APRICOT AND RAISIN BLATJANG
This is something absolutely wonderful. It's kind of a fruit relish that combines a exciting variety of taste sensations; sweet, hot, fruity, and tangy. Serve this fantastic blatjang with kebabs or curries. I like canning this and always have a jar handy, thus the large measurements.

Steps:
- Add raisins and apricots to vinegar. Soak overnight.
- Pour into a pot and add the rest of the ingredients.
- Bring this to a slow boil and stir it constantly until it gets thick enough to drip off the spoon.
- You can ladle into sterilized jars while hot and seal. It'll last a while.
- Serve at room temperature. Refrigerate after opening or remaining quantities.

- This is best when made 8 to 10 hours ahead to let the ice melt.
- Start with a 1 gallon liquid insulated drink cooler.
- Combine all ingredients and mix well.
- Fill the cooler to the top with ice cubes.
- Shake the cooler occasionally over the next 8 to 10 hours.
- Serve over ice with the spiked cherries.
- Enjoy!

- Pour reserved juice of mandarin oranges in a 2 cup measuring cup.
- Add enough water to make 2 cups of liquid.
- Heat to boiling.add marshmallows, stir to melt.
- Add dry jello, and mix well.Let cool.
- Mash oranges, mix with cream cheese, then add to cooled marshmallow mixture.
- Fold in whipped topping and chill till ready to serve.

- Pour boiling water over jello and marshmallows. Stir until marshmallows melt. Set aside this mixture until cooled slightly.

Steps:
- Mix flour, pecans, sugar and margarine and press into a 9x12x2 inch baking dish.
- Bake 15 minutes at 350 degrees.
- While crust cools, mix sugar, cream cheese and 1 cup of cool whip.
- Spread over cooled crust.
- Beat pudding as directed on package and spread over cream cheese mixture.
- Spread Cool Whip over pudding mixture and sprinkle with some chopped pecans for garnish, if desired.
- Refrigerate for at least 4 hours.
- Cut into squares to serve.

SANGRIA

Steps:
- Cut the orange into thin slices, and then cut the slices into wedges, and place in a large pitcher.
- Cut one long slice of rind from the lemon and add to the oranges.
- Slice completely around the peaches, cutting down to the pit, and twist the halves in opposite directions until the 2 halves come apart.
- Remove and discard the pits, slice the peaches and add to the oranges.
- Add the sugar to the fruit and stir.
- Pour in the wine and stir until the sugar dissolves.
- Taste and add more sugar or a squeeze or 2 of lemon juice to taste.
- Chill for at least an hour.
- When ready to serve, use a long handled spoon to stir and press the fruit against the side of the pitcher to extract some of the juice.
- Put the ice into glasses and pour the chilled Sangria over and add some fruit from the pitcher to each glass.
