I was thinking that if you can make breakfast burritos to freeze than you have to be able to make a healthy wrap for lunch. Here is the result. Feel free to change it up to whatever sounds good to you!

1 cup uncooked brown rice
4 cups water
1 (4 ounce) package southwest seasoning
4 (15 ounce) cans black beans
2 (15 1/2 ounce) cans pinto beans
1 (10 ounce) can whole kernel corn
1 (10 ounce) jar salsa
16 10-inch flour tortillas
1 teaspoon cumin
salt and pepper
1 teaspoon garlic powder
1 teaspoon oregano
1 onion, chopped
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded

Steps:

  • Combine rice, southwest seasoning and water in a saucepan, and bring to a boil.
  • Reduce heat to low, cover, and simmer for 35-40 minutes, or until tender.
  • Remove from heat, and cool.
  • Place black beans and pinto beans into a colander or strainer, and rinse.
  • Transfer to a large bowl. Add corn, onion, spices and salsa, and toss to mix.
  • Mix in rice and cheese.
  • Divide the mixture evenly among the tortillas, and roll up.
  • Freeze wraps in single layer on lightly greased cookie sheet.
  • When fully frozen, wrap individually; place wraps in large zip-top freezer bags; freeze.
  • TO SERVE: Unwrap wraps (that even sounds funny to me) from foil or plastic wrap that you used for freezing.
  • Wrap in a paper towel.
  • Cook in microwave until heated through (about 2 minutes).
  • Or thaw wrap (remove plastic wrap if used in freezing), put foil, and bake at 350F for ten minutes.

1 head iceberg lettuce
1 lb roast beef
1/4 lb cheddar cheese
1 -2 tomatoes
4 tablespoons mayonnaise

Steps:

  • Clean lettuce and gently pull apart. Try to keep the lettuce leaves as large as possible so that they can hold the other ingredients. Also, it is best to clean lettuce ahead of time and refrigerate it for a couple of hours. This will allow time for the water to dry off of the lettuce after rinsing it.
  • Once the lettuce is ready, add the meat, cheese, tomato and mayonnaise to the center of the lettuce. Then, fold the lettuce over the fillings.

Rustle up these Asian inspired noodle and edamame bean lettuce cups for a low-calorie dinner - ready in half an hour

1 tbsp sesame oil
200g beef mince
8 spring onions , sliced on an angle, green parts reserved
1 red pepper , chopped
thumb-sized piece ginger , peeled and finely grated
100ml oyster sauce
350g frozen edamame soya beans
300g pack cooked rice noodles
2 limes , 1 cut into wedges
2 butter lettuces , or 1 iceberg

Steps:

  • Heat the oil in a non-stick frying pan. Add the beef and fry until browned all over and starting to crisp. Add the spring onions, pepper, ginger, oyster sauce and beans. Stir-fry for another 5 mins until the veg has softened, then add the noodles and juice of 1 lime. Season well and toss everything together until well combined and heated through.
  • Separate the lettuces into leaves. Pile the noodles into the leaves, sprinkle over the reserved spring onions to garnish and serve with the lime wedges.

3 tablespoons water
3 tablespoons orange marmalade
1 tablespoon sugar
1 tablespoon reduced-sodium soy sauce
2 garlic cloves, minced
1 teaspoon Sriracha Asian hot chili sauce
WRAPS:
1-1/2 pounds lean ground beef (90% lean)
2 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1/4 cup reduced-sodium soy sauce
2 tablespoons orange juice
1 tablespoon sugar
1 tablespoon orange marmalade
1/4 teaspoon crushed red pepper flakes
2 teaspoons cornstarch
1/4 cup cold water
8 Bibb or Boston lettuce leaves
2 cups cooked brown rice
1 cup shredded carrots
3 green onions, thinly sliced

Steps:

  • n a small bowl, combine sauce ingredients. In a large skillet, cook beef, garlic and ginger over medium heat 8-10 minutes or until no longer pink, breaking into crumbles; drain. Stir in soy sauce, orange juice, sugar, marmalade and pepper flakes. In a small bowl, mix cornstarch and water; stir into pan. Cook and stir 1-2 minutes or until sauce is thickened. Serve in lettuce leaves with rice. Top with carrots and green onions; drizzle with sauce. 1 wrap: 250 calories

This recipe was in the local Sunday paper. It sounded good and is. It is also very easy and quick to prepare. I didn't mix in the vegetables as I was selling it to DS as "Asian tacos." LOL. I did have some tortillas on hand for DS to use also. I did not use mint. Substitute iceberg or romaine lettuce for Boston lettuce, as desired. This recipe can also be found in "The Healthy Beef Cookbook."

1 1/2 lbs ground beef
1/2 cup hoisin sauce
1/2 cup peanut sauce
1 medium cucumber, seeded and chopped
1/2 cup shredded carrot
1/4 cup torn of fresh mint (optional)
salt, to taste
pepper, to taste
12 large boston lettuce leaves, approximately 2 heads
of fresh mint, to garnish (optional)

Steps:

  • Brown ground beef in large skillet over medium heat, approximately 8 - 10 minutes or until no longer pink.
  • Drain meat.
  • Stir in hoisin sauce and peanut sauce until meat is coated.
  • Heat meat through.
  • Just prior to serving, add cucumber, carrots and torn mint.
  • Mix gently.
  • Season with salt and pepper to taste.
  • Serve with lettuce leaves, garnishing with mint, as desired.
