These Ginger Soy Roasted Mushrooms are a simple side dish recipe idea. Just toss mushrooms with some Asian inspired ingredients and roast them for a flavorful side dish or appetizer.

24 ounces Cremini Mushrooms, (cleaned & trimmed)
2 Tablespoons Soy Sauce, (use Tamari for gf)
2 Tablespoons Oil
2 Garlic Cloves, (grated)
1 teaspoon Fresh Grated Ginger
1/2 teaspoon Toasted Sesame Oil, (optional)

Steps:

  • Preheat oven to 400ºF
  • Clean and prep mushrooms then transfer to a roasting dish.
  • Combine soy sauce, oil, garlic and ginger. Pour mixture over mushrooms and toss to coat.
  • Roast in oven for 10 minutes. Stir and flip mushrooms and roast for 10-15 minutes depending on size and desired tenderness.
  • Remove from oven and toss with sesame oil, salt and pepper. Sprinkle fresh parsley and sesame seeds over the top and serve.

2 tablespoons soy sauce
2 cloves fresh garlic, pressed or finely minced

4 cups sliced mushrooms

Steps:

  • Combine orange juice, zest, soy sauce, garlic and ginger in a large nonstick skillet.
  • Bring to a boil over medium-high heat.
  • Add mushrooms.
  • Cook, stirring frequently, until most of the liquid is gone.

2 tablespoons peanut oil
1 1/2 lbs white button mushrooms, cleaned quartered
1 tablespoon sesame seeds, toasted
1 tablespoon fresh ginger, minced
2 tablespoons rice wine vinegar
1 teaspoon sugar (to taste)
2 tablespoons soy sauce
1 teaspoon toasted sesame oil
2 scallions, sliced very thin on the bias

Steps:

  • Heat 1 tbls. of the peanut oil in a 12" skillet over medium high heat until they shimmer. Add the mushrooms and cook, stirring occasionally, until the mushrooms release their liquid, about 5 minutes.Increase the heat to high and cook, stirring occasionally, until the liquid has evaporated, about 8 minutes longer. Add the remaining peanut oil, reduce the heat to medium and continue to cook, stirring once every minute, until the mushrooms are dark brown, about 8 more minutes.
  • Add the sesame seeds and ginger and cook, stirring constantly, until the ginger is fragrant, about 30 seconds. Add the rice vinegar, sugar and soy sauce and cook, stirring constantly, until the liquid has evaporated, about 30 seconds. Remove from the heat and stir in the sesame oil. Move to a serving dish, sprinkle with the scallions, and serve. Enjoy!

1 green onion, sliced
1 tablespoon sesame oil
2 teaspoons toasted sesame seeds

Steps:

  • Heat oil in a large skillet or stir-fry pan. Add ginger, and garlic; cook, stirring.
  • constantly, just until fragrant.
  • Toss in sliced mushrooms and cook several minutes or until mushrooms soften and start to brown.
  • Drizzle in the soy sauce and seasme oil, stirring until most of liquid evaporates off.
