Learn how to cook the perfect filet mignon in the oven like the best restaurants. A little pan-searing on the stovetop, then cook in the oven for your perfect filet. Never fail results every time that is perfect for two or a crowd.

2 Filet Mignon (about 1 1/2 inch thick and about 8 oz)
1 tablespoon butter (or butter)
salt and pepper (to taste or 7:2:2)

Steps:

  • Preheat oven to 400°. Start with 1 1/2 thick filets, about 8 oz each, and trimmed well. Remove any silver skin. If you have time, rest at room temperature for 30-60 minutes.
  • Pat dry well with paper towels. Season all sides to taste. Just kosher salt and pepper will be fine. I use my homemade All-Purpose Seasoning -7:2:2. Season just before cooking or 1 hour before cooking to prevent the salt from pulling fluid out of the meat.
  • In an oven-safe pan (I love my 10-inch cast iron), melt 1 tablespoon of butter over medium-high heat or use oil. When hot, sear both sides of the filets for 2-3 minutes-sear, flip, sear, and final flip before going to the oven.
  • Transfer to the preheated oven. Cook to your desired done temperature minus about 3-5 degrees. For me, medium-rare is always about 8-10 minutes to get an internal temp of about 135°- 140°. If you want rare, check the internal temperature when the meat goes into the oven.
  • I suggest checking the internal temperature after 4-5 minutes in the oven to see where you are on the internal temperature. Time can vary due to the exact temperature of the meat to start, the exact temperature of the oven, the pan used, and the thickness of the meat. Rare may take only a few minutes in the oven so beware if you want rare. DO NOT COOK BY TIME ALONE. YOU MUST CHECK THE INTERNAL TEMPERATURE. Times are provided to help planning only.
  • Remove from pan and tent lightly with foil on a plate and let rest for 3-5 minutes before cutting. It needs to absorb fluids internally, and the temperature will rise a few more degrees during the rest.

Steps:

  • Melt butter with olive oil in a large cast iron skillet over medium heat. Add filets and cook 5-7 minutes on each side.

This recipe is adapted from several roasted steak recipes with a few modifications that I feel makes the ultimate steak.

2 teaspoons kosher salt, to taste
1 teaspoon garlic salt, to taste
1 teaspoon meat tenderizer, to taste
1 1/2 teaspoons fresh ground pepper, to taste
1 teaspoon paprika
2 teaspoons dried parsley
2 teaspoons olive oil
2 beef tenderloin steaks (1 to 1.5 inches in thickness, USDA prime beef works best)

Steps:

  • Preheat oven to 500 degrees.
  • Let steaks warm to room temperature and rub with water on each side. Apply kosher salt, garlic salt, meat tenderizer, and fresh ground pepper liberally. Sprinkle paprika and parsley on each side for color/garnish.
  • Warm olive oil in a grill pan, frying pan, or skillet over medium high heat and add filets while pan is warming. As steaks begin to sizzle, adjust temperature to high heat, gently lift the steaks to prevent sticking and apply pressure to ensure steaks are browning. Repeat process and adjust heat as necessary until steaks are brown (roughly 2 to 3 minutes on each side).
  • Upon browning both sides, place steak in an oven safe pan or skillet and roast using the following temperature guidelines (which vary depending upon the thickness of the meat) - rotate halfway through cooking:.
  • Rare - 4 to 6 minutes (130 to 140 degrees internal temperature).
  • Medium Rare - 6 to 8 minutes (140 to 150 degrees internal temperature).
  • Medium - 8 to 10 minutes (150 to 160 degrees internal temperature).
  • Use a foil tent as necessary to keep steaks warm until serving. Remember they will continue to cook as they are removed from the heat. I prefer to serve with mashed potatoes and stir fried green beans or sauteed mushrooms.
  • The following guidelines help to determine steak temperature without cutting into the steak and ruining the presentation according to Big Oven: very rare feels soft and squishy, rare is soft to the touch, medium-rare yields gently to the touch, while medium yields only slightly to the touch and is beginning to firm up, and medium-well is firm to the touch.
  • Safety note per Big Oven: "Doneness" is an issue of personal preference. However, it is recommended that beef be cooked to medium-rare doneness, the internal temperature should reach 145 degrees F to ensure that harmful bacteria have been destroyed. A thick cut of beef that has been cooked to an internal temperature of 140 degrees F, may be removed from the oven, loosely covered, and allowed to rest a few minutes. The temperature will continue to rise about 5 degrees F, reaching proper doneness.

