1 lb boneless country pork ribs
1 onion sliced
5 cloves garlic, chopped
3-4 chipotle chilis, diced with sauce(dont be shy!)
1/4 cup orange marmalade
1/4 cup cider vinegar or rice vinegar
1/4 cup soy sauce
2 TBS brown sugar
1 TBS peanut oil
1/2 tsp ground cumin
1 tsp salt

Steps:

  • In a med sized bowl, combine the chipotles and sauce with the garlic, marmalade,vinegar,soy sauce, brown sugar, oil, cumin and salt. place the sliced onion in the crock pot. Top with the pork ribs. Pour the sauce over all and give a quick stir to coat the ribs. cover and cook on low 8-10 hours or on high 4-5 hours.

Braised Country-Style Pork Ribs With Chipotle image

Country-style ribs have enough rich porkiness to stand up to the strong flavors of Latin America, so, here, they are coated with an aromatic spice rub that gets some smoky heat from chipotle peppers, then braised in a combination of citrus juices and beer. To avoid burning the spices, the ribs are coated with spice rub only on the side that doesn't get browned. Though the pomegranate seeds are not essential, they do add a nice hit of tartness and texture.

3 pounds bone-in or 2 1/2 pounds boneless country-style pork ribs
2 teaspoons kosher salt
1 tablespoon ground cumin
1 tablespoon ground coriander
2 teaspoons dried ground chipotle pepper
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1/2 teaspoon cinnamon
2 tablespoons vegetable oil
2 red onions, halved and thinly sliced
2 tablespoons minced garlic
3/4 cup orange juice
1/4 cup fresh lime juice
1/4 cup to 1 cup beer of your choice
1/2 cup roughly chopped cilantro, for garnish
1/2 cup pomegranate seeds, for garnish (optional)

Steps:

  • Dry the ribs well, sprinkle all over with salt and allow to sit, refrigerated, for 1 to 2 1/2 hours.
  • In a small bowl, combine cumin, coriander, chipotle pepper, black pepper, cayenne and cinnamon, and mix well. Dry the ribs well again and rub this mixture onto one side and the edges of the ribs, pressing to make sure it adheres. Heat oil over medium-high heat in a Dutch oven or other large, heavy pot until shimmering. In 2 batches, place the ribs in the pot, with the spice-rubbed side up, and brown the opposite side well, about 5 to 8 minutes. Remove to a platter as browned.
  • Add onions and cook, stirring frequently, until they just start to brown, about 10 minutes. Add garlic and cook, stirring constantly, for 1 minute more.
  • Move oven rack to middle position and heat oven to 325 degrees. Return ribs to the pot and add the orange juice, lime juice and enough beer so that the liquid comes halfway up the sides of the ribs. Bring to a simmer, then cover, put in the oven, and cook until the ribs are very tender, about 1 hour and 15 minutes. Remove the ribs from the pan, cover loosely with foil, and set aside. Continue to reduce the liquid if it is too thin, then adjust seasoning.
  • Top each rib with a several tablespoons of sauce, sprinkle with cilantro and pomegranate seeds, if using, and serve.

1 teaspoon instant coffee
3/4 cup plum sauce
1/2 cup freshly squeezed orange juice
2 tablespoons minced chipotle in adobo with sauce
2 tablespoons brown sugar
Salt and freshly ground black pepper
2 1/2 pounds pork back ribs

Steps:

  • Preheat the oven to 350 degrees F.
  • Mix 1/4 cup hot water with the instant coffee and stir to dissolve. Once, dissolved, combine with the plum sauce, orange juice, chipotle sauce and brown sugar in a small saucepan over medium heat. Bring the sauce to a boil and reduce the heat. Simmer until slightly thickened, about 5 minutes. Season with salt and pepper.
  • Coat both sides of the ribs with the sauce, saving 2/3 cup for basting. Arrange the ribs, meaty-side up, in 1 layer in a foil-lined baking sheet. Cover the pan tightly with foil and bake the ribs 1 hour. Remove the foil (from the top), baste with the remaining BBQ sauce and bake the ribs 1 hour more.
  • Allow the cooked ribs to rest for 10 to 15 minutes before slicing and serving.

