5 tablespoons extra-virgin olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
1 pound fingerling potatoes, sliced in half lengthwise
3 cups Brussels sprouts, trimmed
2 shallots, peeled, root-end slightly trimmed and quartered so the wedges hold together
1 medium sweet potato, cut into 1 1/2-inch chunks

Steps:

  • Place a rimmed sheet pan in the oven and preheat to 450 degrees F.
  • Add the olive oil, garlic powder, onion powder, smoked paprika, a generous pinch each of salt and pepper to a large bowl and whisk to combine. Add all the prepped veggies and toss to completely coat in the olive oil-spice mixture.
  • Carefully remove the hot sheet pan from the oven. Transfer the vegetables to the hot pan and spread them out into an even layer. Roast, stirring the vegetables halfway, until the potatoes are fork tender and golden, 25 to 30 minutes.

RYE CRUSTED STRIPED BASS WITH LOBSTER CRABMEAT MOUSSE, SALSIFY PUREE AND ZINFANDEL SAUCE



Rye Crusted Striped Bass with Lobster Crabmeat Mousse, Salsify Puree and Zinfandel Sauce image

6 slices rye bread, crusts removed
6 (3-ounce) fillets striped bass
9 ounces Lobster Crabmeat Mousse, recipe follows
2 ounces clarified butter
9 ounces Salsify Puree, recipe follows
6 ounces Zinfandel Sauce, recipe follows
1 egg white
4 ounces heavy cream
6 ounces fresh lobster meat
9 ounces jumbo lump crabmeat, picked over
1/4 teaspoon salt
1/4 teaspoon freshly ground white pepper
1 tablespoon chopped fresh tarragon leaves
1 pound salsify, peeled and cut into pieces
1 medium potato, peeled and cut into pieces
1 quart milk
Kosher salt and freshly ground black pepper
Freshly ground nutmeg, for seasoning
1-ounce butter
White truffle oil, for drizzling
1 cup Zinfandel
1 cup port
1/4 cup chopped shallots
2 sprigs fresh thyme
1 sprig fresh rosemary
1 teaspoon cracked peppercorns
8 ounces (2 sticks) cold butter, cut into small cubes

Steps:

  • Preheat oven to 450 degrees F.
  • Use a rolling pin to roll each slice of rye bread as thin as possible.
  • Top each portion of striped bass with about 1 1/2 ounces of Lobster Crabmeat Mousse. Place in an oiled pan. Cover with rye bread. Brush with clarified butter. Bake until fish is cooked through and crust is browned and crisp, about 15 to 20 minutes.
  • Serve with Salsify Puree and Zinfandel Sauce.
  • Beat egg white to soft peaks. Beat cream to soft peaks, fold together. Fold in lobster and crab. Fold in salt, pepper and tarragon. Refrigerate until ready to serve.
  • In a large saucepan, combine salsify, potato and milk. Add salt, to taste. Bring to a simmer and cook until tender, about 30 to 45 minutes.
  • Preheat oven to 350 degrees F.
  • Drain, reserving liquid. Place vegetables on a sheet pan and place in the oven to dry, about 4 to 5 minutes. Press through a ricer. Mix in a little of the reserved milk, if needed, to form a smooth puree. Season with salt, pepper and nutmeg. Stir in butter. Drizzle in white truffle oil to taste. Keep warm until ready to serve.
  • In a saucepan, combine, wine, port, shallots, herbs and peppercorns. Bring to a boil and reduce by one-third. Strain, return to the saucepan and over low heat, whisk in butter, a few pieces at a time. Keep warm.

1/4 cup clam broth or juice
1 tablespoon sweet butter
1/4 teaspoon celery salt
1/2 teaspoon Worcestershire sauce
6 extra-select shucked oysters with juice
2 tablespoons sweet chili sauce
2 cups half-and-half
1 piece white toast
1 teaspoon sweet Hungarian paprika
1 package oyster crackers

Steps:

  • In the top part of a double boiler set over water boiling on high heat, combine clam juice, butter, celery salt, and Worcestershire sauce. Once butter melts, add the oysters and cook for 30 seconds, stirring constantly. Add chili sauce and stir well. Add half-and-half and cook for a few minutes until the cream is hot and almost simmering, but not boiling.
  • Add a slice of white toast to a warm 9-inch soup bowl and underline with a slightly larger plate. Using a slotted spoon, transfer oysters over the toast in soup bowl. Pour soup over the oysters, filling to about 1/4-inch beneath the rim. Garnish with a dash of paprika and serve with oyster crackers.

