V's Slow-Braised Korean Short Ribs with Caramelized Kimchi Rice and Korean Cabbage Slaw image

1/3 cup rice wine vinegar
1/3 cup soy sauce
1 tablespoon plus 1 teaspoon chili-garlic paste
2 cups Bulgogi Marinade, recipe follows
1/3 cup sesame oil
1 tablespoon salt, plus more to taste
12 bone-in flanken short ribs
1/2 head kimchi, optional, recipe follows
1/4 cup butter
4 cups cooked white rice
8 ounces green cabbage, shredded
3 ounces red cabbage, shredded
Sesame seeds, optional
1/2 cup soy sauce
3 tablespoons packed brown sugar
2 tablespoons plus 1 teaspoon sesame oil
3 to 4 cloves garlic, peeled
1 1/4-inch ginger, peeled
2 1/2 green onions, roughly chopped
1/2 sweet onion, outer layer removed
1/2 pear, cored
1/2 apple, cored
2 tablespoons plus 1 teaspoon mirin
3 heads Napa cabbage
2 cups water
2 tablespoons glutinous rice flour (or all-purpose flour if you don't have rice flour)
2 tablespoons brown sugar
1 cup kosher salt
2 tablespoons oyster sauce
4 cloves garlic, peeled
1/2-inch piece ginger, peeled and roughly chopped
1/2 to 1 1/2 cups gochujaro (depending on how spicy you want your kimchi)
1 1/2 cups julienned daikon radish
1 cup julienned green onions

Steps:

  • For the ribs: Preheat the oven to 400 degrees F.
  • In a medium bowl, whisk together 3/4 cup canola oil, rice wine vinegar, soy sauce and chili-garlic paste to make a vinaigrette. Measure out 1/3 cup of the mixture and set aside, reserving for later. Add Bulgogi Marinade, sesame oil, and salt to the bowl; whisk to combine. Place ribs in a 9-by-13-inch pan, in two even layers. Pour sauce over ribs, shuffling the ribs around to ensure the sauce coats every side of every rib. Cover the pan securely with foil. Bake the ribs until the meat is tender and almost falling off the bone, about 1 hour and 20 minutes. To check ribs for doneness, lift corner of the foil and plastic wrap and use a fork to try to pick up a rib. If the meat is not yet done, replace plastic wrap and foil and place ribs back in oven for an additional 15 minutes. Remove ribs from oven.
  • For the sides: Chop the kimchi into 1/2-inch pieces. Heat a large saute pan over medium-high heat; add the remaining 2 tablespoons canola oil. Add the butter and kimchi to the pan. Stir until the kimchi is caramelized and turns golden brown, about 5 minutes. Add the rice and stir well to combine. Cook until the rice fully absorbs the liquid from the kimchi and the flavors are incorporated, about 5 to 8 minutes. Add salt to taste. Remove from heat. Place the green and red cabbage in a medium bowl. Pour the reserved 1/3 cup vinaigrette over the cabbage and toss to coat.
  • Divide the kimchi rice equally among four plates, placing it in a pile on one side of each plate. Do the same with the cabbage slaw, placing it next to the kimchi rice on each plate. Using a large spatula, gently remove ribs from the pan and place 3 ribs on top of the rice and slaw. Sprinkle with sesame seeds if using.
  • Place soy sauce, brown sugar, sesame oil, garlic, ginger, green onions, onion, pear, apple, and mirin in a blender and blend until pulpy but not liquified. Refrigerate in an airtight container until ready to use.
  • Use a knife to slit the bottom of each cabbage an inch into the base. Set knife aside. With your hands, rip each cabbage in half lengthwise. Submerge the cabbage halves in water for 15 minutes. While cabbage soaks, put the 2 cups water and flour into a pan on the stove on high heat; bring to a boil, stirring constantly. When water reaches a boil, reduce heat to medium and simmer until the liquid coats the spoon, about 10 to 15 minutes. Remove from heat and stir in brown sugar. Set aside to cool.
  • Remove cabbage from water, and shake off any excess water; place cabbage in a large bowl. Sprinkle and massage salt into each individual cabbage leaf. Let sit for 1 hour, turning cabbage every 15 minutes. Pour the cooled flour mixture into a blender. Add the oyster sauce, garlic cloves and ginger; blend until smooth. Pour into a bowl and stir in the gochujaro, daikon radish, and green onions. Rinse the cabbage in the sink to remove salt, and squeeze or shake out any excess water. Rinse bowl and return cabbage to the bowl. Using gloves (repeat: using gloves), massage paste in between each cabbage leaf. After working paste into each half of cabbage, place cabbage into a prepared kimchi vessel and press it down to the bottom as far as it will go. When all the cabbage is in the vessel, add any remaining paste to top of the cabbage. Make sure there is a weight to keep the cabbage below the level of the liquid. Replace lid or close bag, whichever is needed for the type of vessel being used; be sure there is ability for air to escape. Place a baking sheet underneath kimchi vessel before storing it to catch any liquid that may overflow during the fermentation process. Store kimchi container in a dark, out-of-the-way place at room temperature for 24 hours. Check after 12 hours to make sure cabbage is submerged in the liquid; if not, press cabbage down into the liquid.
  • After 24 hours, place kimchi container in the refrigerator. Let kimchi sit for a minimum of 7 days before eating, checking and pressing down every 3 days. The longer the kimchi is allowed to sit and ferment, the stronger the flavor; the sweet spot is around 20 days.
  • Note: There are a variety of vessels you can use to make kimchi. You can use a traditional earthenware jar, food-safe bucket, or even a large bowl or food storage container. Make sure your vessel is large enough to have room at the top for the fermentation process to happen. I suggest a clean black garbage bag as a liner to any container you use so it creates a dark environment, and it's easy to check because you can unwrap and retie it easily. For your weight, use anything heavy that fits inside the top of the container; I use a brick wrapped in foil.

