BEER-BOILED SHRIMP WITH OLD BAY®

Steps:
- Combine beer, seafood seasoning, and salt in a large saucepan or stockpot over medium-high heat. Squeeze juice from both lemon halves into the beer mixture and add both rinds to the beer. Stir and bring to a boil. Cover the pot and boil for 10 minutes.
- Add shrimp to boiling liquid, cover again with the lid, and turn off the heat. Transfer shrimp to serving bowls when they are bright pink on the outside and the meat is opaque, about 3 minutes.

CHEF JOHN'S SHRIMP COCKTAIL
Before I knew much about food or dining out, I knew that if they brought shrimp cocktails to the table as an appetizer, we were eating at a 'fancy' restaurant. I'm sure I enjoyed the shrimp, but what I really loved was dipping the crackers in the spicy, horseradish-spiked cocktail sauce.

Steps:
- Stir water, onion, lemon, garlic, tarragon, seafood seasoning, peppercorns, and bay leaf together in a large pot; bring to a simmer and cook until flavors blend, about 15 minutes.
- Whisk ketchup, chili sauce, horseradish, lemon juice, Worcestershire sauce, hot sauce, and salt together in a bowl; refrigerate until chilled, at least 15 minutes.
- Bring poaching liquid to a rapid boil. Cook the shrimp in the boiling liquid until they are bright pink on the outside and the meat is no longer transparent in the center, about 5 minutes. Transfer shrimp to a bowl of ice water and immerse in ice water until cold; drain. Arrange cold shrimp on a platter and serve with chilled sauce.

- Mix vinegar, water and Old Bay Seasoning in medium saucepan. Bring to boil on medium heat. Gently stir in shrimp; cover.
- Steam 2 to 3 minutes or just until shrimp turn pink. Drain well.
- Serve immediately or refrigerate until ready to serve. Serve with cocktail sauce.

- Add all of the Cocktail Sauce ingredients to a medium bowl. Whisk to combine. Remove one tablespoon to a large bowl or freezer bag (for your shrimp marinade). Store the remaining Cocktail Sauce in the refrigerator.
- Add all marinade ingredients to 1 tablespoon cocktail sauce and whisk to combine. Add shrimp and stir until evenly coated. Marinate at room temperature for 20-30 minutes.
- Melt 1 tablespoon butter over medium-high heat in a large skillet. Add shrimp and cook just until opaque, about 3 minutes. Season with additional salt and pepper if desired. Remove shrimp to a plate. NOTE: You will need to work in 2 batches unless you have an extra large skillet (as pictured in video) or your shrimp will steam instead of sauté.
