Provided by Kristen Stevens

Categories     Side Dish

Time 10m

Number Of Ingredients 5

1 tablespoon + 1 teaspoon cooking oil
1 ½ lb bok choy (cut in half lengthwise (baby bok choy works great))
1 tablespoon ginger (finely minced)
2 cloves garlic (finely minced)
1 tablespoon soy sauce (or coco aminos)

Steps:

  • Heat 1 tablespoon of the cooking oil in a large pan over medium-high heat. Add the bok choy cut side down. Let it cook undisturbed for 4 minutes, or until it is golden.
  • Turn the bok choy pieces over and pile them on one side of the pan. Add the remaining teaspoon of oil, ginger, and garlic to the pan and let them cook for 1 minute.
  • Gently mix the bok choy with the ginger and garlic then make sure that they're cut side up. Drizzle the soy sauce over top and let them cook for 2 minutes more. NOTE: if you like your bok choy well-cooked, add a tablespoon of water to the pan and cover it with a lid to steam the bok choy for an additional 2 minutes.

GINGER VEGGIE STIR-FRY

Ginger Veggie Stir-Fry image

I just whipped this up one day when I felt like a stir-fry but did not have all the ingredients called for in some of the stir-fry recipes on this site. I used certain veggies I had on hand, but any seasonal veggies may be used. It has a mild ginger flavor that can be enhanced according to taste, and is filling yet light on the tummy! Tofu may be added. Serve over a bed of steamed jasmine rice.

GREEN BEANS WITH GINGER AND GARLIC

Green Beans With Ginger and Garlic image

Here is a recipe for fresh green beans, boiled just until barely tender and bright green, then tossed in a pan with minced garlic and ginger. The beans can be cooked a day ahead, leaving nothing more to do before the meal than to assemble everything over high heat.

Provided by Julia Moskin

Categories     easy, quick, side dish

Time 20m

Yield 10 servings

Number Of Ingredients 5

Salt
2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

ORIENTAL SAUTé WITH GINGER AND GARLIC

Oriental Sauté With Ginger and Garlic image

I love oriental food and the combination of flavors that form the sauce in this recipe is delicious. This version works well with my Nutritarian eating style. This is a very flexible recipe. You can use other greens like kale, collards or spinach. You can use other proteins in place of the chickpeas like 1/2 c sliced almonds, or 1 pound diced tofu. You can also vary the other vegetables to use up what you have on hand. Allow 3 cups raw greens and vegetables per person. To reduce prep time, you can use jarred ginger and garlic, bagged cole slaw mix and frozen vegetables.
