4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
3 teaspoons olive oil, divided
3 garlic cloves, minced
2 teaspoons minced fresh gingerroot
1 teaspoon grated lemon zest
3/4 cup reduced-sodium chicken broth, divided
1/2 teaspoon sugar
1/8 teaspoon cayenne pepper
1/2 medium lemon, cut into thin slices
1 tablespoon cornstarch
1/2 cup thinly sliced green onions

Steps:

  • Sprinkle chicken with salt and pepper. In a large nonstick skillet, cook chicken in 2 teaspoons oil until lightly browned, 3 minutes on each side. Remove and keep warm. , In the same skillet, cook the garlic, ginger and lemon zest in remaining oil for 1 minute. Stir in 1/2 cup broth, sugar and cayenne. Bring to a boil. Return chicken to the pan; top with lemon slices. Reduce heat; cover and simmer until chicken juices run clear, 7-9 minutes. Remove chicken and keep warm. , Combine cornstarch and remaining broth until smooth; gradually stir into pan juices. Bring to a boil; cook and stir until thickened, 2 minutes. Stir in green onions; cook 1-2 minutes longer. Serve over chicken.

1 three-inch piece fresh ginger, peeled and cut into 1/8-inch-thick matchsticks (1/2 cup)
2 tablespoons canola oil
1 1/2 pounds boneless, skinless chicken breasts, cut into 1 1/2-inch chunks
1 large onion, thinly sliced
2 cloves garlic, minced
1/4 cup soy sauce
2 tablespoons white vinegar
2 tablespoons sugar
1/2 cup sliced scallions

Steps:

  • Soak ginger in cold water 10 minutes; drain.
  • Heat oil in a skillet over high heat; brown chicken in two batches, 6 to 8 minutes. Set aside.
  • In same skillet over medium heat, cook ginger, onion, and garlic, stirring until browned, 8 to 10 minutes. Add soy sauce, vinegar, and sugar; cook over high heat until thick, 3 to 4 minutes. Add chicken; stir to warm. Remove from heat; stir in scallions.

1 bag (1 pound) frozen peaches, unthawed
2 red onions, halved and sliced 1/4 inch thick
Coarse salt and ground pepper
2 tablespoons grated fresh ginger
2 tablespoons soy sauce
1 tablespoon plus 1 teaspoon vegetable oil
1 tablespoon toasted sesame oil
1/4 to 1/2 teaspoon red-pepper flakes
4 bone-in skin-on chicken breast halves, (10 to 12 ounces each)
Cooked white rice, for serving

Steps:

  • Preheat oven to 450 degrees. Place peaches and onions on a large rimmed baking sheet; season with salt and pepper. Sprinkle with ginger, soy sauce, 1 tablespoon vegetable oil, sesame oil, and red-pepper flakes; toss to coat.
  • Rub chicken with remaining teaspoon vegetable oil; season with salt and pepper. Arrange chicken skin side up among peaches and onions.
  • Roast until chicken is opaque throughout and registers 160 degrees on an instant-read thermometer inserted in thickest part of breast (avoiding bone), 25 to 30 minutes. Serve chicken with white rice, peaches, and onions.

2 teaspoons dried basil
2 teaspoons garlic powder
2 teaspoons ground ginger

1 teaspoon onion powder
1 teaspoon dried thyme
3/4 teaspoon cayenne
3/4 teaspoon white pepper
1/2 teaspoon allspice
1/2 teaspoon ground cardamom
1/2 teaspoon ground dill seed
1/2 teaspoon ground nutmeg
1/2 teaspoon black pepper
1/4 teaspoon ground cloves
1/4 teaspoon ground sage
3 tablespoons flour
3 -4 lbs chicken pieces
2 tablespoons vegetable oil
4 cups chopped onions, in all
2 tablespoons minced fresh ginger
4 cups chicken stock, in all

Steps:

