ORANGE ROSEMARY BISCUITS

Number Of Ingredients 7

2 cups all purpose flour
4 tsp. baking powder
1 tsp. salt
1 tsp. chopped fresh rosemary
zest of 1 orange
1/2 cup butter
1/3 to 1/2 cup Florida's Natural® Premium orange juice

Steps:

  • In large bowl stir together flour, baking powder, salt, rosemary and orange zest. Cut in butter; gradually add orange juice to make a soft dough. Knead on lightly floured surface 10 turns. Roll out dough to 1/4 inch thickness. Cut with 2 1/2 inch cutter. Place on baking sheet; bake at 425 degrees F for 12 to 15 minutes or until browned.
  • Serve with ham or prosciutto, goat cheese and olive oil. Goat cheese can be rolled in 1 tsp. orange zest and 1 tsp. chopped rosemary.

Grated zest of 1 orange
2/3 cup granulated sugar
1/4 cup confectioners' sugar
1 tablespoon finely chopped fresh rosemary
1/2 teaspoon kosher salt
2 sticks unsalted butter, at room temperature
1 large egg, separated, plus 1 egg yolk
2 cups all-purpose flour
2 tablespoons sanding sugar

Steps:

  • Combine the orange zest, granulated sugar, confectioners' sugar, rosemary and salt in a food processor and process, scraping the bowl occasionally, until the mixture is sandy and turns orange, about 1 minute. Add the butter and process until creamy, 1 to 2 minutes. Add the egg yolks and process, scraping the bowl occasionally, until combined, about 1 minute. Add the flour and process until smooth, about 1 minute. (The dough will be very soft.)
  • Divide the dough between 2 sheets of plastic wrap. Using the plastic to help you, shape each into a 10-inch-long log. Wrap and refrigerate until firm but not hard, 1 hour.
  • Unwrap and reshape each into a smooth, even cylinder. Wrap again tightly and refrigerate until very hard, at least 2 hours or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Lightly beat the egg white in a small bowl. Unwrap 1 log and brush all over with some of the egg white, then sprinkle with 1 tablespoon sanding sugar. Using a sharp knife, slice into 1/4- to 1/2-inch-thick rounds. Arrange 2 inches apart on one of the prepared pans. Repeat with the second log of dough.
  • Bake, switching the pans halfway through, until the cookies are golden around the edges, 20 to 24 minutes. Let cool 5 minutes on the pans, then transfer to racks to cool completely.

1 pouch (1 lb 1.5 oz) Betty Crocker™ sugar cookie mix
1 tablespoon Gold Medal™ all-purpose flour
1/3 cup butter or margarine, softened
1 egg, slightly beaten
3/4 cup finely chopped dried cranberries
1 1/2 teaspoons finely chopped fresh rosemary leaves
1 1/4 cups powdered sugar
2 to 3 tablespoons orange juice
1 tablespoon butter or margarine, melted
1 1/2 teaspoons grated orange peel

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie mix, flour, 1/3 cup softened butter and egg until soft dough forms. Stir in cranberries and rosemary.
  • On floured surface, roll dough to about 1/4-inch thickness. Cut dough with 2-inch round cookie cutters. On ungreased cookie sheets, place cutouts 1 inch apart.
  • Bake 9 to 11 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 15 minutes.
  • In small bowl, mix glaze ingredients until smooth, using enough orange juice until glaze is thin enough to spread. Spread thin layer of glaze over each cookie. Let stand about 20 minutes or until glaze is set. Store loosely covered at room temperature.

This recipe comes courtesy of one of my co-workers who made them for our holiday cookie exchange. I fell in love with them and had to have the recipe. The secret is only using fresh orange rind and juice!

1 cup unsalted butter
1 1/2 cups sugar
1 cup sour cream
2 eggs
3 tablespoons freshly grated orange zest
4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup orange juice
1/4 cup unsalted butter, melted
2 cups confectioners' sugar
1 tablespoon freshly grated orange zest
3 tablespoons freshly squeezed orange juice

Steps:

  • Preheat oven to 375°F.
  • In a medium bowl, cream together the butter, sugar and sour cream until smooth.
  • Beat in eggs one at a time then add orange zest.
  • In another bowl, combine flour, baking powder, baking soda and salt. Stir into sugar-sour cream mixture, alternating with orange juice.
  • Drop by teaspoonfuls onto ungreased cookie sheets or in madeleine-style pans.
  • Bake for 8-10 minutes in preheated oven. Allow to cool on baking sheet for 2 minutes before moving to wire cooling rack.
  • In a small bowl, combine melted butter, sugar and orange zest. Mix in orange juice, 1 Tbs. at a time until desired consistency is reached. Spread over cooled cookies.

  • In the bowl of an electric mixer, beat the butter and sugar on medium high until incorporated but not fluffy, about 1 minute. Scrape down the sides of the bowl. Add the citrus zest, rosemary, and egg yolks, one at a time, beating just until incorporated. Scrape down the sides of the bowl and add the dry ingredients. With the mixer on low, mix just until combined.
  • Gather the dough into a ball and divide in half. Shape each half into a 12 inch long log, pressing the sides against the work surface to flatten them so that the cookies will end up square. Wrap tight in plastic wrap. Refrigerate for several hours, or freeze for 45 minutes.
  • Preheat oven to 350º. Line baking sheets with parchment paper. Place sugar in a bowl. Cut the logs into 1/3 inch thick slices. Toss each slice in the sugar to coat. Place cookies 1 inch apart and back until lightly golden, 15-17 minutes.
