ORANGE-FLAVORED RICE

1 tablespoon olive oil
1 cup long-grain white rice
2 cups chicken stock
1 orange, zested and juiced
1 green onion, chopped

Steps:

  • Place a medium saucepan over medium heat. Add the olive oil and rice, and cook until the rice smells toasty, about 3 minutes. Add the chicken stock and half of the orange zest and juice. Bring to a boil, stir once more, then cover and reduce the heat to low. Simmer until tender and the liquid has been absorbed, 18 to 20 minutes. Remove from the heat and let stand, still covered, for 5 minutes. Stir the remaining orange zest and juice into the rice, and garnish with the green onions.

1-1/2 cups orange juice
1 cup uncooked long grain rice
3/4 cup water

Steps:

  • In a saucepan, saute celery in butter until tender. Add the remaining ingredients; mix well. Bring to a boil. Reduce heat; cover and simmer for 20 minutes or until the rice is tender.

1 ¼ cups dark brown sugar
½ cup white sugar
½ cup unsalted butter, softened
2 tablespoons unsalted butter, softened
2 tablespoons cream cheese
1 large egg
1 tablespoon molasses
1 teaspoon vanilla extract
1 teaspoon orange extract
½ teaspoon maple extract
2 ½ cups all-purpose flour
6 medium oranges, zested
2 tablespoons ground cinnamon
1 ½ teaspoons baking soda
1 ½ teaspoons salt
½ teaspoon ground cloves
½ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat both sugars, 1/2 cup plus 2 tablespoons butter, and cream cheese together until creamy, at least 5 minutes. Add egg and mix well. Mix in molasses. Mix in vanilla, orange, and maple extracts.
  • Stir flour, orange zest, cinnamon, baking soda, salt, cloves, and nutmeg together in another bowl until well combined and no clumps of zest remain. Add the dry ingredients to the wet ingredients and stir together just until incorporated; don't overmix.
  • Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  • Bake in the preheated oven until edges are golden, about 12 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

Simple and basic-orange rice with no onion or garlic, no herbs. Depending on my menu, for a more pronounced flavor I will increase the amount of orange juice; or omit the zest, etc. (But I like orange, so I almost always add more.) From 1,000 Lowfat Recipes' cookbook.

2 fresh oranges
2 cups jasmine rice (I also use basmati but plain white rice rarely)
orange zest
3 cups water
1/2 teaspoon salt
orange slice, for garnish

Steps:

  • Remove the zest from the orange and measure out up to 2 tablespoons, if desired. Mince and set aside.
  • To garner the maximum amount of juice from your oranges, with a sharp knife pierce the oranges about 5-6 times and microwave for 30 seconds.
  • Juice the orange and measure out 3/4 cup; more or less according to your preference. You may need to juice another orange if two oranges don't yield enough juice. Remember that for 2 cups of rice you will need 4 cups of liquid (water/orange juice) in whatever ratio you choose.
  • Place the rice in a pan along with the water, salt and orange juice. NOTE: *Important to stir in the orange zest at the end of the cooking time. DO NOT add the zest in with the rice while it is cooking or the rice will turn bitter.
  • Cover pan, bring to a boil, reduce heat and simmer about 20-25 minutes or until liquid is absorbed.
  • Remove pan from stove; fluff rice with a fork and stir in the zest. Let stand covered for a few minutes then serve.
  • Garnish with orange slices if desired.

1 medium finely dice onion
1 large bell pepper, diced
1 (15 ounce) can tomato sauce
1 (8 ounce) can tomato sauce
1/2 teaspoon cumin
1/4 teaspoon ground black pepper

1 1/2 cups long grain rice
3 cups water
1 dash salt

Steps:

  • on med heat in large skillet brown ground beef and onion.
  • strain grease.
  • add to meat and onion in skillet both cans tomato sauce , bell pepper and spices. (dont forget salt).
  • Simmer till peppers are tender approx 30 minutes.
  • stir occasionally.
  • Meanwhile, cook rice seperately .bring water and dash of salt to boil add rice, stir well, reduce heat, cover, simmer on low for approx 15 minutes or till rice is tender.
  • when rice is done fold into meat sauce , mix well.

  • To Marinate: Combine soy sauce, orange juice, sugar, garlic, ginger and raisins in a nonporous glass dish or bowl. Mix well, then add chicken and turn to coat. Cover dish or bowl and refrigerate to marinate for 2 to 3 hours, turning once or twice.

An interesting and flavorful change from oatmeal. This is sort of like a healthy breakfast version of rice pudding. This can be made much easier and faster by using 2 cups cooked brown rice. You could also use soymilk/powdered soymilk for the milk/milk powder. Cook time is for cooking rice, prep time is for heating the whole mixture, although heating time will be longer if you use cold leftover rice. Recipe is credited to Julie Delaplane of Anderson, Indiana and is from the La Leche League International Cookbook "Whole Foods for the Whole Family."