  • Combine seasoning mix ingredients in a small bowl.
  • Mix 2 tablespoons of mix with the flour and set aside for later use. Sprinkle 4 tablespoons of mix over chicken and rub in well.
  • Heat oil in heavy pot over high heat just until it begins to smoke, about 4 minutes.
  • Brown chicken in batches, large pieces first, skin side down first, about 2-3 minutes per side.
  • Remove from pot and set aside.
  • Caution: this mixture will brown very quickly, so watch it carefully, but make sure to brown it well.
  • Add onions to pot and scrape bottom to loosen browned bits.
  • Cook, stirring and scraping frequently, until onions are brown, about 4 minutes.
  • Add ginger, seasoned flour, and 1/2 cup of stock and stir until flour is completely incorporated.
  • Continue to cook, stirring occasionally, until flour begins to stick, about 2-3 minutes.
  • Stir in remaining stock and seasoning mix and scrape pot well.
  • Return chicken and juices to pot, bring to a boil, reduce heat to low and simmer until chicken is tender and sauce has reduced to 4 cups, about 30 minutes.
  • Serve over pasta or rice.

300 g Chicken Breast (About 10.5oz, Boneless chicken breast or thigh, cut thin slices)
1 thumb Ginger (Cut thin strips)
3-4 Spring Onion (Cut 2" pieces, Separate the white and green parts. )
½ Onion (Cut thin slices)
3-4 cloves Garlic (Finely chopped)
1 Red chilli pepper (Cut thin slices)
2-3 tbsp Vegetable oil (Or neutral flavour oil)
2 tsp Light soy sauce (or all-purpose soy sauce)
1 tsp Sesame oil
1 tsp Sugar
¼ tsp White pepper
½ tsp Baking soda
1 tsp Corn starch
2 tbsp Oyster sauce
1 tbsp Light soy sauce (or regular all-purpose soy sauce)
1 tsp Shao Xing wine
2 tsp Sugar
¼ tsp White pepper
1 tsp Sesame oil
1 tsp Corn starch

Steps:

  • First, season the chicken slices with corn starch, sesame oil, sugar, baking soda, soy sauce, white pepper. Mix it well and marinate for 15 minutes. Add all the stir fry sauce ingredients in a small bowl. Mix it well and set it aside.
  • Heat the large wok/pan over medium-high heat. Drizzle 2 tablespoons of oil, then add marinated chicken slices and stir fry for 2-3 minutes or until the chicken is cooked through.
  • Push the chicken to one side of wok, drizzle a bit more oil, add chopped garlic and ginger strips and stir fry for 1 minute until the ginger strips start to crisp up. Then, follow with the onion slices, chillies, and white part of spring onions.
  • Next, pour the stir fry sauce and cook until the sauce become thick and glossy.
  • Turn off the heat, stir in green part of spring onions and transfer to serving plate. Serve with plain rice or noodles.

½ yellow onion, diced small
1 piece ginger, grated, 2 in (5 cm)

1 ½ cups jasmine rice, rinsed well
2 ½ cups water
1 tablespoon Nakano® Natural Rice Vinegar
1 tablespoon soy sauce
1 teaspoon kosher salt, plus more for seasoning chicken
6 scallions, thinly sliced
¼ cup Nakano Natural Rice Vinegar
½ teaspoon sugar
¼ teaspoon chili flakes

Steps:

  • Chicken and rice: Season chicken thighs on both sides with kosher salt. Place chicken, skin side down, in a Dutch oven or heavy pot. Turn on heat to medium-low. Let cook for 5 minutes, then increase heat to medium-high and continue cooking until skin is golden brown and chicken thighs easily release from the pan, about 6-8 more minutes. Remove chicken and set aside.
  • In the same pot with the chicken fat over medium-low heat, add onion, ginger, and garlic. Cook, stirring occasionally, until vegetables are softened and translucent, about 8 minutes. Stir in jasmine rice, water, Nakano® Natural Rice Vinegar, soy sauce, and 1 teaspoon kosher salt. Nestle chicken thighs into the rice, skin side up, making sure that the chicken is not fully submerged. Bring to a simmer, then cover pot and reduce heat to low. Cook for 20 minutes, then take pot off the heat and let rest for 10 minutes while making the scallion sauce.
  • Scallion sauce: Combine all ingredients in a small bowl. Stir and use the back of a spoon to press down and lightly crush the scallions.
  • Fluff rice and serve with the chicken and the scallion sauce.
