ONE HOUR GARLIC HERB DINNER ROLLS



One Hour Garlic Herb Dinner Rolls image

Soft and fluffy garlic herb dinner rolls delivered in one hour. I brush these with a garlic and herb butter when they're hot out of the oven and they're perfect to serve with all your holiday meals and yet easy enough for weeknights!

6 tablespoons butter, divided
¾ cup whole milk (2% will also work)
½ cup water
4 - 4 ½ cups all-purpose flour, plus more for dusting
¼ cup instant potato flakes (see note)
1 tablespoon rapid-rise yeast (see note)
¼ cup granulated sugar
1 ½ teaspoon salt
2 teaspoons garlic powder
1 tablespoon fresh chopped rosemary (use ½ quantity if dry)
3 tablespoons fresh chopped parsley, divided (use ½ quantity if dry)
1 large egg, room temperature
1-2 cloves garlic, whole or minced (see notes)

Steps:

  • Place 4 tablespoons of butter, milk, and water in a 2 cup microwave-safe measuring cup. Heat on high for 1 minute. The milk mixture should be warm to the touch, about 110-115ºF. Continue to heat in 10-15 second intervals until the milk mixture reaches that temperature. If it's too hot, just let it cool.
  • In the bowl of an electric mixer fitted with the dough-hook attachment, add 4 cups of flour, potato flakes, yeast, sugar, salt, garlic powder, rosemary, and 2 tablespoons of parsley and just stir to combine.
  • Start the machine on the 'stir' setting and slowly stream in the warm milk mixture and the egg. When combined, increase the speed of the mixer to medium-low and allow the mixer to run for 4-5 minutes. After the first 1-2 minutes the dough should start pulling away from the sides of the bowl, if it doesn't add an additional ¼ cup of flour and let the mixer run for another minute, if the dough still hasn't formed into a ball, add the remaining ¼ cup of flour. You may or may not need to add the additional flour. I didn't.
  • Remove the dough from the hook, cover the bowl with plastic wrap and allow the dough to rest for 10 minutes. While the dough is rising, position a rack in the center of the oven and preheat the oven to 180ºF. Spray a 9x13 baking dish with cooking spray, set aside.
  • Turn the dough out onto a lightly floured work surface. With a floured rolling pin, roll the dough out into a 15-inch circle. Using a pizza cutter dipped in flour, cut the dough into 12 or 16 equal pieces. You can weigh the dough to make it more accurate but I usually just eyeball it. Fold the seams in and roll into a smooth ball. Place the dough seam side down into the prepared baking dish. Repeat with the remaining dough.
  • Using a pastry brush, brush water on the tops of the rolls so they don't dry out in the oven. Turn the oven OFF and place the baking dish in the oven. Allow the dough to rise for 20 minutes. DO NOT OPEN THE OVEN DOOR UNTIL THE 20 MINUTES ARE UP.
  • Remove the baking dish from the oven and place on the counter while you preheat the oven to 375ºF. Bake the dinner rolls for 18-22 minutes or until the tops are nice and golden. Baking time will be slightly shorter if you made them into 16 rolls (around 14-18 minutes). Prepare the garlic butter sauce (step #8) in the last 5-7 minutes while the rolls are still in the oven.
  • In a small saucepan, combine the garlic and the remaining 2 tablespoons of butter, heat over medium heat. When the butter melts and you can smell the garlic, add the remaining tablespoon of chopped parsley. Add a pinch of salt and stir. Brush the tops of the prepared rolls with garlic butter mixture. Serve warm.

I've been making this easy bread for years. It goes great with a casserole, soup or stew. I've taken it to many picnics and potluck suppers. Many people have asked for the recipe, and they're always surprised at how simple it is to make!

1/2 cup warm water (110° to 115°)

1/2 teaspoon dill weed
1/2 teaspoon garlic powder
1/4 cup finely chopped onion
2-1/4 cups all-purpose flour, divided

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, rosemary, salt, dill, garlic powder, onion and 1 cup of flour. Beat until smooth. Add the remaining flour and stir for about 1 minute. , Transfer to a greased bowl. Cover and let rise in a warm place until doubled, about 30 minutes. , Stir the batter down, about 25 strokes. Spread into a greased 8x4-in. loaf pan. Cover and let rise until almost doubled, about 15 minutes. , Bake at 375° for 40-45 minutes. Remove from pan to a wire rack. Serve warm.

