MOIST ORANGE BUNDT CAKE



Moist Orange Bundt Cake image

Orange bundt cake made with fresh orange juice and zest, this is an incredibly moist and tender cake bursting with flavor.

4 eggs large
200 g granulated sugar (1 cup/ 7 oz)
1 teaspoon pure vanilla extract
200 ml neutral-tasting oil (like canola 3/4 cup + 2 tablespoons/ 6.7 fl.oz)
200 ml freshly squeezed orange juice (3/4 cup + 2 tablespoons/ 6.7 fl.oz, Note 2)
2 teaspoons orange zest
300 g cake flour (2 ½ cups/ 10.5 oz, Note 3)
3 teaspoons baking powder
⅛ teaspoon fine sea salt
icing sugar for dusting

Steps:

  • Preheat the oven to 180°C/ 360°F.
  • Butter and flour the bundt pan (Note 4).
  • Separate the eggs.
  • Beat the egg whites with an electric mixer until stiff.
  • Beat the egg yolks, sugar, and vanilla extract until pale and fluffy.
  • Slowly add the oil and continue beating until combined.
  • Add the orange juice and zest.
  • Add dry ingredients: Mix and sieve the flour, baking powder, and salt over the egg mixture. Fold in carefully.
  • Add the egg whites and carefully fold in as well.
  • Bake: Pour the mixture into the prepared dish and bake for 50 minutes. Make the skewer test: it should come out clean.
  • Rest: Let the cake in the pan for about 15 minutes, release it from the pan by gently going around the edges with a small butter knife, and then turn it onto a plate.
  • Dust: Let the cake cool completely and dust it with icing sugar or cover it with glaze just before serving (Notes 5 and 6).

3/4 cup buttermilk
1/4 cup powdered sugar (, for dusting)

Steps:

  • Preheat oven to 350 degrees and spray a 10 cup bundt pan with baking spray.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Add the butter and sugar to your stand mixer on medium speed until lightened in color and fluffy, about 3 minutes.
  • Add in the eggs one at a time, then add the vanilla extract and orange zest.
  • In a bowl, combine orange juice and buttermilk.
  • To your stand mixer, on the lowest speed setting add in half of the orange juice mixture, then half the flour mixture.
  • Add in the the remaining of the orange juice mixture and the remaining flour until just combined.
  • Pour the batter into you bundt cake pan and bake 50-55 minutes.
  • Let cake cool at least 20 minutes before removing from bundt pan.

1/2 pound (2 sticks) unsalted butter, at room temperature
2 1/2 cups granulated sugar, divided
4 extra-large eggs, at room temperature
1/3 cup grated orange zest (6 oranges)
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup freshly squeezed orange juice, divided
3/4 cup buttermilk, at room temperature
1 teaspoon pure vanilla extract
1 cup confectioners' sugar, sifted
1 1/2 tablespoons freshly squeezed orange juice

Steps:

  • Heat the oven to 350 degrees. Grease and flour two 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans. Line the bottoms with parchment paper.
  • Cream the butter and 2 cups of the granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, one at a time, and the orange zest.
  • In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine 1/4 cup of the orange juice, the buttermilk, and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
  • While the cakes bake, cook the remaining 1/2 cup of granulated sugar with the remaining 1/2 cup orange juice in a small saucepan over low heat until the sugar dissolves. When the cakes are done, let them cool for 10 minutes. Take them out of the pans and place them on a baking rack set over a tray. Spoon the orange syrup over the cakes and allow the cakes to cool completely.
  • To glaze, combine the confectioners' sugar and orange juice in a bowl, mixing with a wire whisk until smooth. Add a few more drops of juice, if necessary, to make it pour easily. Pour over the top of one cake and allow the glaze to dry. Wrap well, and store in the refrigerator.

10 ounces all-purpose flour, more for the pan
2 cups sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
6 ounces unsalted butter, softened, more for the pan
3/4 cup canola oil (or other mild-flavored oil)
1 1/2 tablespoons finely minced lemon zest (from about 2 lemons)
1 tablespoon vanilla extract
3/4 cup strained fresh orange juice
5 large eggs
1/2 cup frozen orange juice concentrate, thawed
1 tablespoon unsalted butter, melted
2 tablespoons dark rum
1 cup confectioners' sugar, divided

Steps:

  • Heat the oven to 350°F Butter and flour a 10-inch tube pan or 12-cup bundt pan.
  • To make the cake-- Sift the flour, sugar, baking powder, and soda into the large bowl of a stand mixer fitted with the paddle attachment. Add the butter and mix on low speed until fine crumbs form. Change to the whisk attachment. With the machine running on medium speed, whisk in the oil, lemon zest, vanilla extract, and orange juice. Whisk in the eggs one at a time and then increase the speed to high and whisk the batter until light, about 3 min., scraping the sides of the bowl if necessary. Pour the batter into the prepared pan and bake until a toothpick inserted in the cake comes out clean, 45 to 50 minute.
  • To make the syrup and glaze-- While the cake bakes, whisk together in a small bowl the orange juice concentrate, butter, rum, and 1/2 cup of the confectioners' sugar.
  • When the cake is done, set the pan on a rack to cool for 5 minute With a thin skewer, poke the cake all the way through to the bottom of the pan in about 100 places. Pour 1/3 cup of the syrup over the cake and let stand for 1/2 hour; repeat with another 1/3 cup of syrup and let stand another 1/2 hour before removing the cake from the pan. (At this point you can wrap the cake in plastic and hold for up to 3 days at room temperature; in fact, the flavor only improves.) Cover the remaining syrup with plastic and store at room temperature.
  • When ready to serve, whisk the remaining 1/2 cup confectioners' sugar into the remaining syrup. Set the cake on a rack over a baking sheet and pour the glaze over the cake. Let stand for at least 10 minute before slicing and serving.

  • 3. In a small mixing bowl, whisk together milk, remaining juice & remaining zest. Set aside.

  • 6. Add flour mixture. Beat until smooth. Pour into greased & floured bundt pan.
  • 7. Bake at 350 degrees for 40 minutes, or until toothpick comes out clean.
  • 8. Remove from oven. Cool as-is on wire rack for 10-15 minutes, until cake loosens from pan. Invert onto wire rack to cool completely.
  • 9. Spoon glaze over cooled cake. Allow to harden in refrigerator. Cut & serve.

  • Beat butter with sugar and orange zest on medium‐high speed until pale and fluffy, 2 to 3 minutes. Beat in eggs, one at a time, then vanilla. Reduce speed to medium‐low and beat in flour mixture, alternating with milk mixture, each in two additions. Transfer batter to prepared pan; smooth top with a spatula.
  • Bake until cake is puffed slightly and a wooden skewer inserted into center comes out clean, about 45 minutes. Let cool in pan on a wire rack 15 minutes (do not turn off oven).
  • For the Glaze: Meanwhile, in a small saucepan, cook butter over medium‐high heat until boiling. Remove from heat; carefully add liqueur (mixture will bubble). When bubbles subside, stir in sugar. Return to medium‐low heat and cook, stirring, until sugar has dissolved, about 1 minute. Remove from heat.
  • Pierce holes in cake with skewer at 1‐inch intervals to bottom of pan. Brush half of glaze evenly over cake; let stand until fully absorbed, about 10 minutes. Invert cake onto a baking sheet. Brush remaining glaze evenly over top and sides.
  • Return to oven and bake just until glaze is set and dry, about 5 minutes. Transfer to rack and let cool completely before slicing and serving. Glazed cake can be stored in an airtight container at room temperature up to 3 days.

1/3 cup vegetable oil

1 tablespoon water
