CHICKEN THIGH CHILI

The basis of this came from a chicken-chili soup on this site. I altered it enough (I didn't want a soup) that I couldn't rate the original and decided to share this recipe. Top with sour cream, sliced green onion, and shredded cheese.

3 tablespoons olive oil
2 pounds boneless, skinless chicken thighs, trimmed and cut into 1/2-inch pieces
1 large sweet onion, chopped
2 tablespoons minced garlic
2 (15 ounce) cans petite diced tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
1 (8 ounce) can whole kernel corn, drained
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
1 medium orange bell pepper, diced
½ (6 ounce) can tomato paste, or more as needed
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon cayenne pepper
salt and ground black pepper to taste

Steps:

  • Heat oil in a large stockpot over medium-high heat. Add chicken and cook in the hot oil, stirring occasionally, until browned, about 10 minutes. Add onion and garlic; cook and stir until onion is translucent, 5 to 10 minutes.
  • Add diced tomatoes, all beans, corn, bell peppers, 3 ounces tomato paste, chili powder, cumin, cayenne, salt, and pepper; mix well. Cover and reduce heat to medium-low. Cook, stirring occasionally and adding more tomato paste as needed to thicken, until peppers have softened, about 30 minutes.

Place all ingredients for this chicken thigh chili in the slow cooker before you leave for work and come home to a hearty meal after a long day at the office.

1 (15.5 ounce) can dark red kidney beans, rinsed and drained
1 (15.5 ounce) can light red kidney beans, rinsed and drained
1 (15 ounce) can no-salt-added tomato sauce
½ cup chunky salsa
2 tablespoons chili powder
1 ½ pounds Chicken, broilers or fryers, thigh, meat only, raw
1 medium onion, chopped
1 cup frozen corn

Steps:

  • Combine dark and light red kidney beans, tomato sauce, salsa, and chili powder in a slow cooker. Top with chicken, then onion, then corn; do not stir. Cover and cook on Low for 6 to 8 hours or on High for 4 to 5 hours. Stir and serve.

Sophisticated enough for a Sunday supper yet quick enough for Wednesday's dinner, this master recipe is all in the technique. Cook the thighs skin side down in a cast-iron skillet to render out the fat and make the skin as crisp and, dare we say, delicious as bacon.

6 skin-on, bone-in chicken thighs (about 2 1/4 pounds)
Kosher salt and freshly ground black pepper
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 475°F. Season chicken with salt and pepper. Heat oil in a 12" cast-iron or heavy nonstick skillet over high heat until hot but not smoking. Nestle chicken in skillet, skin side down, and cook 2 minutes. Reduce heat to medium-high; continue cooking skin side down, occasionally rearranging chicken thighs and rotating pan to evenly distribute heat, until fat renders and skin is golden brown, about 12 minutes.
  • Transfer skillet to oven and cook 13 more minutes. Flip chicken; continue cooking until skin crisps and meat is cooked through, about 5 minutes longer. Transfer to a plate; let rest 5 minutes before serving.

1 tbsp olive oil
1 large onion , halved and sliced
2 tsp each chilli powder and ground cumin
x cans peeled plum tomatoes
1 chicken stock cube
200g piece chorizo , skinned and diced
8 chicken thighs , skinned
2 red peppers , seeded and cut into chunks
x cans cannellini beans , drained
1 large avocado , stoned, peeled and sliced
lime juice
handful fresh coriander
4 large spoonfuls soured cream

Steps:

  • Heat the oil in a large pan and fry the onion until softened. Stir in the spices and cook for a few secs. Pour in the tomatoes and 2 cans of water, then crumble in the stock cube. Bring to the boil and add the chorizo and chicken thighs. Push the chicken under the liquid, cover and simmer for 20 mins.
  • Stir the peppers into the pan, then cook for 20 mins more. Tip in the cannellini beans.
  • To eat now: Warm through to heat the beans. Toss the avocado with the lime and some salt and serve on top of the casserole with a sprinkling of coriander. Top each portion with soured cream. Serve with rice, jacket potatoes or a handful of spicy tortilla chips.
  • To eat later: Cool and keep in the fridge for up to 48 hours. Warm on top of the stove until bubbling and serve as above.

(Reserve the marinade.) Do not over crowd the pan. Sprinkle salt over the chicken and let cook until the skin is browned, about 8 minutes. Flip the chicken over, sprinkle salt over the skin and cook for 1-2 minutes longer.