1 medium onion (thinly sliced vertically)
8 large cloves garlic (sliced)
2 tablespoons minced ginger
2 cups beef broth
1/2 cup soy sauce (tamari or coconut aminos)
1/4 cup brown sugar (or coconut sugar)
2 tablespoons unseasoned rice vinegar
2 tablespoons gochujang (fermented Korean chile paste)
1 tablespoon toasted sesame oil
2 tablespoons canola oil (jor vegetable or peanut oil)
Salt and freshly ground black pepper
4 short ribs (2 1/2 to 3 pounds, bone in, trimmed of excess fat)
2 tablespoons cornstarch
2 bunches scallions (root ends trimmed)
2 tablespoons toasted sesame seeds
Kimchi
Shredded carrots
Cooked brown rice

Steps:

  • Combine the first 9 ingredients in a slow cooker. Set slow cooker to high to preheat.
  • Heat 2 tablespoons oil in a large skillet or sauté pan over medium-high heat.
  • Generously season beef short ribs with salt and black pepper. Add short ribs to pan, reduce heat to medium and brown well on all sides, approximately 2-3 minutes per side.
  • Transfer ribs, meat side down, to slow cooker.
  • Cover and cook on high for 4-6 hours or until very tender.
  • Combine cornstarch with approximately 4 tablespoons of the cooking liquid in a small bowl and stir until smooth. Pour cornstarch mixture into slow cooker, stir to blend and cook uncovered on high for approximately 20 minutes.
  • Turn slow cooker off and let stand 10 minutes. (Sauce will thicken more upon standing.)
  • Heat remaining 1 teaspoon oil in a skillet or sauté pan over medium-high. Cook scallions, 2-3 minutes or until slightly softened and browned.
  • Serve short ribs with scallions, kimchi, cooked brown rice and shredded carrots.

5 pounds boneless beef short ribs
2 stalks celery, roughly chopped
1 carrot, roughly chopped
1 onion, roughly chopped
1/2 cup tomato paste
1 1/2 cups red wine
4 cups chicken broth
1 cup balsamic vinegar
1 teaspoon black peppercorns
5 cloves garlic
3 bay leaves
3 sprigs fresh thyme
Buns, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a pan over medium-high heat until hot, and then sear the ribs on all sides. Remove and set aside. Add the celery, carrots and onions and cook until caramelized, and then stir in the tomato paste and cook for 5 minutes. Pour in the wine to deglaze, scraping up the browned bits, and cook for 10 minutes. Add the broth and balsamic vinegar and bring to a boil. Pour over the ribs in a baking dish or roasting pan with the peppercorns, garlic, bay leaves and thyme and cover with foil. Bake for 4 hours.
  • Pull the meat off the bones and serve on buns.

1 Peking duckling (Long Island), about 5 pounds
Kosher salt and freshly ground black pepper
1 orange, zested
1 lemon, zested
1 lime, zested
1 small onion, halved
Sour Orange Glaze, recipe follows
Herb Crepes, recipe follows
Watercress, for garnish
4 cups fresh orange juice
2 cups fresh lemon juice
1 cup fresh lime juice
6 cloves garlic, finely chopped
1 tablespoon whole fennel seeds
1 teaspoon whole black peppercorns
2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
1/4 teaspoon salt
1/8 teaspoon freshly grated black pepper
2 tablespoons finely chopped fresh thyme
2 tablespoons finely chopped fresh parsley
3 tablespoons melted butter
Butter, for coating the pan

Steps:

