This recipe was shared on my recipe group. I make these often,and use ONLY the Early Bird Brand Juice..OMG!! You can pulse the walnuts/pecans in a food processor to make them a really fine consistency. This will make mixing the cookies a great deal easier. NOTE: These cookies should not be stored outside of the refrigerator. ...

3 c powdered sugar
1 lb vanilla wafers, crumbled
1 stick butter, melted
1 c finely chopped walnuts or pecans
6 oz can frozen orange juice (thawed) the early bird brand is amazing!!
1 can(s) coconut (for rolling on outside of cookies)

Steps:

  • 1. Combine the powdered sugar, vanilla wafers, butter, walnuts and orange juice in large bowl. Mix ingredients until just evenly distributed.
  • 2. Shape into 1 inch balls and roll in coconut.
  • 3. Refrigerate until serving.Will keep in fridge up to 5 days.

These are a different cookie for Christmas cookie platters. Everyone who has them asks for the recipe. Cooking time is the set-up in fridge.

1 (15 ounce) box vanilla wafers
1/2 cup butter, softened
2 cups powdered sugar
1 (12 ounce) can frozen orange juice concentrate
1 cup crushed nuts
powdered sugar or crushed nuts, to roll cookies in

Steps:

  • Crush the vanilla wafers into crumbs.
  • Mix softened butter, crumbs, powdered sugar, OJ concentrate and crushed nuts.
  • Refrigerate for 30 minutes or until ready to make cookies.
  • Shape chiled mixture into small balls.
  • Roll in flaked coconut, powdered suagr or crushed nuts.

These are a little different from the usual no bake cookies since they use gingersnap crumbs or graham wafers but they are delicious! I always use the gingersnap crumbs so can't say what they'd be like with graham wafer crumbs. The longest part of making these is forming the balls. My note on my scrapbook said the orignal was clipped from a magazine in 1981.

4 cups gingersnap crumbs or 4 cups graham wafer crumbs
1 cup confectioners' sugar
1/3 cup frozen orange juice concentrate, thawed
1/4 cup light corn syrup
1/4 cup butter or 1/4 cup margarine, melted
1 cup finely chopped nuts

Steps:

  • In a large bowl mix all ingredients until well blended. Shape in 1 inch balls. Makes about 60.
