CHEESY CHIVE AND ONION TOASTIES/JAFFLES

Cheesy Chive and Onion Toasties/Jaffles image

Here is a recipe for that age old appliance called a jaffle iron or you can use the new age appliance called a sandwich maker. This is a good camping recipe if you have a jaffle iron.

Number Of Ingredients 5

Ingredients

1 tablespoon olive oil
1 brown onion, thinly sliced
2 cups grated cheese
2 tablespoons chives, chopped
8 slices white bread

Steps:

Heat frypan over high heat, ad oil and onion.
Cook about 6 minutes till well browned, seta side to cool.
In a small bowl, combine cheese, chives and onion.
Divide this between 4 slices bread.
Top with remaining bread and place in heated jaffle iron.
Cook over low flame for 2 minutes till golden.
OR use sandwich maker according to instruction booklet.

Number Of Ingredients 4

Ingredients

3/4 cup chopped sweet onion such as Vidalia or Walla Walla
1/2 cup mayonnaise
14 slices party (cocktail) rye or pumpernickel bread
1/4 cup freshly grated parmesan

Steps:

Preheat broiler.
Stir together onion and mayonnaise. Arrange bread slices in 1 layer on a baking sheet and broil 6 inches from heat until lightly toasted (watch carefully). Remove from oven and turn toasts over. Spread evenly with onion mixture and sprinkle with cheese and freshly ground pepper.
Broil hors d'oeuvres until topping is bubbling and lightly browned, 1 to 2 minutes (watch carefully to prevent burning).
Serve warm.

Over a medium/low heat, simmer the onion in the balsamic vinegar and water for 15 minutes until it has softened, and the liquid has reduced. Low and slow is key, we're aiming for soft caramelised onions, not crispy fried ones. Add a little more water if you need to.
Once the onions are soft and dark, add the mushrooms to the pan and gently fry for 3 minutes until softened.
