You can add a special twist by making a meatloaf with breadcrumbs, using a combination of meats like pork and beef, adding a dash of French's® Worcestershire Sauce or mixing in a chopped vegetable like green bell peppers or jalapeño. Throw the ingredients into a bowl, combine together and then transfer to a well-greased loaf pan or shape it into a loaf on a shallow baking pan. 1/2 cup plain bread crumbs
1 egg
1 tsp McCormick® Onion Powder
1/2 tsp McCormick® Garlic Powder
1/2 tsp McCormick® Black Pepper, Ground
1/2 tsp salt
1 cup French's® Tomato Ketchup

Steps:

  • Preheat oven to 350°F. Mix ground beef, bread crumbs, egg and seasonings in large bowl.
  • Shape into a loaf on shallow baking pan. Pour ketchup over top.
  • Bake meatloaf 55 to 60 minutes or until cooked through. Let stand 5 minutes before serving.

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

1 ½ pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

This is the original version my mom handed down to me and has been one of my family staples since the 70s. I occasionally add other ingredients such as bell pepper or fresh onions, or top with bacon or cheese slice triangles. Sometimes I substitute saltine cracker crumbs to give it a different texture. My favorite part is meatloaf sandwiches from the leftovers.

1 1/2 cups breadcrumbs
3/4 cup catsup
1 teaspoon maggi seasoning or 1 teaspoon msg
1/2 cup warm water
1 (1 ounce) package onion soup mix
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients except tomato sauce.
  • Shape into loaf and place in ungreased pan.
  • Pour tomato sauce over loaf.
  • Bake for one hour.

2 tablespoons butter
2 cups sweet onions, finely chopped
1 tablespoon garlic
1 celery rib, finely chopped
1 1/2 teaspoons salt
1 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 cup ketchup, divided
1 tablespoon brown sugar
1 1/2 lbs ground round (or chuck)
1/2 lb ground pork sausage (such as Jimmy Dean)
1 cup bread, crumbs fine
2 eggs, lightly beaten

Steps:

  • Preheat Oven to 350 degrees F; position oven rack to middle of the oven.
  • Melt butter in heavy skillet and saute onions, garlic and celery for approximately 4-5 minutes; until onions are translucent.
  • Add salt, pepper, worcestershire sauce and 1/2 cup ketchup; cook for 1 minute, until combined.
  • Transfer to a large bowl and add meats, bread crumbs and eggs; blend with your hands; do not overmix.
  • In in 9 x 13 pan (sprayed with cooking oil) form the mixture into a 10 x 5 inch oval loaf.
  • Mix brown sugar with remaining ketchup and spread on top.
  • Bake until interntal temperature registers 155 degrees F; approximately 1 to 1 1/4 hours.
  • Remove from oven, cover with foil and allow to stand for 5 minutes before cutting and serving.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

MILDRED'S ORIGINAL MEATLOAF

Do you really need another meatloaf recipe? Better make room for this one because you won't want to miss out on this vegetable-studded gem. From "Mrs. Rowe's Restaurant Cookbook: A Lifetime of Recipes from the Shenandoah Valley". I diced a whole small onion, omitted the green pepper, and baked in a 9" x 13" pan for 45 minutes. Makes a great cold meatloaf sandwich. Add 1/2 cup diced cooked carrots for color if you like. TIP: Try placing slices of stale bread in the bottom of the pan, under the meat mixture, to absorb grease. Discard bread after baking.
