Pan Fried Salmon with Passion Fruit Sauce image

This Pan Fried Salmon with Passion Fruit Sauce brings a tropical flair to celebrate summer! Salmon fillets are pan fried to perfection and then served with a vibrant, sweet and tangy passion fruit sauce.

4 skin-on salmon fillets
Salt and freshly ground black pepper (to taste)
3 tablespoons unsalted butter (cold)
1 tablespoon cornstarch
1 1/4 cups frozen passion fruit pulp (thawed)
Flesh of 2-3 fresh passion fruits (optional)
1 tablespoon honey (or to taste)

Steps:

  • Remove the salmon from the fridge and let it sit for 5 to 10 minutes before cooking.
  • Use a sharp chef's knife to make 3 or 4 shallow cuts on the skin side of each fillet, being careful not to cut into the flesh. Season the salmon on all sides with salt and pepper.
  • Heat one tablespoon of butter on a large nonstick skillet, over medium-high heat. Add the fillets, skin side down, and pan fry until the skin is crispy and releases easily from the pan, about 4 minutes. Carefully flip the fillets with a spatula, and cook the flesh side until firm and golden brown, no more than 1-2 minutes. Remove the fish to a plate and reserve.
  • Lower the heat to medium and place the skillet back on the stove. Add another tablespoon of butter and the cornstarch, whisking to make a roux.
  • Start pouring the passion fruit juice, whisking constantly to thicken the sauce, about 1-2 minutes. Once the sauce is thickened to the desired consistency, add the honey, fresh passion fruit flesh (if using) and a pinch of salt. Remove from heat and add one tablespoon of cold butter, whisking vigorously to emulsify.
  • Taste the sauce and adjust the sweetness as needed.
  • Arrange the salmon skin side-down on a platter, with the passion fruit sauce spooned over the fillets.
  • Serve immediately.

1 tablespoon canola oil
4 salmon fillets (6 ounces each)
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/2 cup reduced-fat plain yogurt
1/4 cup reduced-fat mayonnaise
1/4 cup finely chopped cucumber
1 teaspoon snipped fresh dill

Steps:

  • In a large skillet, heat oil over medium-high heat. Sprinkle salmon with Italian seasoning and salt. Place in skillet, skin side down. Reduce heat to medium. Cook until fish just begins to flake easily with a fork, about 5 minutes on each side. , Meanwhile, in a small bowl, combine yogurt, mayonnaise, cucumber and dill. Serve with salmon.

1 pound salmon steaks
1 lemon, juiced
1 tablespoon chopped fresh rosemary
salt and pepper to taste
1 lemon, sliced
⅓ cup water
¼ cup diced fresh pineapple
¼ cup minced onion
3 cloves garlic, minced
2 fresh jalapeno peppers, diced
1 tomato, diced
½ cup pineapple juice
¼ cup diced red bell pepper
¼ cup diced yellow bell pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange salmon steaks in a shallow baking dish, and coat with the lemon juice. Season with rosemary, salt, and pepper. Top with lemon slices. Pour water into the dish.
  • Bake for 30 to 40 minutes in the preheated oven, or until easily flaked with a fork.
  • In a medium bowl, mix pineapple, onion, garlic, jalapeno, tomato, pineapple juice, red bell pepper, and yellow bell pepper. Cover, and refrigerate while fish is baking. Top fish with salsa to serve.

Steps:

  • Combine peaches, pineapple with juice, sugar, cornstarch and ginger in a saucepan; bring to a boil over medium-high heat. Cook and stir for 1 minute or until the mixture thickens. Stir in lemon juice; set aside. 1/2 cup butter, melted
1 cup lemon juice
1/4 cup minced fresh basil or 4 teaspoons dried basil
1/4 cup reduced-sodium soy sauce
1/4 cup Worcestershire sauce
4 garlic cloves, minced
2 to 3 teaspoons curry powder
2 teaspoons dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper
4 salmon fillets (5 ounces each)
TARTAR SAUCE:
1/2 cup mayonnaise
1 tablespoon finely chopped green onion
1 tablespoon lemon juice
1/2 teaspoon dill weed
1/2 teaspoon ground mustard

Steps:

  • In a small bowl, combine the first 10 ingredients. Pour into a large resealable plastic bag; add salmon. Seal bag and turn to coat; refrigerate for 30 minutes, turning occasionally. Meanwhile, in a small bowl, combine tartar sauce ingredients; refrigerate until serving. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.
