- Sprinkle chicken with salt and pepper. In a large nonstick skillet, cook chicken in 2 teaspoons oil until lightly browned, 3 minutes on each side. Remove and keep warm. , In the same skillet, cook the garlic, ginger and lemon zest in remaining oil for 1 minute. Stir in 1/2 cup broth, sugar and cayenne. Bring to a boil. Return chicken to the pan; top with lemon slices. Reduce heat; cover and simmer until chicken juices run clear, 7-9 minutes. Remove chicken and keep warm. , Combine cornstarch and remaining broth until smooth; gradually stir into pan juices. Bring to a boil; cook and stir until thickened, 2 minutes. Stir in green onions; cook 1-2 minutes longer. Serve over chicken.

- Preheat oven to 450 degrees. Place peaches and onions on a large rimmed baking sheet; season with salt and pepper. Sprinkle with ginger, soy sauce, 1 tablespoon vegetable oil, sesame oil, and red-pepper flakes; toss to coat.

- Combine seasoning mix ingredients in a small bowl.
- Mix 2 tablespoons of mix with the flour and set aside for later use. Sprinkle 4 tablespoons of mix over chicken and rub in well.
- Heat oil in heavy pot over high heat just until it begins to smoke, about 4 minutes.
- Brown chicken in batches, large pieces first, skin side down first, about 2-3 minutes per side.
- Remove from pot and set aside.
- Caution: this mixture will brown very quickly, so watch it carefully, but make sure to brown it well.
- Add onions to pot and scrape bottom to loosen browned bits.
- Cook, stirring and scraping frequently, until onions are brown, about 4 minutes.
- Add ginger, seasoned flour, and 1/2 cup of stock and stir until flour is completely incorporated.
- Continue to cook, stirring occasionally, until flour begins to stick, about 2-3 minutes.
- Stir in remaining stock and seasoning mix and scrape pot well.
- Return chicken and juices to pot, bring to a boil, reduce heat to low and simmer until chicken is tender and sauce has reduced to 4 cups, about 30 minutes.

- First, season the chicken slices with corn starch, sesame oil, sugar, baking soda, soy sauce, white pepper. Mix it well and marinate for 15 minutes. Add all the stir fry sauce ingredients in a small bowl. Mix it well and set it aside.
- Heat the large wok/pan over medium-high heat. Drizzle 2 tablespoons of oil, then add marinated chicken slices and stir fry for 2-3 minutes or until the chicken is cooked through.

- Chicken and rice: Season chicken thighs on both sides with kosher salt. Place chicken, skin side down, in a Dutch oven or heavy pot. Turn on heat to medium-low. Let cook for 5 minutes, then increase heat to medium-high and continue cooking until skin is golden brown and chicken thighs easily release from the pan, about 6-8 more minutes.
