A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

Number Of Ingredients 13

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

Our turkey meatloaf is full of flavor, moist in the middle, and has become a reader favorite! You would never guess this meatloaf is packed with mushrooms, but that's what makes it so darn delicious. Lots of finely chopped mushrooms add flavor and moisture, often missing from the typical turkey meatloaf. When choosing which mushrooms to add, white button mushrooms will work perfectly fine. For more flavor, try one or a combination of brown cremini, portobello, or shiitake mushrooms. The mushrooms need to be very finely chopped. You can do this by hand or use a food processor.

8 ounces mushrooms, trimmed and very finely chopped
1 medium onion, peeled and finely chopped
2 garlic cloves, peeled and minced
1 tablespoon oil
3/4 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
7 tablespoons ketchup, divided, try our homemade ketchup
1 cup (60 grams) panko bread crumbs or use homemade bread crumbs
1/3 cup (80 ml) milk
2 large eggs, lightly beaten
1 ¼ pound ground turkey (92% lean)

Steps:

  • Heat oven to 400° Fahrenheit. Lightly oil a rimmed baking sheet (or use a 9-inch by 13-inch baking pan) lined with aluminum foil.
  • Heat oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, until softened; about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the mushrooms, a 1/2-teaspoon of salt, and a 1/4-teaspoon of pepper. Cook until the mushrooms give off their liquid and it boils away; about 10 minutes.
  • Transfer the onions and mushrooms to a large bowl, and then stir in the Worcestershire sauce and three tablespoons of the ketchup. Set aside to cool for 5 minutes.
  • Meanwhile, combine the breadcrumbs and milk in a small bowl. Stir the breadcrumb mixture and the eggs into the mushrooms and onions. Using a fork or your hands, gently mix in the turkey, a 1/4-teaspoon of salt, and a 1/4 teaspoon of pepper. The mixture will be very wet.
  • Form the meatloaf into a 9-inch by 5-inch oval in the middle of the prepared baking sheet. Spread the remaining four tablespoons of ketchup on top.
  • Bake the meatloaf until an instant-read thermometer inserted into the thickest part of the meatloaf registers 170 degrees F, about 50 minutes. Let stand 5 minutes before slicing.

One of Oprah's favorite low-fat recipes. Rosie Daley, Oprah's private cook uses ground turkey breast and a bit more flavor, oriental-style Panko breadcrumbs found in specialty food stores. The recipe also works well with regular breadcrumbs. Look for Oprah's Classic Potatoes here in Zaar; it goes well with this recipe.

1 cup shitake mushrooms or 1 cup white mushroom, sliced
1 cup finely chopped onion
1/2 cup dry red wine, divided
1 lb ground turkey breast
2/3 panko breadcrumbs or 2/3 plain breadcrumbs
3 tablespoons chopped parsley
2 tablespoons tomato paste, divided
1 tablespoon Worcestershire sauce
1 tablespoon light soy sauce
1 tablespoon minced garlic
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon oregano
1 large egg
1 tablespoon vegetable oil
2 tablespoons flour
1 cup chicken broth, defatted (To defat broth, freeze broth for 30 mins until fat solidifies)

Steps:

  • Heat oven to 350 degrees.
  • Place mushrooms, onions and ¼ cup wine in medium nonstick skillet.
  • Bring to a boil the reduce heat to medium-low, cover and cook for 10 minutes, stirring occasionally, until vegetables are tender.
  • Meanwhile, combine ground turkey, breadcrumbs, parsley, 1 tbsp tomato paste, Worcestershire sauce, garlic, thyme, salt, pepper, oregano and egg in a large bowl.
  • Stir in mushroom and onion mixture.
  • Shape turkey mixture into a 8x5-inch loaf and place in a glass baking dish.
  • Spread remaining 1 tbsp tomato paste over top of loaf; pour remaining ¼ cup wine into baking dish around meatloaf.
  • Cover tightly with foil and bake 45 minutes until cooked through.
  • Make lite gravy: Heat oil in small saucepan over medium heat.
  • Stir in flour until smooth.
  • Gradually whisk chicken broth.
  • Bring to a boil and boil for 3-5 minutes until thickened.
  • Season with pepper.
  • Slice meatloaf and serve with Oprah’s classic potatoes.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