¾ cup lukewarm milk
5 tablespoons lukewarm water
3 tablespoons butter, softened
1 ½ teaspoons salt
3 tablespoons white sugar
1 teaspoon onion powder
3 tablespoons dried minced onion

3 cups all-purpose flour
1 (.25 ounce) envelope active dry yeast
1 egg white
1 tablespoon water
¼ cup dried minced onion

Steps:

  • Place the milk, water, butter, salt, sugar, onion powder, 3 tablespoons of dried onion, potato flakes, flour and yeast into the pan of a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press Start.
  • When the cycle has completed, remove the dough from the machine, and knead on a lightly floured surface. Cut into 8 equal pieces, and form into balls. Gently flatten the balls until they are 4 inches in diameter. If they keep shrinking back, just let them relax for a minute before flattening. Place on a baking sheet, and cover loosely with a towel. Set in a draft-free place to rise until doubled in size, about 40 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Whisk together the egg white and water in a cup. Brush over the tops of the risen rolls, and sprinkle with remaining minced onion.
  • Bake for 15 to 20 minutes in the preheated oven, until golden brown. Cool completely, then slice in half horizontally before using.

1/3 cup dried minced onion
1/3 cup water
1 package (1/4 ounce) active dry yeast
2 tablespoons warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
1/4 cup toasted wheat germ
1 tablespoon canola oil
1 tablespoon honey
1 teaspoon garlic powder
3/4 teaspoon salt
3 to 3-1/4 cups all-purpose flour

1 cup shredded part-skim mozzarella cheese
Minced fresh parsley, optional

Steps:

  • In a small bowl, mix onion and water. Let stand 10 minutes or until onion is softened. In a small bowl, dissolve yeast in warm water., In a large bowl, combine milk, wheat germ, oil, honey, garlic powder, salt, onion mixture, yeast mixture and 1-1/2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover with plastic wrap and let rise in a warm place until doubled, about 1 hour., Punch down dough. Turn onto a lightly floured surface; divide and shape into 20 balls. Place in a greased 13x9-in. baking pan. Cover with a kitchen towel; let rise in a warm place until almost doubled, about 45 minutes., Preheat oven to 375°. Bake 15-18 minutes or until lightly browned. Brush rolls with butter; sprinkle with cheese. Bake 5-7 minutes longer or until cheese is melted and rolls are golden brown. If desired, sprinkle with parsley. Serve warm.

1/2 cup whole milk
1 teaspoon active dry yeast (1/2 packet)
2 tablespoons plus 1 teaspoon granulated sugar
2 tablespoons unsalted butter, plus more for the bowl
1 large egg yolk
2 cups all-purpose flour, plus more for dusting
1/4 teaspoon kosher salt
1 cup finely grated Parmesan
1/2 cup finely sliced scallions
1/2 cup finely chopped fresh parsley
1 clove garlic, grated
6 tablespoons unsalted butter, softened
Kosher salt and freshly ground black pepper
Hot honey and flakey sea salt, for serving

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • For the dough: Heat the milk in a small saucepot over the indirect-heat side of the grill to take the chill off. The milk should be between 110 and 115 degrees F. To the bowl of a mixer fitted with the dough hook attachment, add the warmed milk and yeast. Sprinkle 1 teaspoon of the sugar on top, then let stand for 10 minutes, allowing the yeast to foam.
  • While you're waiting, melt the butter in a small saucepot over the indirect-heat side of the grill. When the butter has fully melted, continue to cook until browned, nutty and fragrant. Set aside to cool slightly. When the yeast mixture looks very foamy, add the browned butter and egg yolk and mix.
  • In a separate mixing bowl, mix together the flour, salt and remaining 2 tablespoons sugar, then add to the yeast mixture. Mix until the dough begins to climb the hook and pull away from the bowl. Continue to mix until the dough is shiny and elastic, about 5 minutes. Turn out into a greased bowl, flipping once so the top is coated as well. Cover and let rise in a draft-free place until doubled in size, about 1 hour.
  • For the filling: In the meantime, make the filling and prepare your pan. Combine the Parmesan, scallions, parsley, garlic and 4 tablespoons of the butter in a bowl and season liberally with salt and pepper.
  • Place a 10-inch cast-iron pan over indirect heat and melt the remaining 2 tablespoons of butter, swirling to coat the bottom of the pan. Set aside.
  • On a lightly floured surface, roll out the dough to a 5-by-15-inch rectangle. Spread the filling mixture over the entire surface, leaving a 1/2-inch clean edge on the side furthest away from you. Begin to tightly roll up into a log, pinching at the seam. Using non-flavored dental floss, slice the log into 6 pieces by first cutting in half and then cutting each half into thirds. This will ensure even sizing. Place the 6 rolls into the prepared pan, leaving some spacing in between. Cover and put in a draft-free place until almost doubled in size, about 30 minutes.
  • Place the pan on the indirect-heat side of the grill and cover the grill with a lid. Bake until golden brown, 18 to 20 minutes. Remove from the grill and invert onto a plate. Drizzle with hot honey and sprinkle with flakey sea salt. Serve.

  • Mix flour with herbs. Remember, mixing the herbs and flour separately ensures an even mixture of herbs into the dough.
  • Dissolve the yeast in the water in a large bowl, and add milk mixture (should be around room temperature) and flour mix. Stir well.
  • Let the dough rise, covered, for about 45 minutes.
  • Plop spoonfuls of the dough onto a greased pan, making about 12 rolls. Bake for about 20 minutes, until tops are browned. Remove from oven.