1 cup honey
2 cups ketchup
1 tablespoon grated fresh ginger
1 (7-ounce) can chipotles in adobo sauce
3 pounds country style pork ribs, bone in

Steps:

  • In a food processor, combine honey, ketchup, ginger, and 5 chipotles with adobo sauce. Blend until smooth. Taste and add remaining chipotles, or more honey, if desired. If sauce is too thick, thin with a little water or apple juice. Pour half of the sauce over the pork and reserve the rest. Marinate for at least 4 and up to 24 hours.
  • Prepare a grill or grill pan. Grill the pork ribs until cooked to desired doneness. A little charring on the pork is desired. Remove pork from heat and slather with remaining sauce.

2 racks baby back ribs (about 3 1/2 pounds each)
1 tablespoon paprika
1 tablespoon garlic powder
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, chopped
Kosher salt
2 cloves garlic, finely chopped
1 1/2 cups no-sugar-added ketchup
3/4 cup fresh orange juice
2 teaspoons Worcestershire sauce
2 chipotles in adobo, chopped, plus 1 tablespoon adobo sauce

Steps:

  • For the ribs: Preheat the oven to 350 degrees F. Line a large rimmed baking pan with foil.
  • Place the ribs on the prepared baking pan meat-side up. Sprinkle them with the paprika, garlic powder, 1 tablespoon salt and a generous amount of pepper. Rub the spices all over the ribs.
  • Cover the pan tightly with foil and bake until the meat is very tender and can easily be pulled off the bone, about 2 hours.
  • For the barbecue sauce: Meanwhile, heat the oil in a medium saucepan over medium heat. Add the onions and 1/2 teaspoon salt and cook, stirring often, until very soft and golden brown, about 20 minutes. Add the garlic and cook, stirring, 1 minute. Add the ketchup, orange juice, Worcestershire, chipotles and adobo and 1/2 cup water. Increase the heat to bring to a boil, then reduce the heat to keep at a simmer until slightly thickened, about 10 minutes. Transfer to a blender and puree until smooth (be careful when blending hot liquids). Alternately, an immersion blender can be used in the pot.
  • Finish the ribs: Preheat the grill to medium-high (or set the oven to broil).
  • Reserve about a cup of the barbecue sauce for serving alongside the ribs. Brush a small amount of the remaining sauce on the bone side of the ribs and a generous amount on the meaty side.
  • Grill the ribs, meaty-side up, until the underside is lightly charred, about 3 minutes. Turn the ribs over and grill until the meaty side is charred in spots, 3 to 5 minutes (if using the oven, simply broil for 3 to 5 minutes). Transfer to a cutting board and cut each rack in half. Serve immediately with the reserved sauce on the side.

2 tablespoons olive oil
1 (5 lb) boneless pork shoulder
2 tablespoons kosher salt
2 teaspoons black pepper, Freshly ground
2 cups chicken broth
3/4 cup fresh orange juice
3 tablespoons apple cider vinegar
2 tablespoons orange zest, finely grated
2 tablespoons adobo sauce (from a can of chipotle chiles in adobo)
1 1/2 teaspoons cumin, ground
4 garlic cloves
4 chipotle chiles in adobo, seeded
1 onion, roughly chopped (2 cups)
4 bay leaves
1 teaspoon thyme, fresh

Steps:

