Categories     Pork

Time 1h15m

Yield 1 porkloin, 4 serving(s)

Number Of Ingredients 10

2 lbs pork tenderloin
1 egg
1/2 medium onion, chopped
1/2 cup Rotel Tomatoes, drained (tomatoes with green chilis)
2 large artichoke hearts, chopped
1/2 teaspoon fresh sage, finely chopped
1/8 teaspoon thyme
2 garlic cloves, minced
2 -3 tablespoons coconut oil
salt & freshly ground black pepper

Steps:

  • In a medium skillet over a medium-high heat, saute the onion, tomatoes, artichoke hearts, sage, thyme, and garlic in a 2 tablespoons of coconut oil. Saute everything for about 3 to 4 minutes, just until the onions become slightly translucent and the tomatoes and artichokes begin to become tender. Remove the skillet from the heat and set aside for later use.
  • Place the pork tenderloin in a 9×13 baking dish, rub some coconut oil all over and sprinkle with salt and pepper to taste. In order to stuff the loin, create a seam in the meat by cutting it down the center lengthwise, essentially, you want to be able to unfold the meat. Set the meat aside until the stuffing has been prepared.
  • Preheat your oven to 450°F.
  • Turn your attention back to the stuffing. Once the ingredients from the skillet have completely cooled, whisk in an egg. The egg is essential to the stuffing, as this is what replaces the usual "breadcrumbs" and works to hold everything together. However, to make this work best, tomato/artichoke mixture must be cool, otherwise it will cook the egg before it is even stuffed in the meat and the egg will no longer act as a glue, since it cannot be cooked twice.
  • Take the stuffing and begin spreading it across the seam of the meat. Avoid filling the meat too much, as you will not be able to fold the pork closed. Use some toothpicks to ensure the tenderloin does not pop open while cooking.
  • Cook, uncovered, at 450 F for 30 minutes. Once the first 30 minutes have passed, reduce the heat to 300 F and cook for another 20 minutes. When the time is up, turn off the oven, but allow the meat to remain in it for at least 15 minutes. This cooking method is perfect for keeping the meat from overcooking and becoming dry. Bon apetit!

STUFFED PORK LOIN

Time 4h

Yield 8 serving(s)

Number Of Ingredients 7

1 pork loin, about 8 to 10 inches long and 4 inches in diameter (not a tenderloin)
1 (8 ounce) package cream cheese, softened
1 -1 1/2 lb of small cooked baby shrimp
1 -2 jalapeno pepper, diced into small pieces (deseeded)
4 green onions, chopped
3/4 cup of a your favorite barbecue rub
Worcestershire sauce

Steps:

  • For the Stuffing:.
  • In a medium sized bowl take the cream cheese, the shrimp, the jalapeno peppers, the green onions, and approximately ¼ cup of BBQ Rub and mix together. Set aside.
  • Take a sharp knife and hollow out a hole thru the center of the pork loin approx 1-½ inches to 2 inches in diameter. Save the portion of the loin that you cut out. Take the stuffing mix and fill the hollow hole you created in the pork loin. Take a part of the loin (approximately 1 inches thick) that you cut out of the center of the loin and replace it on the two ends of the stuffed loin. Use tooth pics to hold the pieces of loin in place. Now simply use the Simple 1-2-3 method of applying Worcestershire sauce and then the remaining ½ cup of a BBQ Rub over the entire pork loin and place on your smoker or oven. Cook at approximately 200 to 225 degrees for 2 ½ to 3 hours till you get an internal temperature of 160 degrees. After about an hour on the smoker I usually form a boat with some aluminum foil and place the loin inside the boat. You can use an aluminum pan if you wish. The reason for the foil or the aluminum pan is as the center of the loin heats up the stuffing will begin to ooze out of the ends of the loin and this makes clean up a lot easier.
  • Let the loin rest for about ½ hour then slice. It is a bit gooey but it is sooooo good.
  • By the way you can make just the stuffing mix and use it as a dip. It is great by itself.

  • Stab the potato with a fork 4-5 times. Place on a microwave-safe plate and nuke for 7-8 minutes, flipping it once halfway through. Let cool. Peel and mash.
  • In a food processor, add the olives, peppers, basil, capers, anchovies, garlic, red pepper flakes (if using) and ½ teaspoon black pepper. Pulse 4-5 times until it's a chunky paste.
  • In a medium mixing bowl, combine ⅔ cup of the mashed potato, 1 cup of the olive mixture, the red wine vinegar and ½ teaspoon salt. Stir until blended. Taste and add more salt if necessary. It might already taste really salty and that's okay! It'll get dispersed evenly through the pork loin. Set the mixture aside. (No food processor? You can also chop everything somewhat finely by hand and stir together.)

  • Prepare the pork loin roast by butterflying or cutting it in a roll fashion. Here’s how to cut it in a roll so the meat looks beautiful and spiraled when you cut into it. You may want to pound the meat so it’s uniformly flat. Set it aside and prepare the filling.
  • With the meat lying open, sprinkle about half the salt and pepper on the inside. Now, place the filling on the meat in one layer. You’ll want to stay away from the edges so the filling won’t fall out when you roll it.
