Lebanese restaurants serve these cut in wedges as appetizers. Use a thin type of Arab or pita bread with a pouch.

6 pita breads
2 tablespoons vegetable oil
1 large onion, finely chopped
1 1/2 lbs ground beef or 1 1/2 lbs ground lamb
1 chili pepper, finely chopped
salt and pepper
1/2 teaspoon allspice
1 teaspoon cinnamon
2 teaspoons sumac
1/2 teaspoon lemon juice
1 pinch cayenne
1/3 cup chopped flat leaf parsley
4 tablespoons pine nuts, toasted
2 tablespoons melted butter or 2 tablespoons extra virgin olive oil

Steps:

  • Cut each pita on one side and open carefully without breaking the bread (warming it up makes this easier).
  • To make the filling, in a large skillet fry the onion in oil until golden. Add the meat and fry for about 10 minutes, stirring, crushing, and turning it over, until it changes color. Add the chili pepper, season with salt and pepper, and stir in the spices and parsley. Spread a sixth of the filling into each bread, then press it closed. Brush with melted butter or oil and place on a sheet of foil under the broiler. Broil, turning over once, until both sides are lightly colored.
  • Cut in half and then into wedges if serving as an appetizer. Serve hot with lemon wedges. Serves 6.

1/2 large white onion, roughly chopped
2 cloves garlic, smashed
1/2 small bunch fresh parsley
1 pound ground beef
1 small tomato, diced finely
1/4 teaspoon garam masala
1/4 cup toasted pine nuts
2 tablespoons lemon juice
Kosher salt
4 pieces pita (whole wheat or regular), cut into quarters
Extra-virgin olive oil, for brushing

Steps:

  • Preheat the oven to 400 degrees F.
  • In a food processor, combine the onions, garlic, and parsley until finely minced. Remove to a large bowl and add in the beef, tomato, garam masala, pine nuts, and lemon juice. Season with salt. Mix with your hands until well combined.
  • Arrange the pita quarters on a parchment-lined baking sheet. Fill each quarter with about 2 tablespoons of the meat mixture, flattening it out so the filling is even. Brush each quarter on both sides with a little olive oil. Sprinkle salt on top.
  • Bake for 20 minutes, turning once halfway through. Pitas should be browned and crispy.

1.5 lb extra lean ground beef
1 bunch parsley (approx. 2 cups packed)
4 cloves garlic
1.5 teaspoon seven spice (middle eastern spice mix)
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
1.5 teaspoon salt
2 teaspoons onion powder
4 tablespoons olive oil (plus more for grilling)
1 tablespoon flour (see notes)

Steps:

  • Using a food processor, add the garlic, onions and parsley and process for a few seconds until finely chopped
  • Add the mixture to the ground beef in a bowl, and add all the seasoning and olive oil. Mix well using your hands, then add the flour (see notes) and continue to mix until you form a dough (if dough does not feel firm, add slightly more flour)
  • Form the Kafta into approximately 3-4 inch long pieces about 1 inch in thickness
  • Heat up your BBQ or a grill pan on the stove and add a dash of olive oil (I recommend cast iron)
  • Grill each Kafta for 2-3 minutes on each side (test a piece to ensure it is cooked to your liking) for a total of 6-8 minutes (see notes for baking)
  • Serve with a yogurt tahini sauce (see Eggplant Fatteh for sauce recipe) over rice, salad, or in a wrap

1 pound lean ground beef
1 pound ground lamb
2 eggs
1 cup milk
1/2 cup rolled oats
1/2 cup chopped parsley
1 cup onion, minced
1/2 cup green pepper, minced
Juice of 1/2 lemon
Grated zest of 1/2 orange
1 cup pine nuts
1 cup raisins
1 teaspoon ground allspice
1 teaspoon dried thyme
1 1/2 teaspoons salt
1 teaspoon black pepper
2 cloves garlic, minced
3 tablespoons Worcestershire sauce
2 tablespoons melted butter
2 tablespoons butter
1 cup finely chopped onions
1/2 cup finely chopped green pepper
1 bay leaf
1 clove garlic, minced
Juice of 1 lemon
1/2 cup raisins
1 teaspoon dried thyme
1 teaspoon ground allspice
4 cups canned tomatoes, with their juice
2 tablespoons tomato paste
3 tablespoons chopped parsley

Steps:

  • Preheat oven to 425 degrees.
  • In a bowl, thoroughly combine the ground beef and the lamb. In a separate bowl, beat the eggs. Stir in the milk and oats. Pour into the meats. Mix thoroughly.
  • Add all other ingredients except melted butter. Mix well.
  • Shape mixture into an oval loaf and place in a roasting pan. Drizzle with melted butter and bake for 1 hour. Serve with sauce.
  • In a skillet, heat the butter. Add the onions, green pepper and bay leaf and saute until onion is translucent and limp, about 5 to 10 minutes.
  • Add the remaining ingredients, except tomato paste and parsley, breaking the tomatoes into small pieces as you add them. Simmer for 30 minutes, or until sauce begins to thicken.
  • Add the tomato paste and stir well. Cook 15 minutes. Add the parsley, stir well. Serve over Middle Eastern Meat Loaf.