Four 6-ounce filet mignon steaks, at room temperature, lightly pounded
Kosher salt
1/4 cup black peppercorns, coarsely ground, such as Butcher Cut
3 tablespoons canola or grapeseed oil
1 shallot, minced
2 tablespoons green peppercorns in brine, drained
2 ounces brandy
3/4 cup beef stock
1/2 cup heavy cream
2 tablespoons unsalted butter
Chopped fresh parsley, for sprinkling
1 teaspoon red wine vinegar

Steps:

  • Sprinkle the steaks generously with salt on both sides. Press the top and bottoms of the steaks into the peppercorns to crust on each side.
  • Heat 2 tablespoons oil in a large heavy saute pan or cast-iron pan over medium-high heat until very hot. Add the steaks and sear for 3 to 4 minutes on each side. Cook until the internal temperature is around 125 degrees F for medium-rare. Remove the steaks from the pan and allow them to rest.
  • In the same pan the steaks were cooked in, add the shallots along with the remaining tablespoon oil and the green peppercorns and reduce the heat to medium. Cook until the shallots are softened and lightly browned, 2 to 3 minutes.
  • Turn off the heat, then add the brandy and return the heat to medium. Cook for 1 minute. Add the beef stock and cream, then reduce the liquid by half until thickened, 8 to 10 minutes. Season with salt as needed.
  • Turn off the heat. Swirl in the butter and melt, stirring often. Return the steaks to the pan and coat with the sauce. Sprinkle with the parsley and a splash of red wine vinegar to balance the richness of the sauce. Place the steaks on a plate, then spoon the sauce over and serve.

1 tablespoon brown sugar
2 tablespoons butter

1 1/2 pounds asparagus
1 1/4 pounds filet mignon, cut into 6 equal portions
3 tablespoons canola oil

4 tablespoons butter
3 cloves garlic, smashed
5 sprigs fresh thyme
Olive oil
1 head cauliflower, florets and stems cut into large pieces
1 Fuji apple, peeled, cored and sliced
3 tablespoons olive oil
Salt and fresh ground black pepper
1 1/2 cups vegetable stock or broth
Canola oil
1 1/2 pounds sea bass fillet, cut into 6 equal portions
2 tablespoons butter
1 large leek
2 tablespoons olive oil
1 1/2 cups white wine
1 cup vegetable stock or broth
4 tablespoons butter
Salt and fresh ground black pepper

Steps:

  • In a small pot, over medium-low heat, add the vinegar and brown sugar, and whisk to combine. Cook and reduce until thick, about the consistency of maple syrup. Whisk in 2 tablespoons butter and season with salt and pepper, to taste. Serve drizzled over filet mignon and asparagus.
  • For Filet and Asparagus:
  • Slice the bottom 1 1/2 inches off the asparagus. Bring a large pot of water to a boil over medium heat. Add the asparagus and blanch for 1 minute. Remove from the water and shock in an ice bath. Transfer the asparagus from the ice bath to a sheet pan lined with a paper towel.
  • Take the filets out of the refrigerator 20 minutes before they are to be cooked so they can come to temperature.
  • Preheat oven to 300 degrees F.
  • Heat canola oil in a large heavy bottomed skilled over high heat. Season each filet liberally with salt and pepper. Sear the filets in the skillet until brown and crispy, about 2 minutes per side. Turn the heat to low and add the 4 tablespoons of butter, the garlic and fresh thyme. Using a spoon, baste the filets with the melted butter. Put the pan in the oven for 4 to 5 minutes for medium-rare or until the internal temperature reaches 130 to 135 degrees F on an instant-read thermometer. Let rest for 5 minutes before serving.
  • Heat a small amount of olive oil in a large skillet over medium heat. Add the asparagus, season with salt and pepper, to taste, and saute until heated through, about 2 minutes. Asparagus should be slightly tender but still have a little snap when you bite into them.
  • Preheat the oven to 400 degrees F.
  • To a large baking dish add the cauliflower, apple, and 3 tablespoons olive oil. Season with salt and pepper, to taste, and toss to coat. Roast in oven until brown on top, about 25 minutes, then add the vegetable stock and roast until tender, another 20 minutes.
  • Add the roasted cauliflower, apple and stock to a food processor and puree until smooth. Transfer to a metal bowl and put over a pot of simmering water to keep warm.
  • Turn oven down to 325 degrees F.
  • Heat some canola oil in a large heavy bottomed skilled over high heat. Season each fillet liberally with salt and pepper. Sear the fillets, skin side down, until brown and crispy, turn over and crisp the other side, about 2 to 3 minutes per side. Turn off the heat, add butter and, using a spoon, baste the fillets with the melted butter. Transfer to the oven to finish cooking, about 4 minutes.
  • Beurre Blanc Sauce:
  • Slice the green leaves off the leek and discard. Slice the stem into 1/4-inch thick rings. Put them into a large bowl filled with cold water and let soak for 5 minutes. Remove the leaks and drain on a plate lined with paper towels.
  • Heat the olive oil in a large skillet over medium heat. Add leeks and saute until soft, about 4 minutes. Deglaze the pan with white wine and add the vegetable stock. Reduce by half and then whisk in the cold butter. Serve over sea bass.
  • To Plate:
  • Using a rectangular plate lay a bed of 3 to 4 asparagus down on 1 side of the plate. Arrange a piece of filet mignon on top and drizzle with the balsamic reduction. On the other side of the plate put about a 1/4 cup of the cauliflower puree, top with a piece of sea bass and drizzle with the leek sauce. Repeat with remaining ingredients to make a total of 6 servings.