1 ½ pounds ground turkey
¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt
2 cloves garlic, minced

¼ cup brown sugar
1 tablespoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.
  • Mix ground turkey, buttery round cracker crumbs, milk, onion, egg, salt, garlic, and black pepper in a bowl; shape into a loaf and place on the prepared jelly roll pan.
  • Mix ketchup, brown sugar, and Worcestershire sauce in a separate bowl; set aside.
  • Bake meatloaf in preheated oven for 30 minutes; remove from oven and drain liquids. Top meatloaf with ketchup topping. Return loaf to oven and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

This is a recipe that helps explain the Twitter-era term "humblebrag." I made it for the celebrated writer and filmmaker Nora Ephron after a different recipe resulted in a disaster and I had to discard the result with only a few hours before my dinner with -- did I mention? -- Nora Ephron. It derives from a meatball dish once cooked by the chef Mark Ladner at the restaurant Lupa in Manhattan, and published as a recipe in Details magazine in the early years of the century. I scaled it up over the years, increasing some spices here and there, lessening others, until I had what I thought to be a pretty terrific meatloaf. But don't take my word for it. "This is remarkable," Ms. Ephron told me. I'm bragging about it still.

8 cloves garlic, minced
1 tablespoon finely chopped fresh rosemary
1/4 teaspoon red pepper flakes
1 cup fresh bread crumbs of any provenance
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 cup whole milk
1 pound ground turkey
1 pound sweet Italian pork sausage, casing removed, crumbled
1/4 cup extra-virgin olive oil
4 ounces bacon, chopped
1 medium red onion, finely chopped
1 28-ounce can whole tomatoes, preferably San Marzano, seeds removed
1 cup red wine
1/4 bunch mint

Steps:

  • Preheat the oven to 450 degrees. Combine 2/3 of the garlic, the rosemary, pepper flakes, bread crumbs, salt and pepper. Add the milk and mix. Add the turkey and sausage and mix once more to combine; don't overmix. Transfer onto a board and shape into a fine meatloaf, about 9 inches long and 4 inches wide.
  • Place in a baking pan with high sides (a 9 x12 pan with 2-inch sides works well), drizzle with about 2 tablespoons of olive oil and bake for 25 minutes, turning halfway through to brown evenly. Remove from the oven and reduce the heat to 325 degrees.
  • Meanwhile, in a medium saucepan over medium heat, fry the bacon in the remaining 2 tablespoons of oil until it starts to curl and its fat is rendered. Add the onions and remaining garlic, cooking until the onions are translucent, about 4 minutes. Add the tomatoes and wine and bring to a boil.
  • Pour the sauce over the meatloaf, cover tightly with foil and bake until a meat thermometer inserted at the center reads 150 degrees, 20 to 30 minutes.
  • Transfer the meatloaf to a platter and let stand, tented with foil, for 10 to 20 minutes; its internal temperature will rise to 160 to 165. Cut into thick slices, spoon tomato sauce over the top and scatter with torn mint leaves.

I got this recipe from an episode of Oprah several years ago. I've made this many times and always get rave reviews.

MARINADE
1 1/2 c dijon mustard
3/4 c soy sauce
3/4 c fresh lemon juice (keeps the rinds)
TURKEY
15 lb turkey
2 bunch poultry herbs
2-3 c hot water or chicken stock

Steps:

  • 1. Preheat oven to 350
  • 2. Combine marinade ingredients; whisk until smooth.
  • 3. Clean out turkey. Rinse well inside and out. Pat dry.
  • 4. Place 1 bunch of herbs in pan. Place turkey in pan. Pour marinade over turkey. Stuff cavity with lemon rinds and rest of herbs. Insert thermometer in thickest part of breast. Cover with foil and bake for 2 hours.
  • 5. After 2 hours, add hot water or stock to the bottom of pan. Stir to make gravy for basting. Baste and cover with foil. Roast another 30 min and repeat basting process. Continue basting every 15 min until thermometer reaches 180-185. Approximately 3-4 hours.
  • 6. Let rest 15-20 min before carving.
