OVEN-BAKED BALSAMIC CHERRY TOMATOES WITH ROSEMARY
We made this recipe for my mum's bday buffet and it was so beautiful and so tasty that I just had to share it here. It makes for a wonderful side dish or appetiser that looks beautiful and tastes great! The original recipe comes from the German Women's magazine "Brigitte". I hope youll enjoy it!

Steps:
- Chop the needles from 2 of the 3 rosemary sprigs. Leave the thrid one intact.
- Combine all the ingredients in a suitable oven-proof dish (I'm sorry, I forgot to measure mine).
- Gently mix so that everything is evenly distributed.
- Bake at 200 °C/ 400°F in the preheated oven for 20-30 minutes.

Steps:
- Pour oil into 13x9x2-inch broilerproof ceramic baking dish.
- Add tomatoes, turn to coat with oil.
- Sprinkle with salt and pepper.
- Top with parsley and cheese.
- Preheat oven to 400.
- Bake tomatoes just until plump and shiny but not split, about 10 minutes.
- Preheat broiler.
- Broil until tomatoes begin to split and cheese begins to color, about 2 minutes.
- Serve hot or warm.

Steps:
- Preheat the oven to 450 degrees
- Cut the tomatoes in half lengthwise.
- Place the tomatoes flat side down in a baking dish. Sprinkle with salt and pepper and brush them with the oil. With the tip of a pointed knife, make 2 small slits in each tomato half and place a sliver of garlic in each. Sprinkle the tomatoes with rosemary and bake 5 to 6 minutes. Remove the garlic, if desired, and serve sprinkled with parsley.