4 large russet (baking) potatoes (about 2 pounds total)

Steps:

  • Make garnish:
  • In a medium saucepan of salted boiling water blanch onions 3 minutes, or until barely tender, and drain in a colander. Peel skin away from each onion, keeping it attached at root end, and pat onion dry. In a heavy saucepan heat 2 cups oil until a deep-fat thermometer registers 375°F. and fry onions in 2 batches until crisp and brown, about 1 minute. Transfer onions as fried with a slotted spoon to paper towels and drain. Season onions with salt and pepper and cool. Onions may be made 8 hours ahead and kept, covered, at room temperature.
  • Preheat oven to 425°F. and oil 2 baking sheets.
  • Cut potatoes lengthwise into 1/2-inch-thick slices and arrange in one layer on baking sheets. Lightly brush slices with some oil and season with salt and pepper. Roast potatoes in middle and lower thirds of oven until golden brown and tender, about 35 minutes, and keep warm.
  • Pat filets mignons dry and season with salt and pepper. In a large heavy skillet heat 2 tablespoons oil over moderately high heat until hot but not smoking and brown filets on both sides, without crowding, about 5 minutes total. Transfer filets to a shallow baking pan and roast in middle of oven about 10 minutes for medium-rare.
  • On each of 6 plates fan 3 potato slices and top with a filet. Drizzle filets with some sauce and garnish with onions. Serve remaining sauce on the side.

  • Start With a Well-trimmed, Aged Filet Mignon. To deliver an incredible end product, it’s critical to start with a phenomenal cut of beef. With over a century of experience, Omaha Steaks beef is the best.
  • Thaw Steak Completely and Bring to Room Temperature. Thaw steaks completely using our steak thawing guide. Then, set them out at room temperature for at least 30 minutes to climatize before cooking.
  • Season Steak or Dry Brine. Salt steaks with a coarse sea salt just before putting into the pan. If you would like to add other seasonings, save them for the end (step 7) – they will burn during searing.
  • Preheat Your Oven-Proof Pan. Use an oven-proof skillet – nothing fancy needed to achieve a perfect pan-seared filet mignon. An all-around stainless steel with a metal handle or a cast iron are great options.
  • Sear Steak in Pan. You have the perfect seasoned Omaha Steaks filet mignon and your pan is preheated. It’s time to start the cook. Add high smoke point oil or fat to the pre-heated skillet.
  • Add Butter, Garlic, and Fresh Herbs to Pan. Now that you’ve developed a beautiful crust, let’s add some flavor. Place a dollop of butter atop each steak, a few crushed cloves of garlic and a sprig of fresh thyme or rosemary in the pan.
  • Place Steak in Preheated Oven and Cook to 10 Degrees Below Desired Doneness. Once you’ve seared your steak and added aromatics, place the oven-proof skillet on the center rack of your preheated oven.
  • Remove Steak From Oven and Return Pan to Stove. After roasting the the steak in the oven, remove your skillet and place your pan on the stove over medium-high heat to baste your steak.
  • Baste Your Filet Mignon with Butter in Pan. Basting your steak will add moisture to the surface and infuse the flavors from the aromatics and butter into your filet mignon.
  • Rest the Steak. We’re almost done cooking the best filet mignon you’ll ever have, but this last step is very important. Let your steak rest after cooking so it can reabsorb and redistribute the juices, so every bite is tender and delicious.
