This heirloom recipe for Christmas cake is just lovely any time of year. From the Michigan Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

2 tablespoons butter
1 cup sugar
1 egg, well beaten
1 cup molasses (either light or medium)
1 1/2 teaspoons anise seed, crushed
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1 1/2 cups sour milk

Steps:

  • Preheat oven to 300F and lightly grease a tube pan.
  • Sift dry ingredients together very well.
  • Cream butter and sugar together.
  • Add egg, molasses and anise seed; beat thoroughly.
  • Add dry ingredients to the creamed mixture alternatively with the sour milk.
  • Pour into prepared pan and bake for 45 minutes or until cake tests done.

1 cup brown sugar
1 cup white corn syrup
1 cup coffee, cold
1/4 teaspoon anise extract or 1/4 teaspoon anise oil
1 teaspoon baking soda
3 1/2 cups flour

Steps:

  • Preheat oven to 325°F.
  • Sift together flour and baking soda.
  • Mix together brown sugar, cornsyrup, coffee, and anise.
  • Mix wet ingredients with dry ingredients.
  • Pour into 9x9 inch baking pan and bake for 45 min at 325°F.
  • To serve: May be sliced thinly. May spread with butter if desired.

Use a good baking apple for this old favorite such as Granny Smith, Jonathan, Cortland, Empire or Winesap. Cooling time not included in preparation time. From the Michigan Dutch chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter (no substitutions)
1 egg
3/4 cup milk
2 cups apples, peeled and thinly sliced
1/3 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350F and butter a 8-inch cake pan.
  • Sift flour with baking powder and salt.
  • Cut in butter.
  • Beat egg, add milk and stir quickly into flour mixture.
  • Place apples decoratively in the prepared cake pan, sprinkle with sugar and cinnamon; spread dough over the top.
  • Bake for 45 minutes.
  • Loosen cake from sides and bottom and turn out onto a cake plate immediately.
  • Serve with the dessert sauce of your choice; cinnamon, maple, butterscotch, brandy or lemon.

This is Boterkoek (Dutch Buttercake) just like my Oma (grandma) used to make. She passed away over a year ago now and I really started to crave it. I hope you like it as much as I did growing up! :)

2/3 cup margarine or 2/3 cup half-and-half
1 cup sugar
1 1/2 teaspoons almond extract
1 egg, beaten (reserve 1 tsp)
1 1/2 cups flour
1/2 teaspoon baking powder
sliced almonds, for garnish (optional)

Steps:

  • In medium bowl, mix together butter, sugar and almond extract.
  • Add beaten egg except for 1 teaspoon.
  • Sift flour and baking powder, and add to bowl, mixing with wet ingredients.
  • Put dough in greased 9 inch pie plate.
  • Mix the reserved 1 tsp of beaten egg with 1 tsp of water, and brush over dough.
  • Sprinkle with sliced almonds, if desired. (My Oma always used the almonds, it looks pretty and adds a nice touch!).
  • Bake at 350°F for 25-30 minutes or until done (firm to the touch).
  • This is a dense cake, but should be soft on the inside and hard on the outside, but not too hard!