6 pork sausages
2 tbsp caramelised onion chutney
1 tsp wholegrain mustard
1 tbsp chopped thyme
320g sheet puff pastry
1 beaten egg
½ tbsp poppy seeds

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Squeeze the meat from the sausages into a bowl and mix with the chutney, mustard and thyme. Unravel the pastry and roll out until one side measures 43cm. Arrange the sausagemeat down the centre of the pastry. Use the egg to brush along the bottom of the pastry. Bring the pastry around the meat, and seal the edges with a fork, then cut into eight. Brush with a little more egg and sprinkle with the poppy seeds. Transfer to a lined baking sheet and cook for 25 mins or until golden.

1/2 cup warm milk (105-115 F)
2 tablespoons sugar
2 teaspoons salt
3 tablespoons butter or 3 tablespoons margarine
1 1/2 cups water (105-115 F)
1 (1 ounce) package active dry yeast (1 Tablespoon)
2 tablespoons instant minced onion
5 -6 cups all-purpose flour
cornmeal
1 egg white, slightly beaten with
1 tablespoon cold water

Steps:

  • Combine warm milk, sugar, salt and butter.
  • In a large warm bowl, pour in warm water, sprinkle yeast over the water and stir until dissolved.
  • Add milk mixture, onion and 3 cups flour to the yeast mixture.
  • Beat until smooth.
  • Add enough additional flour to make a stiff dough.
  • Turn dough out onto a lightly floured board.
  • Knead until smooth and elastic (about 8-10 minutes).
  • Place dough in a greased bowl, turning dough to grease the top.
  • Cover dough and let rise in a warm place (free from drafts) until doubled in bulk (about 1 hour).
  • Punch dough down and divide into 14 equal pieces.
  • Shape pieces of dough into round balls.
  • Place dough balls (about 3 inches apart) on greased baking sheets that have been sprinkled with cornmeal.
  • Cover and let rise again in draft free, warm place until doubled in bulk (about 1 hour).
  • Cut a small"X" into the tops of the rolls with a sharp knife or razor.
  • Bake rolls in a preheated 400°F oven for 20 minutes.
  • Brush rolls with the egg white/cold water wash.
  • Bake rolls 5 minutes longer, or until done.
  • Remove from baking sheets and cool on wire racks.
  • ***Asan option, you can sprinkle the roll tops with a bit of additional minced onion after they are brushed with the egg white wash.

1/2 cup butter, softened
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh thyme, finely chopped
1 1/2 cups milk
1/4 cup butter, softened
2 teaspoons butter, softened
1 teaspoon olive oil
1 1/2 teaspoons sea salt, coarse
1 package active dry yeast (1/4 oz)
1/2 cup warm water
2 large vidalia onions, thinly sliced
2 eggs, divided
4 teaspoons fresh parsley, finely chopped,divided
2 teaspoons fresh thyme, finely chopped
5 1/2 cups flour, all purpose,divided

Steps:

  • Herb Butter.
  • Combine in a small bowl, softened butter with 1 tbsp each of finely chopped, fresh parsley and thyme.
  • Mix well, cover and refrigerate until needed.
  • Dough.
  • Combine milk, 1/4 cup butter, oil and salt in pot over medium heat.
  • Bring to a boil then remove from heat and cool.
  • Pour warm water into small bowl.
  • Sprinkle yeast over warm water and let stand 5 minutes, until foamy.
  • Add remaining 2 tsps of butter to frying pan and melt over medium low heat.
  • Add onions and cook 20 minutes until browned.
  • Take pan off heat and cool onions.
  • Once the onions are cooled chop and set aside.
  • In large bowl whisk together 1 egg, 3 tsps parsley, thyme, milk and yeast mixtures.
  • Stir in 3 cups flour until just combined.
  • Stir in remaining flour slowly until dough is no longer sticky.
  • Knead dough 3-5 minutes on a floured surface.
  • Form dough into disk.
  • Add half of the chopped onions ontop of the disk.
  • Fold disk in half and knead in onions.
  • Place in a greased bowl, cover and let rise until doubled.
  • (45- 60 minutes).
  • Punch down the dough.
  • Cut dough in half with knife.
  • Cut each piece into four pieces.
  • Now cut each piece into thirds.
  • You should have 24 pieces when finished cutting.
  • Roll each piece into 7" long rope.
  • Spiral each rope, pinching the end into the roll to seal.
  • (should look like a small danish).
  • Place on baking sheet, cover and let rise until almost double in size.
  • (20-30 minutes).
  • Preheat oven to 375 degrees.
  • Lightly beat remaining egg and brush over rolls.
  • Top with remaining onion and parsley.
  • Bake 18-20 minutes.
  • Serve with herb butter and enjoy.
