CREAMED ONIONS AND PEAS
This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

Steps:
- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

DAD'S CREAMED PEAS & PEARL ONIONS
While I was growing up, it was our family tradition to make creamed peas with pearl onions for every Thanksgiving and Christmas dinner. My dad was not a happy camper if he didn't see this dish on the table. It was his favorite! - In a large skillet, combine the first 7 ingredients; bring to a boil. Reduce heat to medium; cook, uncovered, until onions are tender and most of liquid is evaporated, 8-10 minutes, stirring occasionally. Remove from heat; stir in sour cream. Top with bacon and cashews.

Parmesan Peas 'n' Rice are a wonderful complement for any meal. My husband, John, likes rice but isn't crazy about peas, and I'm just the opposite. It's a great compromise!

- In a small saucepan, saute rice and onion in butter until onion is tender. Stir in broth and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. , Add peas; cover and cook 5-6 minutes longer or until liquid is absorbed and rice is tender. Stir in cheese.

FRESH ORANGE RICE
Simple and basic-orange rice with no onion or garlic, no herbs. Depending on my menu, for a more pronounced flavor I will increase the amount of orange juice; or omit the zest, etc. (But I like orange, so I almost always add more.) From 1,000 Lowfat Recipes' cookbook.

- Remove the zest from the orange and measure out up to 2 tablespoons, if desired. Mince and set aside.
- To garner the maximum amount of juice from your oranges, with a sharp knife pierce the oranges about 5-6 times and microwave for 30 seconds.
- Juice the orange and measure out 3/4 cup; more or less according to your preference. You may need to juice another orange if two oranges don't yield enough juice. Remember that for 2 cups of rice you will need 4 cups of liquid (water/orange juice) in whatever ratio you choose.
- Place the rice in a pan along with the water, salt and orange juice. NOTE: *Important to stir in the orange zest at the end of the cooking time. DO NOT add the zest in with the rice while it is cooking or the rice will turn bitter.
- Cover pan, bring to a boil, reduce heat and simmer about 20-25 minutes or until liquid is absorbed.
- Remove pan from stove; fluff rice with a fork and stir in the zest. Let stand covered for a few minutes then serve.
- Garnish with orange slices if desired.

ORANGE RICE WITH PEAS AND PEARL ONIONS
A sweet rice dish. I use Jasmati rice and make it so it's sticky, because we like it that way and because it's easier for my husband to eat. He has Cerebral Palsy and unless the rice sticks together..it will become airborne! I make rice in the microwave often because it's fast and easy and I can be using my stovetop for other things. After the rice was done I added frozen peas and pearl onions and put it all back in the microwave for three minutes with some margarine. You could, of course, cook the rice any way you like and use whatever your favorite rice is.

Steps:
- mix together 3/4 or 1 cup of uncooked white rice with 1 cup orange juice and 1 cup water.
- put in a microwave safe bowl.
- cover with plastic wrap, leaving a corner turned back to vent.
- microwave on high for 5 minutes 20 minutes at 1/2 power.
- take the rice out, uncover carefully and fluff with a fork.
- add in peas and onions and margarine, ( more or less according to taste).
- if you use frozen peas and onions you need to heat again for about 3 min, covered so the peas don't explode all over the microwave. If you use canned, the heat from the rice will do the trick.
- serve and take all compliments that come your way.

- Cook Texmati rice according to package directions. At the last minute blend in orange zest and 1 tablespoon butter, salt, pepper and 1 cup thawed frozen peas.