  • Preheat oven to 300 degrees F.
  • A day before roasting, remove the giblets and neck from the cavity of the bird and discard. Trim the neck flap and excess fat from around the cavity. Rinse and dry the bird well. Set the duck on a rack on a baking sheet, and refrigerate, uncovered, for 24 hours.
  • Pierce the duck skin all over (including the back), every 1/2-inch, with a skewer or small knife. Season the cavity with salt and pepper and stuff with strips or orange, lemon and lime zest and the onion. Set the duck on the rack in a roasting pan, and pour a cup of water in the pan. Roast the bird for 3 hours, removing the duck from the oven every hour to prick the skin again. Remove the duck from the oven and carefully, pour off the excess fat from the pan. (If desired reserve this fat for frying potatoes or wilting greens). Raise the oven temperature to 450 degrees F. Return the duck to the oven and roast until crisp and brown, about 30 minutes more. During the last 20 minutes of roasting, brush the duck with 1 cup of the orange glaze.
  • Let the duck rest for 20 minutes before carving. Brush the ducks skin with glaze 4 to 5 times during the resting period. Carve the duck and transfer pieces to warm serving platter. Serve the remaining glaze at the table to drizzle over the duck, if desired.
  • Brush the surface of the crepe with some sour orange glaze. Place a few slices of duck in the center of the crepe and top with a few sprigs of watercress. Fold over and roll up and serve.
  • Place the juice, garlic, fennel and peppercorns in a medium saucepan and cook over medium-high heat until reduced to 2 cups. Strain the sauce into a bowl and let cool to room temperature. Once cooled, remove 3/4 cup and place in bowl to serve with the crepes.
  • In blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. Heat a small non-stick pan over high heat. Add butter to coat. Pour 1-ounce of batter into the center of the pan and swirl the spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all the batter is gone.

4 lbs bone-in beef short ribs, well trimmed and cut in 3 inch lengths
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
2 large carrots, diced
1 tablespoon garlic, minced
14 ounces beef broth
1/2 cup dry red wine
1 teaspoon dried thyme, crushed
1 bay leaf
2 cups frozen white pearl onions
1 tablespoon Dijon mustard
1 tablespoon prepared horseradish
2 tablespoons fresh flat leaf parsley
2 minced garlic cloves
2 teaspoons finely shredded orange peel

Steps:

  • Heat oven to 350 degrees. Sprinkle ribs with 1/2 tsp of the salt and all the pepper. In a 4 to 5 quart ovenproof pot, brown ribs on all sides in hot oil over medium high heat. Set ribs aside; discard all but 1 TB drippings from pot. Reduce heat to medium-low. Add carrots and garlic to pot; cook and stir about 10 minutes or until carrots are just tender.
  • Return the ribs to the pot. Add broth, wine, thyme, bay leaf and remaining 1/2 tsp of salt. Bring to boiling; remove from heat. Over pot; transfer to oven. Bake for 2 hours or until meat is very tender, adding frozen onions during the last 30 minutes of cooking.
  • Transfer ribs to a large, deep serving platter; cover and keep warm. Skim fat from cooking liquid; discard bay leaf and any bones that have fallen off ribs. If cooking liquid is too thin to serve as a sauce, bring to boiling and cook uncovered for 5 minutes to reduce slightly to about 2 1/2 cups. Whisk in mustard and horseradish. Pour sauce over ribs.
  • To make orange gremolata combine two tablespoons snipped fresh italian parsley; 2 cloves minced garlic and 2 tsp finely shredded orange peel. Top the ribs with the orange gremolata.

  • Season short ribs with salt and pepper. Place on a rimmed baking sheet and chill, uncovered, at least 2 hours (ribs are even better if you can do this a day ahead).
  • Preheat oven to 325°. Heat oil in a large heavy pot over medium. Working in batches, cook short ribs until evenly browned, about 5 minutes on each side. Transfer to a platter; pour off pan drippings between batches.
  • Wipe out any burned bits from pot, but leave the golden-brown pieces (doing this will keep the finished sauce from tasting bitter). Place onions, garlic, celery, carrots, tomato paste, coriander seeds, cumin seeds, and chiles or red pepper flakes in pot; season with salt and pepper and stir to coat. Increase heat to medium-high and cook, stirring often, until vegetables are softened, tomato paste is slightly darkened in color, and spices are fragrant, 10–12 minutes.
  • Add oregano, wide strips of orange zest, 1 cup orange juice, and 6 cups water to pot, scraping up any browned bits; season with salt and pepper. Add ribs with any juices accumulated on the platter, making sure they’re completely submerged. Cover pot and braise ribs in the oven until meat is tender and falling off the bone, 4–5 hours.
