ORANGE-SCENTED SWEET POTATO GRATIN WITH APPLE AND PEAR
The vegetarians and vegans at your table will love this, but so will the meat eaters. Orange is a flavor that complements sweet potatoes, and the walnut oil contributes a subtle background nuttiness. Make sure to stir the mixture every 15 minutes as it bakes, so that the sweet potatoes on the top layer don't dry out. The apple and pear slices may fall apart, but that's fine, they won't disintegrate and they'll contribute wonderful flavor to the dish.

- Heat the oven to 400 degrees. Oil a 3-quart gratin or baking dish with walnut oil. Toss together the sweet potatoes, apples and pear in a large bowl. Season with salt to taste.
- In a small saucepan or in a microwave at 50 percent power, heat the honey (or agave nectar) and the walnut oil together just until warm. Add to the sweet potato mixture, add the orange zest and toss together well until the fruit and vegetables are well coated. Scrape into the baking dish, making sure to scrape out all of the honey and oil using a rubber spatula. Pour on the orange juice. Set the baking dish on a sheet pan and place in the oven.
- Bake 1 hour, setting the timer so that you remember to stir the mixture at 15-minute intervals. Cover the pan with foil and continue to bake for another 1/2 hour, or until the sweet potatoes are thoroughly tender and the liquid in the pan is syrupy. Allow to cool for about 10 minutes (or longer) before serving.

SWEET POTATOES IN ORANGE CUPS
I made these for a recent "kid's dinner party" that my friends and I do every week and I can't even tell you how hard I laughed when I pulled these sweet potatoes out of the oven and three of the kids simultaneously yelled "cupcakes"! No matter what we said they decided the orange and white "cupcakes" were a holiday treat and scarfed them down. These heavenly treats only take minutes to prepare, and they made quite a visual and edible impact on the kids and adults alike.

- Preheat the oven to 400 degrees F. Poke the yams several times with a fork or knife to pierce the skin. Place on foil or a baking sheet in the oven and bake for 1 hour.
- Let the yams cool for several minutes, then cut in half and scoop out the fluffy insides into a large bowl (I love eating the high fiber skin as a snack). Mash the yams with the butter, brown sugar or maple syrup, evaporated milk and salt until creamy and fluffy.
- Cut the oranges in half and slice a very thin disk from the bottom so they rest flat; the skins are going to be the "bowls." With a paring knife cut around the inside rim of the orange removing the orange sections and pulp. Place any of the orange juice and pulp in a bowl and discard the white membranes and seeds. Save the juice and pulp for a cranberry sauce recipe or just enjoy as a snack.
- Fill each orange cup with 1/4 cup of puree and top with several mini marshmallows (you can cover and refrigerate these overnight).
- Preheat the oven to 350 degrees F. Place the orange cups on a baking sheet and bake until the marshmallows are golden, 20 to 25 minutes (see Cook's Note). Serve.

- Put the potatoes in a medium pot, cover with water, salt the water and bring to boil over medium heat. Cook until tender, then drain and return the potatoes to the pot. Heat a little oil over medium heat, in a medium saute pan and add the bacon and cook until it begins to crisp. Stir in the orange zest and juice and the potatoes. Mash to desired consistency with some chicken stock to thin the potatoes, if desired. Stir in the coriander, cumin, cinnamon and hot sauce. Transfer to a serving bowl and serve.

- Peel and coarsely chop the sweet potatoes. Cover with water and bring to a boil in a large pot. Salt the water and cook the sweet potatoes until tender, 8 to 10 minutes. Drain and return the sweet potatoes to the hot pot. Mash the potatoes with the stock and butter. Add in the orange juice and 2 tablespoons of the orange zest. Then add in the thyme, paprika, cinnamon and some pepper. Taste and adjust the seasoning. Cover and remove from the heat and serve immediately. To keep warm, create a water bath by placing the pot of mashed potatoes in 1 inch gently simmering water in larger pot or deep skillet.
ROASTED ORANGE SCENTED MASHED SWEET POTATOES
Delicious side dish to accompany your holiday meal. Roasting the sweet potatoes caramelizes the natural sugars and makes it extra sweet without adding sugar. The orange zest just takes it to the next level.

- Heat oven to 400. Oil a 9 x 13 baking dish. Toss together the sweet potatoes, apples, and pear in a large bowl. Season with salt to taste. Heat honey in a small saucepan just until warm; add walnut oil, stir, and add to sweet potato mixture. Add orange zest and toss until all is well coated. Scrape into baking dish, being sure to scrape out all honey and oil. Pour orange juice over all. Set the baking dish on a sheet pan and place in oven. Bake 1 hour, stirring every 15 min. Cover with foil and bake another 1/2 hour, or until sweet potatoes are tender and liquid is syrupy. Allow to sit 10 min or so before serving.
