1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

2 Jumbo Onions, Vidalia/sweet onion, preferred
1 ¼ Cups All-Purpose Flour
¼ Cup Granulated Sugar
¼ Teaspoon Salt
½ Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Cup Milk
Oil for frying, vegetable, canola, or peanut preferred
Deep-fry Thermometer
Deep Saucepan or Dutch Oven
Plate and paper towels (for drainage)
Sheet pan (for keeping onion rings warm in oven)

Steps:

  • Prep a place to drain cooked onion rings near cooking station.
  • Clip deep fry thermometer inside a pot and add several inches of oil, enough for onion ring to submerge fully without hitting bottom when gently "dropped" in.
  • Begin to slowly preheat oil while you prep rings and batter. (Keep close watch on your oil temperature.)
  • Preheat oven to 200°F.
  • Peel and slice the onions about 1-inch thick.
  • Separate the slices into rings.
  • Mix the dry ingredients for the batter.
  • Stir in milk, mixing to combine, but do not overwork the batter. Batter should be thick enough for onion ring to sit upon without sinking into.
  • When the oil nears 400°F, coat one onion ring in the batter.
  • Carefully "drop" onion ring into 400°F oil.
  • Fry the battered rings individually, flipping as needed so that each side reaches a golden brown.
  • It should take about 1-2 minutes total, but let color and experience be your guide.

Oil, for frying
2 large sweet onions, cut into 1/2-inch thick rings, thin skins removed
1 1/2 cups rice flour, plus more, for dredging
1 tablespoon baking powder
1 tablespoon baking soda
1 egg yolk
1 cup beer (use enough until you get pancake batter consistency)
1/2 teaspoon salt, plus more for seasoning
Freshly ground black pepper

Steps:

  • Fill a large Dutch oven or fryer with oil and preheat to 350 degrees F.
  • Sift dry ingredients into a large mixing bowl and make a well in the center. Crack the egg yolk into a separate bowl and break it up with a fork. Add this to the well in the middle of the flour and slowly pour in the beer as you whisk. Gradually make wider circles with the whisk to incorporate the dry ingredients from the edges - this will minimize the chance of lumps. Continue until all the dry ingredients are mixed and the batter is of a smooth consistency.
  • Take the onion rings and remove the thin membrane found between the layers; (otherwise the batter won't stick as well). In a large dish add some rice flour, and season with salt and pepper, to taste. Coat each ring in the flour. Dip in the batter and fry in hot oil in batches until golden. Drain on paper towels and season with salt.

1/2 teaspoon salt
6 large onions, peeled and sliced 1/4 inch thick
1/2 cup milk
1 teaspoon sugar
1 egg, well beaten
1 tablespoon melted shortening
vegetable oil (for frying)

Steps:

  • Cover onion slices with cold water and let stand 30 minutes.
  • Remove to paper towels and press to dry.
  • Separate into rings.
  • Combine flour, sugar and salt.
  • Combine milk and egg in a medium bowl and add dry ingredients and melted shortening; mix thoroughly.
  • Dip onion rings in batter and fry in deep fryer or skillet filled with a couple of inches of oil until golden brown on both sides.
  • Remove and drain on paper towels.

150g self-raising flour
180ml sparkling water

Steps:

  • Use a fork to steady your onion. Slice the onion into rings about 1cm wide. Remove the skin and separate the rings.
  • Heat the oil to 180C in a heavy-based pan - it should be no more than 1/ 3 full.
  • Meanwhile put the flour and sparkling water in a bowl and season generously. Whisk together to form a batter.

Steps:

  • Cut onions crosswise into 1/2-inch-thick slices; separate into rings. Reserve small inner rings for another use. Toss remaining onion rings with 1 cup flour in large bowl until evenly coated. Let stand 30 min.
  • Heat oil to 365ºF in large skillet. Meanwhile, combine cornstarch, onion powder, red pepper, baking powder and remaining flour. Whisk egg and club soda in large bowl until blended. Gradually stir in flour mixture.

1 Vidalia onion, sliced crosswise into thin rings
1 1/4 cups all-purpose flour (spooned and leveled)
1/2 cup cornstarch
1 1/2 teaspoons baking powder
1 teaspoon coarse salt
1 can (12 ounces) seltzer or other carbonated water
6 cups vegetable oil
Coarse salt
1/2 cup fresh parsley leaves, washed and dried very well

Steps:

  • Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
  • In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
  • Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
  • Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.