  • Heat the oven to 325 degrees.
  • In a dutch oven large enough to hold shoulder, heat the oil over medium-high heat.
  • Season the pork with 1 1/2 tsps. salt and one-fourth teaspoons pepper, place it in the skillet and sear, turning occasionally, until deep golden brown all over, about 15 minutes total.
  • Meanwhile, put the broth, juice, vinegar, zest, adobo sauce, cumin, garlic, chiles, onions, one-half teaspoons salt and one-fourth teaspoons pepper into a blender; purée until smooth.
  • Pour the excess fat out of the oven after removing shoulder to plate. Carefully pour about 1 cup of the chipotle-orange purée into the dutch oven and cook briefly, scraping up any browned bits. Scatter the bay leaves and thyme in the casserole, replace the pork & cover with the rest of the puree. Top with a tight- fitting lid; bake for 2 1/2 hours.
  • Carefully uncover the pork and flip over the roast.
  • Baste it with the juices, then re-cover and return to the oven. Continue cooking until very tender, about 2 hours more.
  • Set aside, covered, for about 30 minutes, then uncover and pour the contents of the casserole into a colander set over a large bowl; discard bay leaves.
  • When cool enough to handle, tear the pork into shreds, discarding any fat, and transfer to a large bowl. Skim off and discard fat from the juices, then add the juices to the shredded meat and toss well.

This dish requires a flambe, but if you cannot (or are afraid to do so), you can always add the orange liqueur to the marinade before you reduce it, though the result is not quite the same. 2 pork chops, 3/4-inch thick, smoked if possible
1/2 cup orange juice
2 chipotle chiles in adobo (canned)
1/4 cup Cointreau liqueur or 1/4 cup Grand Marnier
1 pinch salt

Steps:

  • In a blender or food processor, combine chipotles, salt and orange juice.
  • Place in a shallow dish together with pork chops and marinate in the refrigerator for at least 1 hour.
  • Take chops out of marinade; reserve marinade.
  • Put marinade in a small saucepan and reduce until 1/3 of the liquid remains, about 10 to 15 minutes.
  • In a frying pan, place pork chops and cook in medium-high heat until cooked through, about 15 minutes.
  • Take chops out of the pan, and drain any excess oil.
  • Put the pan on high heat and cook until no liquid remains and a glaze is formed on pan.
  • Take pan away from the heat and put the pork chops back on the pan.
  • Add the 1/4 cup orange liqueur and flambe.
  • When the flames die out take chops out of the pan and keep warm.
  • Put the pan back on the stove and add the reduced marinade.
  • Heat until starting to boil.
  • Put the chops in a serving platter and pour some sauce on top.
  • Enjoy.

2 c or 3 cups of wood chips, any kind
2 Tbsp salt
1 tsp chinese five
1 Tbsp black pepper
6 slabs baby back ribs
ORANGE -CHIPOTLE GLAZE
1 c orange juice, fresh
8 c sugar....yes 8!!!
2 c apple cider vinegar
1 c soy sauce
1 can(s) 7 oz chipotle peppers in adobo finely chopped or pureed

Steps:

  • 1. Soak wood chips in water for at least 30 mins. drain well. Preheat a smoker if you have one to 200 degrees....I don't so I use my bbq. I do these inside in my oven in the Winter. Combine the salt and the spices. Rub about 2 tsps in each slab of ribs on both sides. Smoke for 20 mins. I skip this step as I don't have smoker. I wrap the ribs in the plastic and foil and cook over a low heat on bbg or in oven at 350.The ribs must be warpeed tightly in the plastic. Bake for 1 1/2 hours. Remove and let cool about 20 mins still wrapped. B Before serving coat the ribs with the glaze and pass glaze around at table. If I bbq these I brush the glaze on and put them back on the bbq till glaze starts to brown.
  • 2. Orange Chipotle Glaze Bring orange juice to a boil and boiluntil reduced to about 1/4 cup and is thick. Add sugar, vinegar, soy sauce and chilies. Boil stirring oftenuntil sugar has dissolved and sauce has reduced to 4 cups and coats a spoon...20 - 30 mins. Glaze keeps in fridge for at least 3 - 4 days.
