ORANGE BANANA BUNDT CAKE
This Orange Banana Bundt Cake recipe is as easy as it is delicious. Made with simple, flavorful ingredients such as orange juice, bananas, and a hint of cinnamon and topped with a delicious orange glaze, this moist bundt cake will be ready in under an hour.

Steps:
- Preheat oven to 350 and spray a bundt cake pan with non-stick spray. Set aside.
- In a medium bowl whisk together flour, baking soda, salt, and cinnamon.
- In a separate bowl whisk together the sugar, vegetable oil, and eggs.
- Add the mashed banana, orange zest, and orange juice to the wet ingredients and mix well.
- Slowly combine the wet ingredients to dry and mix until everything is just combined.
- Pour into the prepared pan.
- Bake for 26-28 minutes or until toothpick comes out clean.
- Let cool for about 10 minutes before flipping onto serving plate.
- In a small bowl combine powdered sugar and juice of one orange (about 3 tbsps).
- Mix until powdered sugar is dissolved and glaze is smooth.
- Drizzle over cake and top with orange zest for garnish.

BANANA CAKE WITH ORANGE ICING
Another great banana cake but with a blast of citrus; gives it an added zing! It is lower in fat than some and I quite often make it without the icing so it is not too sweet either. I often add something extra as well...often a handful of dried cranberries really sets it off. I usually bake it in a tube pan but that is my personal preference. This recipe originated in "Lighthearted Everyday Cooking" by Anne Lindsay.

- In bowl, cream margarine; add sugar and beat well.
- Add eggs one at a time, beating well after each addition.
- Beat in vanilla, bananas, and orange rind.
- Mix together flour, baking powder and baking soda; beat into egg mixture alternately with milk.
- Spray tube pan or 9 inch sqare pan with nonstick coating; spoon in batter.
- Bake in 350 oven for 40 minutes or until cake springs back when pressed in center.
- Let cool in pan for 10 minutes; remove from pan and let cool on rack.
- Orange Icing:.
- In small bowl, combine sugar, yogurt, orange rind and juice; mix until smooth.
- Spread over cake.
- Cut into wedges.

SIMPLE ORANGE BANANA BUNDT CAKE
I love cakes that are simple to make.Less than $2.00 to make a medium sized bundt cake. I did not buy any cake mix when the kids were small. That was a luxury I could not afford. I used to use tang (a dry drink mix) mixed with water to make the juice. There is a ready supply of fresh oranges at any grocery store.Amazing isn't it to have almost any vegetable or fruit at your fingertips when you walk into a large grocery chain.This century is wonderful! Of course I used to use a coal and wood stove when power was out and I still have it for emergencies!If you want to use this cake for Christmas I have included optional ingredients.I use a bundt pan because there are no arguments about which piece is larger.(I bet that sounds familiar.)

Steps:
- Preheat oven 350*.
- Spray pam in a bundt pan.
- In large mixing bowl add flour, sugar, baking powder, and soda. (Mix nutmeg if you want to use now) Mix well.
- Add shortening. Cut in with a rocker or fork until it is mixed.
- Use a zest knife and get the rind off of one half of orange and add.
- Juice the orange. Add milk to make 1 cup.
- It is ok if the pulp gets used. In fact I use most of the pulp, pulse it in a blender until it is broken a little.
- Add to flour mixture.
- Use a mixer to blend on low speed.
- Add eggs and mix again.
- Add sliced banana and stir in with a spoon.
- Pour into bundt pan.
- If you use nuts and cherries, pour a little batter in the pan, then spread nuts and cherries, then the batter again.
- Bake. 45 to 50 minutes When the top springs back when touched and sides start to shrink away from the pan, it is done.
- Take out of oven and let set 15 minutes before inverting on plate. Serve plain or any glaze or frosting.
BANANA ORANGE LOAF
This recipe is from 'Woman's Day' magazine, June 1977 issue. I've been making this for 39 years, and has truly become a family favourite. Today, as I share this from my handwritten copy, we will enjoy it as much as the first time I made this ...back in 1977 :) I hope y'all enjoy it as much as we do!

- 1. Preheat oven to 350 degrees: Combine sugar and margarine (or butter). Add eggs one at a time, mixing well after each addition.
- 2. Add mashed bananas and orange juice. Mix well. Add combined dry ingredients, mixing until just moistened. Stir in (roasted) chopped nuts and orange zest and raisins.
- 3. Pour into a greased and floured 9x5 inch loaf pan. Bake for 1 hour and 15 min., or until a cake tester inserted in centre comes out clean.
- 4. Cool in pan for 5-10 minutes then remove from pan. While loaf is still HOT, cover loaf with a few tablespoons of fresh honey or marmalade or both. Smear over top (it will melt and be easy to spread)
- 5. A touch of fresh orange juice may be added to mix of honey and marmalade. Be sure to GLAZE HEAVY. Sprinkle with coarse white sugar.
- 6. Finish cooling on rack for approx. 2-3 hrs. Cover loosely while cooling. When completely cool, wrap well in plastic wrap and foil. May be stored in freezer up to 2 months. Store in fridge for 1-2 wks. Store on shelf for approx.2-3 days. (you will want to eat before the time is up :)

- In a bowl, combine the sugar, oil and eggs; mix well. Stir in bananas and orange juice. Combine the dry ingredients; add to banana mixture, beating just until moistened. Stir in walnuts. Pour into 2 greased 8x4-in. loaf pans. , Bake at 325° until a toothpick inserted in the center comes out clean, 50-60 minutes. Cool for 10 minutes; remove from pans to a wire rack to cool completely. Freeze option: Securely wrap cooled loaves in foil; freeze. To use, thaw at room temperature.
