BAKED TOMATOES

Number Of Ingredients 9

4 ripe vine-ripened tomatoes
2 tablespoons olive oil, plus more for tossing and drizzling
Kosher salt and freshly ground black pepper
3/4 cup panko breadcrumbs
1/4 cup grated Parmesan
1 tablespoon finely chopped fresh parsley
1 clove garlic, finely chopped
1 shallot, finely chopped
Pinch red pepper flakes

Steps:

  • Preheat the oven to 450 degrees F.
  • Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.
  • Combine the 2 tablespoons olive oil, panko, Parmesan, parsley, garlic, shallots, red pepper flakes and some salt and pepper together in a small bowl. Fill the tomatoes with the panko mixture. Bake 20 minutes. Drizzle with a splash of olive oil before serving.

12 plum tomatoes, halved lengthwise, cores and seeds removed
4 tablespoons good olive oil
1 1/2 tablespoons balsamic vinegar
2 large garlic cloves, minced
2 teaspoons sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt, and pepper over the tomatoes. Roast for 25 to 30 minutes, until the tomatoes are concentrated and beginning to caramelize. Serve warm or at room temperature.

4 small vine-ripe tomatoes
Extra-virgin olive oil, for drizzling
Salt and freshly ground black pepper
A few stems thyme, leaves finely chopped

Steps:

  • Preheat the oven to 300 degrees F.
  • Put a cooling rack over a baking sheet. Slice the tomatoes, horizontally, into thirds and arrange the slices on the rack. Put the top and bottom of the tomatoes, cut side up, on the rack. Dress the tomatoes with a little extra-virgin olive oil, season with salt and pepper, to taste, and a little fresh thyme. Roast the tomatoes for 1 hour. Remove the tomatoes from the oven and arrange them on a serving platter.

PLAN/PURCHASE
2 large garden fresh tomatoes
olive oil, extra virgin.
basil, dried variety
salt, kosher variety
black pepper, freshly ground
fresh rosemary, just the leaves

Steps:

  • 1. PREP/PREPARE
  • 2. Gather Your Ingredients.
  • 3. Place a rack in the middle position, and preheat the oven to 350f (175c).
  • 4. Thickly slice the two tomatoes.
  • 5. Lay the tomatoes in a parchment-lined baking sheet fitted with a wire rack.
  • 6. Drizzle a bit of olive oil over each tomato slice.
  • 7. Sprinkle on some salt, pepper, and basil.
  • 8. Add a few rosemary leaves.
  • 9. Place in the preheated oven for 25 to 30 minutes.
  • 10. PLATE/PRESENT
  • 11. Serve them for breakfast with a couple of sunny-side up eggs. Use them in place of ketchup on a sandwich for a purer taste. Stick them on a plate, and just eat them the way they are. Enjoy.
  • 12. Keep the faith, and keep cooking.

1 large tomato, cut into 1/2-inch-thick slices
1 sprig fresh rosemary, leaves stripped and finely chopped
1 clove garlic, minced
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Brush baking sheet with about 1 tablespoon olive oil.
  • Arrange tomato slices on the baking sheet. Sprinkle rosemary and garlic over tomatoes and brush with remaining olive oil; season with salt and pepper.
  • Bake in the preheated oven until tomatoes are tender, 5 to 10 minutes.

This is wonderful to make with your garden-ripe summer tomatoes! To save time prepare the mayonnaise mixture up to a day in advance. Since we love lots of spice, I use Tabasco brand spicy brown mustard but any brand brown mustard will do for this recipe, I also add in a pinch of cayenne pepper too! Recipe can easily be doubled.

3 large firm ripe tomatoes (sliced about 1/2-inch thick or a bit smaller)
4 tablespoons mayonnaise
5 tablespoons parmesan cheese (can use a bit less)
1 tablespoon Dijon mustard
1 tablespoon brown mustard
1 teaspoon dried oregano (or to taste)
salt and pepper
1/2 cup grated mozzarella cheese (or to taste)
chopped fresh parsley

Steps:

  • Set oven to 350°F.
  • Lighly grease a large baking sheet.
  • In a small bowl combine the mayonnaise, Parmesan cheese, Dijon mustard, brown mustard and oregano; mix well to combine then season with salt and pepper to taste (I use seasoned salt for this).
  • Using a spoon top each tomato slice with a small amount of mayo mixture.
  • Sprinkle each slice with mozzarella cheese, then sprinkle with chopped parsley.
  • Bake for about 10-15 minutes or until golden brown.

2 tablespoons extra-virgin olive oil
3 garlic cloves, chopped
1 medium onion, chopped
1 3/4 pounds fresh vine-ripened or heirloom tomatoes, cut into 1/2-inch pieces
3 tablespoons chopped fresh chives
1 cup (packed) freshly grated Parmesan cheese
1 cup (packed) freshly grated Romano cheese
Two more ways to go: Add chopped fresh basil leaves and/or small cubes of mozzarella cheese. Or use yellow and green tomatoes with the red ones to add summer color.

Steps:

  • Preheat oven to 350°F. Oil 11x7-inch baking dish. Heat 2 tablespoons oil in heavy large skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds. Add onion and sauté until soft, about 6 minutes. Add tomatoes, reduce heat to medium-low, and cook until beginning to soften, about 5 minutes.
  • Mix in chives; season with salt and pepper. Transfer tomato mixture to prepared baking dish; sprinkle grated cheeses over. Bake until cheese melts and begins to turn golden, about 20 minutes.
