PACIFIC ISLAND - BAKED PAPAYA DESSERT
This recipe was taken from a Pacific Island web site for the ZWT-7 tour of the South Pacific. It sounds like a tasty quick and easy to make dish.

Steps:
- Preheat oven to 375°F
- Place the papayas, cut side up, in a shallow baking dish.
- Sprinkle with the sugar and add the water.
- Bake uncovered in the middle of the oven for 1½ hours, or until the papayas are tender but still keep their shape.
- Every half hour, pull out the oven rack and baste the papayas with the liquid from the dish.
- For the last 5 minutes of baking raise the heat to 400°F and bake until the syrup gets thick and becomes the color of caramel.
- Turn off the heat and pour the coconut milk into the center of the papayas.
- Leave the papayas in the oven until the milk gets warm, about 5 minutes.
- Serve immediately, or refrigerate and serve cold, they are good either way.
ROASTED PAPAYA WITH BROWN SUGAR

- Preheat oven to 450 degrees. Stir together sugar and ginger in a small bowl. Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.
- Bake, brushing papaya edges with melted sugar mixture (it will collect in well of fruit) 2 or 3 times, until mixture is bubbling and papaya edges are beginning to darken, 35 to 40 minutes.
- Sprinkle each serving with a pinch of cayenne. Serve with lime wedges.

BAHAMIAN PAPAYA RUM CAKE
We vacationed in the Bahamas last spring and were impressed with their local rum cakes. Taste the flavor of the islands in this dessert.

- In a bowl, combine the diced papaya, raisins and lemon juice. Add 1/2 cup rum and allow to soak for half an hour.
- Spray a large 12 cup bundt pan with cooking spray and add 4 tbs melted butter and 3/4 cup brown sugar to the bottom of the pan. With a tablespoon strain 5 heaping tbs of the fruit mixture and add to the sugar mixture in the bottom of the pan.
- In an electric mixer blend flour, sugar, salt, baking powder and diced butter on low speed. When blended continue mixing and add the 4 eggs one at a time. Follow with the sour cream, vanilla and oil. Add the remaining fruit mixture (including the liquid), the lemon zest and coconut and blend well.
- Pour the batter into the bundt pan and bake in a preheated oven at 325 degrees for 1 hour. Check for doneness with a wooden pick. Remove from oven and let cool for 10 minutes.
- For the glaze: In a small pan on the stove, mix butter, granulated sugar and rum and bring just to a boil. Spoon the glaze onto the cake until it is completely absorbed. Cover with plastic wrap and let sit overnight.
- Before turning out the cake onto a serving platter, warm it in a 325 degree oven for 10 minutes to loosen the sugar mixture at the bottom of the pan. The cake will be very delicate.

- 1. Heat oven to 350F. Place papaya slices on a non-stick baking sheet.
- 2. Sprinkle with juice and cinnamon and bake for 15 minutes.
- 3. Top each slice with 1/4 cup ice cream and serve.
