Virginia is known for its fresh Chesapeake Bay oysters, and this crispy Deep Fried Oysters recipe is the best way to prepare them!

Number Of Ingredients 13

1 pint fresh shucked oysters (about 18 oysters total)
Peanut oil, for frying
1 cup buttermilk
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon kosher salt
1 teaspoon Old Bay seasoning
½ teaspoon black pepper
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon minced fresh dill or parsley, optional
1 ½ tablespoons freshly-squeezed lemon juice
Salt and pepper, to taste

Steps:

  • For the Tartar Sauce: Combine all of the ingredients in a small bowl. Cover and refrigerate until ready to use.
  • Heat oil in a deep fryer to 350°F, in a deep cast iron skillet, or in a Dutch oven over medium heat to a depth of about 2-3 inches, until it reaches 350°F. If you don't have a deep-fry thermometer, sprinkle a few drops of water on the hot oil. If it sizzles, the oil is hot enough.
  • Drain the oysters in a colander and pat dry with paper towels. Use a toothpick to poke a small hole in the large round part of each oyster.
  • Put the buttermilk in a shallow dish. In a separate shallow dish, combine the cornmeal, flour, salt, Old Bay seasoning and pepper.
  • Add the oysters to the buttermilk and soak for a few minutes. Remove the oysters from the buttermilk, gently shake off excess liquid, and dredge in cornmeal mixture to coat on all sides. Shake off excess breading and transfer to a wire rack.
  • Working in batches so that you don't overcrowd the pan, fry oysters until golden and crispy, about 2-3 minutes. Drain on paper towels, season with additional salt and pepper (if necessary) while they're still warm, and serve hot with tartar sauce or other dipping sauce.

2 dozen freshly shucked oyster (if possible)
2 cups flour
1 teaspoon cayenne pepper
Salt and pepper
2 eggs
2 tablespoons milk
2 cups fresh bread crumbs
1/2 cup vegetable oil
1 cup homemade or prepared mayonnaise
1 teaspoon Dijon mustard
1 1/2 tablespoons capers
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh tarragon
2 teaspoons paprika
1 teaspoon cayenne pepper
Juice of 1/2 lemon
1 clove garlic
2 anchovy fillets
1 dash Worcestershire sauce
3 oven roasted tomatoes
Salt and pepper

Steps:

  • Season flour with cayenne and salt and pepper. Combine the eggs and milk.Toss shucked, drained oysters in the seasoned flour, then dip in egg/milk mixture followed by the bread crumbs. In saute pan over medium high heat gently fry on both sides until crisp. Do not crowd pan, fry approximately 6 oysters at a time. Drain on clean paper towels. Mix all ingredients for remoulade sauce in food processor and serve oysters on cleaned half shell with remoulade sauce on bottom and garnished with fresh herbs.

3 dozen small fresh oysters, shucked
2 eggs
1/3 cup all-purpose flour
1 cup finely ground saltine crackers
6 tablespoons butter
3 tablespoons vegetable oil

Steps:

  • Drain oysters; blot oysters dry on paper towels.
  • In a small bowl, beat the eggs slightly.
  • Place flour and cracker crumbs on separate sheets of waxed paper.
  • Lightly coat oysters in flour; shake off the excess; dip into egg, then in crumbs, pressing crumbs to adhere.
  • Place on a sheet of waxed paper.
  • Heat 2 tablespoons butter and 1 tablespoon oil in a large skillet over med-high heat until butter is melted.
  • Add 1/3 of the oysters; saute 2 minutes or until golden brown.
  • Turn oysters and saute another 2 minutes.
  • Remove to a baking sheet lined with paper towels; keep warm in low oven.
  • Wipe skillet clean; fry remaining oysters in 2 batches; serve warm.

Getting fried oysters from your summer seafood shack is fun, but making them yourself yields something crispy, light and, most significantly, tender. Shuck carefully, bread delicately and fry to golden perfection, then serve with this bright, lively tartar sauce, which gets its spark from cornichons, capers and lemon juice. Eat while hot - whether you're wearing flip flops or polished oxfords, that's up to you.

1/2 cup all-purpose flour
Kosher salt and finely ground black pepper
24 shucked plump meaty oysters
2 large eggs, well beaten
1 cup panko bread crumbs
Vegetable shortening, preferably Crisco (about 1 1/2 pounds)
1 garlic clove
Kosher salt
2 small shallots
8 cornichons plus 2 tablespoons vinegar from the cornichon jar
2 tablespoons plus 2 teaspoons capers and their brine
1 shy cup mayonnaise, preferably Hellmann's or Real Foods
1/3 cup sour cream
Juice of 1/2 lemon (about 1 1/2 tablespoons)
1 1/2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Prepare the oysters: Season flour with salt and pepper. Dredge each oyster in the flour, then dip in the beaten egg, then coat evenly in the panko.
  • Set breaded oysters on a baking cooling rack, leaving a little room between the oysters so they can dry and set. Refrigerate until ready to fry and serve.
  • Make the sauce: Finely mince garlic with a pinch of salt until sticky and pasty. Mince shallots, cornichons and capers as finely as possible. Add all to a small bowl. Stir in mayonnaise, sour cream, lemon juice, caper brine and cornichon vinegar, and stir well. Add chopped parsley, stir well and season to taste with salt. Refrigerate until ready to serve.
  • Fry the oysters: Melt enough shortening in a deep medium skillet (we love cast iron) over medium for 1 1/2 inches of liquified fat once hot. Increase heat to medium-high. It's ready to fry in when a few crumbs of panko or the tip of a wooden chopstick sizzles actively in the fat.
  • Add the oysters cold from the refrigerator, working in batches of 6 to 8 or as you have room. Fry, making sure to turn them to get both sides, until golden brown, 1 to 2 minutes, depending on size. Remove with a slotted spoon or spider, and let rest on a clean rack while you fry the rest. Season each batch with a little salt while still piping hot, as soon as you pull them from the fat. Serve with tartar sauce.

6 oysters in the shell
1/2 cup coconut flour
1 egg
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4-1/2 cup oil for frying
Dipping Sauce (can easily be doubled for more oysters):
1/4 cup mayonnaise
1 tablespoon lemon juice
2 teaspoons finely chopped red onion
1 tablespoon finely chopped dill
Dash of hot sauce (optional)

Steps:

  • To remove the oysters from the shell: Scrub oysters thoroughly under cold running water. Take an oyster knife in one hand and thick towel or glove in the other. With the towel, grip the shell in palm of your hand. insert the tip of the oyster knife between shell halves at the narrow end of the oyster where the shell is "hinged" together. Gently twist the knife and apply pressure to pry the shell open. Run the knife along the length of the shell to open it entirely. Cut the oyster out of the shell. In a bowl, lightly beat the egg and add salt and pepper. Carefully dip each oyster in the eggs then lightly dredge through coconut flour. Heat oil until it begins to pop, then fry each oyster minutes on each side until the outside is crisp and lightly browned. Serve immediately. Dipping Sauce: Mix all ingredients together. Serve chilled.
