1 1/2 minutes. Transfer to a plate; wipe pan with a dry paper towel. Repeat with remaining shrimp. Serve with aioli.
