Learn how to make the BEST rich, spiced, satisfying pain patate (Haitian Sweet Potato Pie) recipe that's baked to perfection in a homemade crust. This recette de pain will keep you coming back for more after each bite!

1 Pie Crust (see post, or store bought)
3 Large Medium size white sweet potatoes
2 tsp. Fresh Ginger (grated is optional)
1 Ripe banana
4 tbsp. Butter (unsalted)
1/2 cup Carnation Milk (or evaporated milk)
1 cup Coconut Milk
1 1/2 cup Brown sugar
1 tbsp. Vanilla Extract
2 tsp. Nutmeg
1 tsp. Cinnamon
1/2 tsp. Salt (Kosher)

Steps:

  • Preheat the oven to 375 degrees.
  • Make pie dough. I highly suggest preparing your pie crust ahead of time. You can find the exact pie crust recipe I used here. After you make the dough, put it back in the refrigerator so it can remain cool until you are ready to use it.
  • Blending the potatoes and ginger: Peel the potatoes and cut into quarters or wedges so that it fits perfectly through the feeding tube. Cut the ginger into small chunks, but no need to peel the skin off. In the food processor, process both the potatoes and ginger together until they appear to be finely chopped.
  • Add the remaining ingredients: Add the banana and butter until it starts to mash. Then add the carnation milk and coconut milk, sugar, and spices. Blend until smooth for about 2-3 minutes. It may appear lumpy - that's okay.
  • Roll out pie dough. Roll out the pie dough then place the dough on top of the pie dish. Carefully insert dough into your pie dish, trim the excess dough, then design the edges as desired. Brush the edges of the crust with egg wash.
  • Pour the filling. Pour the mixture to the dough and bake for 55 minutes or until a toothpick comes out clean from the center on 375%.
  • Let it cool and serve. Let the pie cool for at least one hour before serving. Top with ice cream or homemade whipped cream.

Though the name literally means "sweet potato bread," this Haitian treat is more like a baked pudding. The secret is to use white sweet potatoes (also called boniatas) and not orange ones or yams. Otherwise, the dish will look rather unappetizing, though it will still taste good.

2 lbs white sweet potatoes
1 large banana, peeled and cut in one-inch pieces
1 cup brown sugar
1/2 cup seedless raisin
1 teaspoon grated gingerroot
1/4 teaspoon salt
12 ounces evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon grated nutmeg
1 teaspoon ground cinnamon
rind of one lemon, grated
1 1/2 cups coconut milk
3 tablespoons butter, melted

Steps:

  • Preheat oven to 375 degrees.
  • Grate sweet potatoes into mixing bowl and mash the banana into the sweet potatoes.
  • Mix in all ingredients, one at a time, until each ingredient is fully blended into the mix.
  • Spread evenly into a 9x13 inch baking pan.
  • Bake for 90 minutes or until toothpick inserted into center comes out clean.
  • Let cool 10 minutes. Serve hot. For an added treat, top with whipped cream or rum syrup.

1 large banana, peeled and cut in 1 inch pieces
1 cup brown sugar
1/2 cup seedless raisins
1 tspn grated ginger
1/4 tspn salt
12 oz evaporated milk
1 tspn vanilla extract
1/2 tspn grated nutmeg
1 tspn ground cinnamon
Rind of 1 lemon, grated
1 1/2 cups coconut milk
3 tspsn butter

Steps:

  • 1. Preheat the oven to 375 degrees. 2. Grate sweet potatoes into mixing bowl and mash the banana into sweet potatoes. 3. Add all ingredients (except 1 tbsp brown sugar) mixing each ingredient at a time until each ingredient is fully blended into the mix. 4. Spread evenly into 9x13 inch baking pan and sprinkle remaining 1tbspn brown sugar over the top of the pudding. 5. Bake for 1 1/2 hour or until toothpick inserted into center comes out clean.