Sweetbread are a gland in cattle, and this is the way my husband and I prepare them. We like them in tiny pieces, but others make them in larger portions. This method of cooking and the taste remind me a little of chicken hearts, only better. One pound of sweetbreads makes plenty for 2 people using our method.

1 pound beef sweetbreads
½ cup all-purpose flour
1 cup oil for frying
salt and pepper to taste

Steps:

  • Tear the sweetbread apart into 1 inch sections. Discard the stringy ligaments that hold it together. Rinse with water as you go. Dip the slightly wet sweetbreads into flour.
  • Heat 1/2 inch of oil in a large heavy skillet. Fry the sweetbreads in the hot oil until golden brown, turning once. Remove from oil, and drain on paper towels. Season with salt and pepper to taste.

16 freshly shucked oysters with 1/2 cup of their liquor
2 tablespoons bottled ketchup-style chili sauce such as Heinz
2 tablespoons dry white wine
2 teaspoons Worcestershire sauce
1/4 teaspoon celery salt
1/2 stick (1/4 cup) unsalted butter
1/2 cup heavy cream
2 slices crusty bread, toasted
paprika to taste

Steps:

  • In a metal bowl or double boiler set over a saucepan of simmering water stir together oysters with their liquor, chili sauce, wine, Worcestershire sauce, celery salt, and 2 tablespoons butter and simmer, stirring occasionally, just until edges of oysters begin to curl, about 5 minutes. Add cream and bring barely to a simmer (do not let boil).
  • Put toast in 2 bowls and top with remaining butter. Ladle oyster mixture over toast and sprinkle with paprika.

Salsify root is pan-roasted in ghee to give you an elegant dish to accompany your meal. Salsify may be grungy-looking, but that dirty exterior hides a delightful flavor. The mix of black, green, white, and red peppercorns give the dish a unique dimension of flavor. Use gloves when handling salsify to avoid the sticky juice getting on your hands.

1 ½ teaspoons multicolored peppercorns
1 ½ pounds salsify roots
2 tablespoons ghee (clarified butter)
¼ teaspoon sea salt
1 teaspoon dried dill weed

Steps:

  • Roughly crush peppercorns in a mortar. Set aside.
  • Use rubber gloves at all times during the preparation of salsify. Rinse and scrub salsify under running water to eliminate the dirt. Peel with a vegetable peeler and rinse again. Cut into 3-inch pieces. Cut lengthwise in half or even in quarters, to get 3-inch-long and 1/4-inch-thick pieces.
  • Melt ghee in a large skillet over medium-high heat. Add sea salt and crushed peppercorns. Add salsify pieces and cover. Cook until browned, flipping pieces as needed, about 15 minutes. Place on a serving plate and top with dill before serving.

2 lbs sweetbreads
1 teaspoon salt
1 teaspoon vinegar
1/2 cup shallot (chopped)
1 tablespoon fresh Italian parsley (finely chopped)
1/4 cup flour
2 teaspoons garlic powder
2 tablespoons butter
2 tablespoons extra virgin olive oil

Steps:

  • Place the salt and vinegar into a saucepot, with enough water to cover the sweetbreads, and bring to a boil.
  • Add the sweetbreads, cover the pot, and simmer for 20 to 30 minutes.
  • Drain and cover with cold water.
  • Remove all membranes and tubes.
  • Slice each sweetbread in half crosswise.
  • Mix the flour and garlic powder together and dredge the sweetbreads in the flour mixture.
  • Heat butter and oil in a skillet until very hot.
  • Place the sweetbreads and shallots into the hot skillet and once you place them in, DO NOT move them around.
  • When they are a light golden color on the bottom side, (about 3 to 5 minutes), with tongs, carefully turn them over to sear the other side until that side becomes a light golden color.
  • Remove the sweetbreads and plate them as you desire. Garnish them with the Italian parsley leaves and serve as a wonderful appetizer.
